Power it Up Blueberry Vanilla Baked Oatmeal

Hi Everyone,

I have to laugh!  I got my Husband to eat Chia Seeds!  He doesn’t even know it.  I just chuckle to myself, when I see him enjoying a meal that has things in it that he would refuse to eat.  To boot, I even got him to eat oatmeal!  Yup, the man who doesn’t care for oatmeal actually ate a healthy breakfast, without complaints and even said this is pretty good.  I said you can have more whenever you please, and he said OK!!  So what did I make that is Husband approved?  Power it Up Blueberry Baked Oatmeal.

I have made a lot of baked oatmeal dishes, but I have to admit, I think this one is the best!! It’s sweet, filling, loaded with blueberries and has the most wonderful vanilla flavor. To boot, I only used a 1/4 cup of maple syrup in it to sweetened it up, so this breakfast is low sugar. Plus this breakfast for everyone because it’s vegan and gluten-free.

So why do I call this Power it Up Blueberry Vanilla Baked Oatmeal? Because it is full of super foods and get this it really, really does give you energy. I had this for breakfast on a lazy Sunday morning, and next thing you knew, I was exercising, doing laundry and cleaning the house. Now this is some kind of powerful breakfast! Plus I was so full that I didn’t snack!!

So what makes this healthy, and powerful? The ingredients, it’s all natural and good for you. I did a little breakdown of all the ingredients and why it’s good for you.


Rolled Oats (Gluten-Free) – Lowers your Cholesterol, stabilizes blood sugar levels, full of fiber and even helps reduce the effects of type 2 diabetes.

Chia Seeds – Full of fiber and protein, contains Omega 3’s, good for bones and teeth, helps fight belly fat, you get full faster and it may also increase healthy cholesterol while lowering total LDL and triglycerid cholesterol.

Unsweetened Vanilla Almond Milk – Helps with weight loss, since it’ is so low in calories, has calcium, contains vitamin E which is great for your skin, low in carbs, it keeps your digestive system in tact and doesn’t contain lactose.

Maple Syrup – it’s a natural sweetener, help prevent several chronic and inflammatory diseases like diabetes, cancer, osteoporosis, and Alzheimer’s, contains zinc, iron, potassium and calcium. Helps ease the digestive system. Just remember it is still sugar and a little bit goes a long way.

Blueberries – Full of antioxidants, helps fight UTI (Urinary Tract Infection), the blue hue  helps attack cancer-causing free radicals and can even block the growth of tumor cells, helps with memory loss, filled with fiber and vitamin C, low-calorie and just plain tasty!

Power it Up Blueberry Vanilla Baked Oatmeal

A healthy, vegan, energizing, breakfast made with gluten free oats, chia seeds, almond milk and is chock full of plump blueberries and has the most amazing vanilla taste.
Serves: 6 servings
Ingredients
  • 2 cups rolled oats (I used Gluten Free)
  • ½ tsp. baking soda
  • ¼ tsp. sea salt
  • 2 tbsp. chia seeds or flax seeds
  • 1½ cups unsweetened vanilla almond milk or milk of choice
  • 1 tbsp. vanilla extract
  • ¼ cup maple syrup
  • 2 cups blueberries, frozen or fresh
Instructions
  1. Preheat oven to 350 degrees
  2. Spray an 8 x 8 baking dish with cooking spray; set aside.
  3. In a bowl add oats, baking soda, salt and chia seeds; Mix together.
  4. Pour almond milk, vanilla extract and maple syrup over oat mixture; stir together until combined. Fold in blueberries.
  5. Pour mixture into prepared baking pan and lightly flatten down with the back of a spoon.
  6. Bake for 30 - 35 minutes until lightly brown on top and oatmeal is set.

These are the best kind of breakfast’s! I can’t believe that it filled me up so much! Maybe because it was filled with 6 grams of fiber? This baked oatmeal is also great on yogurt or if your feeling bad a little side of ice cream, plus it can be refrigerated for up to 4 days. Makes for a perfect breakfast all week!
