Hi Everyone!
Today for #SundaySupper we had to make something that was inspired by our favorite holiday music, movies, and TV shows. I chose my all time favorite holiday movie which is National Lampoons Christmas Vacation. I love that movie! I watch it every year! However, I haven’t yet this year, but I think it will be perfect to watch on Christmas Eve.
I just love this cooky family! Never a dull moment when Clark W. Griswold is involved. So what did I make that was inspired by the Griswolds? I made The Griswolds famous Eggnog, but with a spin!!
Clark and Eddie served up some Eggnog in the famous Moose Mugs, but unfortunately I didn’t have a Moose Mug but I did find out you can buy it online. I would have gotten one if I had time to place an order, but after this post, what would I do with moose head mugs?
My Eggnog as I stated above has a little twist to it! I added cocoa to it to make it an Eggnog Hot Chocolate! For adult version, I added a little bit of rum to it! Yum!!! This is one drink I can get into!!! My drink is creamy, chocolaty, rich and has the perfect amount of spice and will please all hot chocolate and eggnog lovers. Just omit the rum for a kiddie version!
The Eggnog Hot Chocolate is super easy to make. In a medium sauce pan, I added Dairy Free Eggnog, unsweetened coconut milk, cocoa powder, vanilla extract, stevia, cinnamon and cornstarch to thicken it up. I whisked it together until it got thick and bubbly. I poured it into my Christmas Mug and topped with whip cream and freshly grated nutmeg. So good!!!
- 2 tbsp. unsweetened cocoa powder
- ½ tsp. corn starch
- ½ tsp. stevia or 2 tbsp. sugar
- ¼ tsp. cinnamon
- ¼ tsp. vanilla extract
- 1 pinch salt
- 2 cups eggnog (I used Dairy Free)
- 1 cup coconut milk, from carton (Do not use canned) or milk of choice
- 1 oz rum (omit for kid-free version)
- Freshly grated nutmeg
- In a medium sauce, over low heat,add all your ingredients, except the rum. Whisk constantly until thick and bubbly. Whisk in Rum, Pour into a mugs. Top with freshly grated nutmeg and whip cream if desired.

I am getting pumped up to watch National Lampoons Christmas Vacation!! You can bet that I will be drinking my Eggnog Hot Chocolate while watching it!!!

Christmas Vacation is my nephew’s most favorite holiday movie. I’m going to send him this post and I’m sure he’ll be making this wonderful hot chocolate to sip while he is watching the movie for the 10,000th time.
Lol, we saw the movie Friday night and oh my gosh I forgot how funny it is. I told my Husband we were watching it and he wasn’t thrilled and then he couldn’t stop laughing. He said he really liked the movie!
I am totally going to order the moose head mugs! Fantastic. I forgot about them!

I haven’t seen Christmas vacation in waaaaay too long. Maybe it will be on this week. I did not know they make dairy free eggnog. Oh, and I loooooove coconut milk from the carton. I even like it better than almond milk now.

Would you believe that I have never seen this movie? I’m probably the only person in the world, haha. Eggnog hot chocolate sounds fantastic… I wish the Florida heat would go away for one night so I can cuddle up with a nice warm drink like this one!

Using eggnog for the base of hot chocolate is a genius idea! And it would have been hysterical if you had gotten those moose mugs. What a ridiculous and awesome drinking vessel!
