Chocolate Banana Overnight French Toast

How are you on this lovely Saturday?  Today I have a wonderful breakfast that is easy to make and if you choose, you can do it up and have it for dessert!  Ahhhh, breakfast for dessert?  Now this is a meal I can get in to!!  This is my Chocolate Banana Overnight French Toast.


My overnight french toast is a combination of french toast and bread pudding. Yum!! It’s made with a combination of chocolate and banana, which is one of my favorite combinations. I really thought of truly doing it up, but not everyone has the same taste as me, so I kept it basic. But let me tell you, if you added some peanut butter or peanut butter chips to it, oh my gosh, it would blow your mind! Or you could add candied pecans with a drizzle of caramel sauce, oh man!! But I kept it simple, since I was serving this for Christmas breakfast and by the time breakfast came around, we kind of filled ourselves up with cookies and croissants.  I know, not healthy!

To make the french toast I used All But Gluten sliced white loaf bread and soaked it overnight with a combination of mashed banana, unsweetened cocoa powder, stevia, vanilla, milk and eggs. Oh and a little espresso powder to really give it a nice chocolate taste. I popped it in the fridge and the next morning baked it or about 20 minutes and out came this perfect little breakfast!

The Chocolate Banana Overnight French Toast is moist, a nice combination of banana and chocolate and it’s sweet, but not super sweet. I added maple syrup to it, but honestly you don’t really need it. The sugar in this dish is all natural sugar which comes from the banana. This is a healthy, gluten-free breakfast that will please a crowd! Little Jenny’s boyfriend loved it and ate two slices for breakfast, along with my Husbands vanilla flavored scrambled eggs, and my burnt bacon. Yes, I burned the bacon, because my Husband kept saying he wanted it crisper. Well it was crisp and not edible in my eyes, but my Husband ate it all. I think he did that so he could be the only one to eat the bacon.

Chocolate Banana Overnight French Toast

A moist, chocolaty, naturally sweetened gluten free french toast with a bread pudding consistency filled with fresh bananas.
Serves: 8 slices
Ingredients
  • 6 slices All But Gluten sliced white loaf bread, cut into cubes (4 cups)
  • 2 bananas, mashed
  • 1 egg
  • 2 egg whites
  • ¾ cup non-fat or milk of choice
  • 1½ tbsp. unsweetened cocoa powder
  • 2 packets stevia (for less sweetness only use one)
  • 1 tsp. vanilla extract
  • ¼ tsp cinnamon
  • ¼ tsp. espresso powder (optional)
Instructions
  1. Spray about 6 x 4 baking dish with cooking spray; and top with bread.
  2. In a bowl, add bananas, egg, egg whites, milk, cocoa powder, stevia,vanilla extract, cinnamon and espresso powder. Whisk together until no more lumps of cocoa powder remain. Pour over the top of your bread. Push the bread down with a spoon to make sure all of the bread gets covered with mixture. Cover with plastic wrap and refrigerate for 8 hours or overnight.
  3. Take bread mixture out of the refrigerator and let it come to room temperature; set aside.
  4. Preheat oven to 400 degrees, bake french toast for 18 - 20 minutes or until set and golden.
  5. Let the french toast cool for a few minutes and serve warm. Top with maple syrup if desired.
Notes
Dish is best when chilled for 8 hours before cooking.

I was inspired to make this dish because the wonderful people at All But Gluten sent me the most fabulous package of fresh goodies.  They sent me 3 loaves of bread, chocolate chip cookies, macaroons, brownies and blueberry muffins.  Yummy!!  Everything tasted wonderful and fresh.  My Husband LOVED the Blueberry Muffins and he took them all to work and shared with his co-workers who all loved them too.  Matter in fact they were shocked to learn that they were gluten-free.  My personal favorites were the macaroon cookies and the brownie bites.  Dam those brownie bites.  They are so moist and delicious!


What I really like about All But Gluten is that they offer a full range of gluten-free products – from White and Whole Grain Loaves to Brownies and Macaroons that are sold in the fresh bakery section, not in the freezer case! Of course if you stock up on your goodies, you can freeze it! I did that with the bread, but everything else was eaten right away.

I am not gluten-free, but you know I love food and I am always willing to try something new.  No one in my house knew that my Chocolate Banana Overnight French Toast was gluten-free.  My Husband said the blueberry muffins were light, fluffy and sweet.  The macaroons were dynamite!  All I could say is I wanted to eat the whole bag!  Perfect coconut flavor!  The chocolate chip cookies were soft and perfectly sweet and oh the brownie bites were amazing!  They melted in your mouth!  I warmed one up and served it with ice cream, smeared peppermint whip cream on it and popped them in my mouth when I got the craving, which was a lot!  Thank you All But Gluten for sending me this package.  Not only did you introduce me to something new, but my friend has a friend who just got diagnosed with Celiac and she hasn’t eaten too much because she doesn’t know what to eat.  I introduced her to your products and I am hoping that this will help her get back on track!  Plus my doctor just told me to limit my wheat intake, so this is great to know I have options!
