We did it we made it to Friday! Woohoo!! Since it’s been a long week, I have special treat for you! Need a hint? It contains chocolate, mint and in form of a little cookie. I bet you guessed it! I have for you Lightened Up Mint Chocolate Chip Cookies! Oh baby! This is one of my favorites and my Husbands too!
My Husband always requests chocolate chip cookies for his lunch and how can I blame him? It is my favorite cookie, next to peanut butter. I love chocolate chip cookies!! I think I love them to much! I don’t get what the big deal is about them? Yet, they are the best cookie ever! When shopping at the store, my Husband grabbed a bag of mint chocolate chips and said make these instead! You can add them to the colored chocolate chips that you got for the holidays. I kind of looked at him and said fine. But, I know there is no control in this house with chocolate chip cookies! From the batter to the baking, it’s all good!! To darn good! So what does a girl do, to make them a little less calories and not so much sugar? I picked up a bag of Truvia® Baking Blend with sugar. I never used it in baking before, so I was unsure how it would taste and how it all worked. So to make life easier, I went to Truvia® brand’s website and got a recipe for chocolate chip cookies. That way I would for sure make them perfect for my Husband (shhhh, me too).
Truvia® Baking Blend with sugar is not like any other kind of sweetner. The measurements are different, so you use way less in baking. The Truvia® brand is also natural and the sweetness comes from the Stevia leaf. Awesome! I love stevia! So I made Truvia® Baking Blend with sugar chocolate chip cookies with the only exception using mint chocolate chips instead of semi-sweet. So how did the cookies come out? Delicious! They are plump, crispy on the outside, soft in the middle and has the perfect balance of sweetness. Hmmm, The Truvia® brand is really good and works great in baking.. But to get non-bias opinion, I asked my husband, since he is brutally honest with me, tp honest if you ask me. He popped the whole cookie in his mouth and said “these are good dear”. Hey, that’s a compliment and a win! He didn’t notice that I didn’t use sugar in the recipe! I have to show you the measurements from the bag. They are not the same as sugar, you use way less!!
I will for sure be buying Truvia® Baking Blend with sugar for my baking needs this holiday season! What I also like is I bought it at Target! Easy to get!!! Ohhh weeeee, I can’t wait for baking season, as you can guess, I have already began!! I really love baking cookies this time of year! Back in the old days when I met my Husband, he would take a day off of work to come to my apartment and we would bake cookies all day. I don’t recall what we did with batches and batches of cookies, but I do know we had fun!! I wish he still liked to bake with me. Now he just eats my baked goods and says what are you making now?
- 11/4 cups flour
- ½ tsp salt
- ½ tsp baking soda
- ½ cup (1 stick) butter, softened
- ¼cup + 2 tbsp. Truvia® Baking Blend with sugar
- ½ tsp vanilla
- 1 large egg
- 1 cup mint chocolate chips
- Preheat oven to 375° F.
- Line two baking sheets with parchment paper; set aside.
- In a small bowl add flour, salt and baking soda; mix until combined. Set aside.
- In a large mixing bowl, beat butter, Truvía® Baking Blend and vanilla, until light and fluffy. Beat in the egg. Gradually beat in the flour mixture. Stir in chocolate chips.
- Drop rounded tablespoon on cookie sheets and press down to slightly flatten.
- Bake for 9 to 11 minutes or until lightly browned.

I have to admit I love the Truvia® Baking Blend with sugar! I really didn’t notice the difference in my cookies and neither did my Husband. Hi Dina! I bought my Mint Chocolate Chips at Target. They are made by Nestle. They are mixed with mint and dark chocolate chips.
