Chicken and Wild Rice Soup in Crockpot – #SundaySupper

Hi Everyone,

It’s another #SundaySupper and today we are slowing bringing in the new year by sharing slow-cooker/crockpot recipes!  Oh yah!!!  Nothing like a slow cooked meal when all of the flavors come together and become one awesome dish!!!  It’s one of my favorite ways to cook, especially when I get home from work and the last thing I want to do is cook, but when you are using your Crockpot the meal is pretty much done for you and I love that!!

Chicken and Wild Rice Soup (Crockpot)
Today I made for you a warm bowl of Chicken and Wild Rice Soup. Oh man this is so good! I haven’t had chicken and rice soup since I was a kid. It full of carrots, celery, chicken and the star of the show wild rice. It makes for the perfect weeknight meal and is great for lunches too!! This recipe makes 10 cups, and that gave me a few days of lunches.
Chicken and Wild Rice Soup (Crockpot)
Do you like my colorful carrots? Trader Joe’s had organic carrots in a variety of colors and I just had to buy them. It really brighten up the soup and made it a little more fun than traditional carrots. Not only is the recipe colorful, tasty and so easy to make, it also comes in at only 119 calories. Talk about guilt-free, I was able to have some crusty french bread to go with it!

A hearty, warm, healthy, low calorie soup chock full of carrots, celery, chicken and wild rice.
Serves: 10 cups
Ingredients
  • 1 lbs. chicken breast, skinless, boneless
  • 2 cups (185 grams) celery, diced
  • 1¾ cups (235 grams) carrots, diced
  • ¾ cup onion, diced
  • 8 cups chicken broth, low sodium
  • ¾ cup wild rice, rinsed
  • 1 tiny sprig of rosemary or ½ tsp dried
  • 2 tsp. fresh thyme or ½ tsp. dried
  • 1 tbsp. parsley, dried
  • 2 bay leaves
  • 1 tsp. black pepper
  • ¼ tsp. salt
Instructions
  1. Place all ingredients in the crockpot, set on high for 4 hours or low for 8 hours.
  2. About an hour before it's done, with two forks, shred the chicken. Taste the soup, if using low sodium chicken broth, you may need to add a chicken bouillon cube or salt for extra flavor.
  3. Serve and Enjoy

I really do love my Crockpot and I plan on using it more. I go through stages where I use it, but once I put it away I tend to forget about it. Do you ever do that with something?

    Score…I have all these ingredients left from my chicken stew, other than wild rice. Do you think I could sub in brown rice instead since I have a huge container of it? We’re going to be cold (Texas-cold) here the next couple of days, so will be making soup for dinner the next few nights.

      Hi Wendy! I am sure brown rice will work great in this recipe. I actually debated about using basamati rice, but went with wild. Were in California cold and I don’t like it! Stay warm!

    At first I thought those golden carrots were golden BEETS, and as much as I love beets, I was thinking that was a strange ingredient for soup 🙂 Now that I know they are carrots, I would love a big bowl of this any day. So wholesome and warming!

      Hi Jenalee, I don’t see why not. Just make sure it is not instant. If it is, I’d cook it on the side and than add it in the soup when ready to serve.

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.

I am sharing my last view of my living room before I take down my Christmas decor. I will leave some of the winter type greens, but I think I’m going to add some blues. I have always liked blue after the holidays. It just gives the room a light and clean look.

I want to say sorry for lack of posting. It’s just so time consuming engaging. I hate spending countless hours on my phone. It has made me physically lazy and it hurts my eyes. I have put on so much weight because all I do is sit. I really need to change this habit. Anyway! I hope you have a wonderful day!!!

When I returned home, I got sick. My co-workers that I traveled with got the big “C”. Thank goodness I tested negative. I am feeling a little better today.
