Naked Apple Vanilla Pie

Hi Everyone,

I saw this recipe this week on King Arthur Flour’s website and I had to make it.  Unfortunately I cooked it long.  Actually I didn’t, my oven did.  For some reason I can’t get the cooking time right when it comes to baked goods, except cookies.  I don’t get it?  I place it on the center rack and it still comes out a tad toasty.  The cooking time for today’s recipe is 30 – 35 minutes, I cooked mine for 25, but still it got toasty.  So should I share it with you?  The answer is yes!  Why?  Because even a little toasty it tasted amazing!

You will see I am not your typical blogger. I make mistakes too! I share those mistakes with you too. I do this because I am real and things happen in life. I’m not perfect, I’m not a chef, I’m just a food craze blogger that loves to share recipes that I find incredible and this recipe falls into that category. Don’t let this turn you off to this recipe because my Husband even called me and said the pie was delicious. I said didn’t it taste a little over cooked?  He said it doesn’t matter it was good and I enjoyed it! So with his thumbs up, I am going to share with you this wonderful recipe that would be perfect for the holidays. It’s light, low calories, sweet and full of wonderful apples. It’s really great for having after a heavy meal.

The recipe is super easy and quick to make. It’s a one bowl recipe too. Just add 1/2 cup flour, eggs, sugar, baking powder in a bowl. Mix it up and add your apples. It puffs up to a great little dessert. To me it tasted like an apple cake. The apples are so tender and just busting out at the seams. I am kind of an apple freak and after I ate two slices, yes two, I had to place it in tupperware and give it to my Husband to take to work because I could have it near me. I have no control. None, whats so ever!! Here is a picture of it with the apples bursting. It’s the messy first piece that you take out of the pan. The first slice is always the one that falls apart and never looks perfect.  it’s actually my favorite piece, because I eat all the fallen pieces.  Yum!

I read the other comments of this recipe and even added my own. Everyone seems to love it and it got pretty decent reviews. You can check out the recipe from King Arthur Flour here and see what they said. The only modification I really made was I added some cinnamon and I skipped the nuts. My Husband isn’t much for nuts, so I passed on it and skipped a few extra calories.  God knows I eat enough nut butters to skip nuts on some recipes. he he

Naked Apple Vanilla Pie

A light, fluffy, sweet cake that is low in calories, dairy free and loaded with fresh apples.
Serves: 8 slices
  • 2 large eggs, beaten
  • ½ cup presweet tagatose or ⅓ cup granulated sugar
  • ⅓ cup brown sugar, light or dark
  • ⅛ teaspoon salt
  • ½ cup white whole wheat pastry flour
  • ½ tsp. cinnamon
  • 1 tsp. baking powder
  • 3 medium apples, peeled and sliced ⅛" thick
  • 1 tsp. vanilla extract
  1. Preheat the oven to 350°F.
  2. Spray 9" pie dish with cooking spray; set aside
  3. In a large bowl add eggs, sugars, and salt. Whisk until combined and smooth. Stir in flour, cinnamon and baking powder, whisk until smooth and no lumps remain. Fold in the sliced apples and vanilla.
  4. Pour the batter into the prepared baking dish and bake for 30 to 35 minutes, until set and lightly browned. A knife tip inserted into the center should come out clean.
  5. Serve slightly warm or refrigerate any leftovers.

I really do recommend this recipe. Just be sure to check your cooking time. If you want to add some pizzazz to it, you can add nuts, like walnuts or pecans as the recipe recommends, maybe some raisins or some fresh cranberries. Heck, add some other fruit to it. I don’t think you could go wrong with this recipe. I personally plan on re-making it, and re-taking my pictures, so they look better, then what I am sharing with you today.

Well that’s it for me. I am beat! Time is going to fast and I feel like I can’t catch up.  I can’t wait for next week because I am off from work.  I am on an official count down!
