Three Bean Vegetarian Chili



Hi Everyone,

Is it me or has been extremely cold outside?  We went from low 70’s to 40’s in just a couple of days.  I am not ready for winter.  I have officially put away the capri’s and pulled out the jeans, sweaters and boots.  So when I am cold one of the things I think of is comfort food.  You know a big bowl of something that gives you that warm fuzzy feeling in your belly.  Well today I created a quick, easy dinner that will warm you, is super easy to make and is perfect for the cold chilly night.

This is my 3 Bean Vegetarian Chili. It’s ohhh so good!  It’s chunky, thick, loaded with flavor and oddly enough it has a nice smooth flavor. This is the first time I ever had chili without meat and I have to tell you I didn’t miss it at all.   One thing I really love is a spicy chili!  I love the heat, but knowing my Husband he is not a spicy foods eater except for hot chicken wings, which I find kind of odd.  I figured if I wasn’t having meat in the chili, I better not make it spicy or he won’t eat it.  He came home from work and he said, oohhh chili, then he said where’s the meat?  Then he said Did you make it spicy?  No dear!!  This is my life!

So was my chili a hit? Yes it was! My Husband actually said it was really good, which kind of shocked me!! The chili is made with green bell peppers, onions, black beans, kidney beans, white kidney beans and what made this chili magic was the Contadina Tomato Sauce. Since I tried Contadina tomato sauce a few weeks ago in my Crockpot Meat Sauce, I have been in love. To be honest I normally pick up whatever sauce is on sale and use that, but not anymore, I am truly loving Contadina. It smells like fresh tomatoes and the flavors are so rich. It’s truly a wonderful tomato sauce.

The chili is perfect for having as a week night dinner because it’s one pot meal and pretty quick to make. Or even more perfect for after you have done all that Christmas shopping and you just want a simple flavorful meal to serve to your family. The chili is even better the next day! I had it for lunch and for dinner and the flavors really come together!!!   It’s awesome for dipping french bread in it too!! Yum!

Three Bean Vegetarian Chili

A healthy, quick and easy, hearty chili that is rich, thick and made with three types of beans.
Serves: 10 cups
  • 1 tbsp. olive oil
  • ½ cup onion, diced small
  • 1 large green pepper, seeded, diced
  • 2 cloves garlic, minced
  • 1 29oz can Contadina Tomato Sauce
  • 1 15 oz can Contadina diced tomatoes
  • 15 oz cab red kidney beans, drained rinsed
  • 15 oz. can black beans, drained rinsed
  • 15 oz. can white kidney beans, drained, rinsed
  • ½ tsp. sugar
  • 2 tbsp. chili powder
  • ¾ tbsp. cumin
  • ½ tsp. salt
  • ½ tsp. black pepper
  1. In a large pot, add olive oil, onions, bell pepper and garlic. Cook over medium - low heat until tender about 5 minutes.
  2. Add the Contadina Tomato Sauce, diced tomatoes, red kidney beans, black beans and white kidney beans; mix until incorporated. Stir in remaining ingredients. Bring to a boil, then simmer for 30 minutes, stirring occasionally.
  3. Serve with cheese, chopped scallions, or a dollop of greek yogurt.
