Cranberry White Chocolate Pumpkin Oatmeal Cookies

Hi Everyone!

I think it’s official, pumpkin season is over, which is so sad, however it’s not really over for me.  I still have  a few cans left, and I simply must use them up!!  So for today’s recipe I thought I would take the holiday season and mix it with pumpkin season and I ended up coming up with these!

These cookies are soooooo good!! They are plump, sweet, chewy and soft. This cookie has it all going on. The best description I can give is oh my gosh good! No, just kidding, but they are good! Your first bite is sweet white chocolate, then as you get in the middle you get the pumpkin and cinnamon flavor and then the last bite is a chew from the cranberries and oatmeal. I made these cookies a couple of weeks ago and I had to give them away because I couldn’t stop eating them. There is something addicting to them. I don’t know what it is, but oh my gosh, pure heaven!!

They are super easy to make too!!! The whole process took about 10 minutes and about 12 minutes to cook. These cookies couldn’t be any simpler. They are a huge hit with my friends and family and get this, only 45 calories a cookie!! To lightened it up I used Truvia Baking Blends sugar that I had left over from my Lightened Up Mint Chocolate Chip Cookies from a few weeks ago and egg substitute. In case you don’t know what egg substitute is,  it’s basically egg whites in a carton. They add nutrients to it which is almost the same as eggs, but it’s fewer calories, it doesn’t contain cholesterol and is gluten-free. I like baking with it because it’s easy and fewer calories then eggs. A quarter cup, which is equivalent to an egg is only 30 calories compared to 70 in an egg.

    Sweet, plump, soft center cookie that is slightly crispy on the outside and made with white chocolate, cranberries, pumpkin and oatmeal. Each cookie is only 45 calories!
    • ¾ cup whole wheat pastry flour
    • 1 cup regular oats
    • ½ tsp baking soda
    • ¼ tsp salt
    • ¼ cup Truvia Baking Blends or ½ cup sugar
    • ¼ cup butter, softened ( I used Earth Balance)
    • 1 tsp pure vanilla
    • ½ tsp. cinnamon
    • ¼ cup egg substitute or 1 large egg
    • ½ cup pumpkin (not pie filling)
    • ¼ cup white chocolate chips
    • ¼ cup dried cranberries
    1. Preheat oven to 350 F.
    2. Line two baking sheets with parchment paper; set a side.
    3. In a small bowl, combine flour, oats, baking soda, and salt; set a side.
    4. In a large bowl, add sugar and butter and beat at med speed until well blended. Add vanilla, cinnamon, egg and pumpkin; beat well. Gradually stir in the flour mixture until well combined.
    5. Fold in white chocolate chips and cranberries.
    6. Drop a tablespoon size of cookie batter 2" apart onto prepared baking sheets.
    7. Bake cookies for 8 -10 minutes until lightly browned on the bottom. Let the cookies cool on pan for about 5 minutes.

    These cookies do have it all and I really like that they are so low in calories. I don’t feel to, to bad eating a few and trust me, I can put away cookies. They will most definitely satisfy your sweet-tooth cravings!!

    I thought I would give you a quick health update. I went to the doctors and I got tested for Celiac and the test came back negative which is a good thing. My doctor is giving me a series of three breathing tests on three different days to test to see if I am lactose intolerant, fructose intolerant or if there is something else going on. I also had blood work done to test my gluten and thyroid. Remember when I told you I thought I was lactose intolerant, well actually now, I am not sure. My doctor said something is going on and were going to find out what. He said when he pushed on my stomach he didn’t feel fat, but felt air and push back. Something I am eating is not digesting which has been making me feel ill. I am so happy I actually got a doctor to listen to me. My main physician basically told me it was in my head and that was a year ago. So I actually hope he finds something wrong. You start to doubt yourself and think it’s all in your head, but he told me, nope something is going on. I hope we can figure it out with these tests. So that means I have to fast and eat a bland diet for about 4 days. Yuck! He said chicken and rice! Boring!!! Well that’s just a quick update. I know this is a personal thing, but I feel good to talk about it and you Guys have given me great advise! Plus I never know if someone else is going through the same things as me?
