Chocolate Dipped Peanut Butter Cookies

February 8, 2014 By Jennifer @ PB and P Design 15 Comments

Hi Everyone,

Apparently I am on some kind of chocolate and peanut butter kick, but I can’t help it!  Those two flavors go so well together and honestly what’s not to love?  So today I created another version of my peanut butter cookies which are just perfect for Valentine’s Day.

Chocolate Dipped Peanut Butter Cookies (GF)
These peanut butter cookies taste just amazing! They have a nice crunchy shell with a soft middle and totally scream peanut butter! Then to boot the melted dark chocolate on them is to die for. The chocolate adds a little pizzazz and really takes these cookies to another level. And of course you must have sprinkles for a Valentine’s cookie, which I think makes the cookies looks just adorable. I simply love them.
Chocolate Dipped Peanut Butter Cookies (GF)
My Husband was thrilled to death when I told him I had PB cookies for him to take to work. Yes, the man who is sick of Peanut Butter was so happy for these cookies. I kind of slacked on making him weekly cookies and bread for him to have at work. He looked at the cookies and said pretty, can I take them all to work? How could I have not said yes to that? So off the whole batch went. I’m kind of glad because as I write this I could only imagine how many I would pop in my mouth.
Chocolate Dipped Peanut Butter Cookies
To make these cookies, I took the traditional 3 ingredient PB cookie recipe which is egg, peanut butter and sugar and zipped it up a bit because I didn’t want an uneven, broken up looking cookie. I made my cookies with an extra egg, brown sugar and cornstarch. It all came together beautifully and no broken or cracked edges. they all turned out perfectly even, moist and delicious. I actually like this peanut butter cookie the best so far. Simple, easy, gluten-free and low-calorie! What’s not to love?

A crispy peanut butter cookie with a soft center that is dipped in dark chocolate and sprinkled with little candies.
Serves: 38 cookies
Ingredients
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 2 eggs
  • ½ tsp. vanilla extract
  • 2 tbsp. cornstarch
  • 1 cup dark chocolate melting wafers
  • sprinkles (optional)
Instructions
  1. Preheat oven to 350 degrees
  2. Line two baking sheets with parchment paper; set aside.
  3. In a bowl, add peanut butter, brown sugar, eggs and vanilla extract. Beat until combined. Beat in cornstarch.
  4. Roll about a tablespoon size of dough and place on prepared cookie sheet. Gently flatten with your hand. With the tine of the fork, press into the cookie to make a cross pattern. Note: If you are not going to dip the cookies in chocolate, I recommend after you roll the dough into a ball, roll it in a little granulated sugar to add a little more sweetness. Then continue with the directions.
  5. Bake in oven for 7 - 9 minutes, until lightly golden on the bottom. Let cookies cool for 2 minutes and place on a baking rack to cool completely.
  6. Meanwhile in a microwave safe bowl, add chocolate and microwave for 20 seconds, stir and microwave in 10 second increments until chocolate is melted, stirring in between each increment. I found using a pyrex measuring cup worked great and easy for deep dipping.
  7. Dip half the cookie in the melted chocolate and place back on baking sheet. Add sprinkles if desired. Let the cookies sit until chocolate hardens about 45 minutes.
  8. Store in an airtight container with parchment between each layer.

Chocolate Dipped Peanut Butter Cookies (GF)
Gosh I have been on a chocolate dipping kick and I still have a couple more recipes that involves chocolate dipping that I am going to try to get to this weekend. Maybe I shouldn’t? I have had my fair share of chocolate lately, yet I can’t quit. I guess it’s because I found Ghirardelli melting chocolate wafers on sale at Target for $2.44 a bag. I couldn’t resist that price, so I bought them up. Shame on me! I just love that darn Target!
Chocolate Dipped Peanut Butter Cookies (GF)
Well today I am off, I was invited to a Tillamook Cheese and Yogurt Brunch in San Francisco today. I can’t wait! I just hope the rain holds off, but I doubt it will. Nothing worse than wandering through the city in the rain. I got my Husband to go with me and this will be his first blogging event. I wonder how he will react when everyone takes pictures of their food? It’s going to be fun!

Have a wonderful Saturday, stay warm and safe! I know the East Coast is supposed to get hit with a snow storm again. You poor Guys!

Toodles,

Jennifer

Super easy recipe … need to make. They remind me of the chocolate chipped chocolate chip cookies that my grocery store sells (Wegmans). Chocolate dipped cookies are classic!

Happy Monday! I’m sharing with you a rare view o Happy Monday! I’m sharing with you a rare view of my kitchen. What’s so rare about it! It’s clean. 🤣
.
So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.
.
After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?
.
I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!
.
Have a great day!

He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have been decorating the house for Easter and Spring. I love how this little space turned out. I am loving the bright pastels. I added my new bunny/chick pillow that I got from @12timbers. It matches so perfectly and it’s so cute. I also couldn’t resist the chick pillow from Target.

Hi Everyone! I hope you had a great weekend. I mus Hi Everyone! I hope you had a great weekend. I must say I was disappointed in the Super Bowl. I really wanted the 49ers to win. Anyway, this weekend I refreshed my guest bathroom.
🐰
I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.
🐰
I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.
🐰
Have a great day!!

Happy Monday!! I have to confess to you. I still h Happy Monday!! I have to confess to you. I still have Christmas in my kitchen.😳 I don’t know where to put it, so I haven’t taken it down. It’s not a lot, but just enough to where I can’t fit it. Ugh! Please tell me I’m not the only one.
💕
I did do one little spot for Valentines, which I think is so cute. I love decorating with Valentines candy. I can’t resist the pinks and the conversation hearts. I do not plan on going all out decorating this season, as time is going so fast, but I may add some hearts here and there.
💕
Do you decorate for Valentine’s Day?

Hi Everyone! With spring around the corner, now is Hi Everyone! With spring around the corner, now is the time to get your chores done, so when the warmer weather arrives you can enjoy it. My goal is to refresh my bedroom. I am slowly getting rid of stuff that I no longer need and slowly adding new decor. So hopefully in a few weeks it will be done. #twopageshome
♥️
The first thing I added are these stunning customized curtains that I was gifted from @twopagescurtains. Guys, I’m in love! The curtains are just so pretty! I am loving the way it shades the sun, but still lets the light in. Exactly the look I was going for.
♥️
The curtains I chose are the “Liz Linen Drape Soft”. They are a linen curtain that is environmentally friendly, hypoallergenic, long lasting, dust preventative, and breathable. They are also wrinkle free. I didn’t have to steam them. They came right out of the package ready to hang. They also come in 38 colors and 7 shadings to choose from. There is an option for everyone.
♥️
I’ll be honest I was intimidated on ordering custom curtains. I was so afraid I would order them wrong, but I didn’t. Two Pages has a measurement finder that asks you a few easy questions and boom you have your custom curtain size. It was so simple.
♥️
If you are looking for some new curtains or shades for your home, I highly recommend Two Page Curtains. I absolutely love them. They were kind enough to give my followers an 8% discount code: PBANDP. Link in bio
♥️
Are you planning on refreshing any spaces?

Happy Friday! Hope you had a wonderful holiday sea Happy Friday! Hope you had a wonderful holiday season. I am slowly working on taking my Christmas decor down. I still have my tree up, but I love the twinkling lights, and the real reason is I need my husband to get the box out of the garage. lol
💙
I am going with blues in the living room. I just find blue calming and peaceful. The first area I styled is the coffee table. Sorry about the views. I have a small, thin living room.
💙
I decided to go light on the decor and add some fresh faux greenery. I hate leaving the remote controls out, so I decided to store them in a decorative box. Everything here, but the white box was bought at Target.
💙
Have a wonderful weekend!

I want to say sorry for lack of posting. It’s just so time consuming engaging. I hate spending countless hours on my phone. It has made me physically lazy and it hurts my eyes.
