Italian Pork Tenderloin and Potatoes in Crockpot

Hello,

Mmmm, mmmm, mmmmm I love the Crockpot!!  I tell yah, it makes life so much easier, whether it is a weeknight meal that is already for you when you come home at night or on the weekend,when you spend the day cleaning your house and shopping and your purely to lazy to make dinner, the Crockpot comes in handy!  I swear whoever invented the Crockpot is a genius!!

Italian Pork tenderloin with Potatoes & Carrots - Crockpot

Today I have for you a simply, tasty, down home cooking Crockpot meal. This dish reminds me of something my Mom would make without the Crockpot. It’s my Italian Pork Tenderloin with Potatoes and Carrots. Oh baby! Good old comfort food at it’s best! I love the Crockpot. Really, there is nothing like coming home to a home cooked meal! I know you must agree with that!!
 Italian Pork tenderloin with Potatoes & Carrots - Crockpot
This dish is made with pork tenderloin, carrots, potatoes and celery. For the seasoning I used two teaspoons of Italian dressing seasoning and I let it all slow cook in vegetable broth, but chicken broth would work too!!  The pork is fork tender and the vegetables just melt in your mouth.

This dish also make a wonderful gravy.   To make, I took my meat and vegetables out of the Crockpot and poured the juice into a small sauce pan and mixed a little cornstarch and water to make a nice thick flavorful gravy. My Husband is a gravy fanatic! We had leftovers, so the next night my Husband re-heated the dish and poured the remaining gravy over the top. He said it tasted like stew. This is one dish he absolutely loves! I guess you would expect that from a meats and potato kind of guy!

Italian Pork Tenderloin and Potatoes in Crockpot

A healthy, simple slow cooked meal made with pork tenderloin, potatoes, carrots and flavored with Italian Seasoning.
Serves: 5 servings
Ingredients
  • 1¼ lbs pork tenderloin
  • 1½ cups carrots, sliced about ¼"
  • 1 cup celery, diced, about ¼"
  • 2 medium rustic potatoes, scrubbed clean and cut into bite size pieces
  • 1½ cup low sodium vegetable or chicken broth
  • 2 tsp. Italian Seasoning Mix (The kind in the package you use to make dressing)
  • ½ tbsp. crushed black pepper
  • Cooking Spray
  • 1 tbsp. cornstarch
  • 1½ tbsp. water
Instructions
  1. Spray the inside of the Crockpot with cooking spray. Add pork tenderloin and surround it with the vegetables. Pour vegetable stock over pork. Sprinkle the pork and vegetables with Italian seasoning and pepper.
  2. Cook on low for 8 - 10 hours or cook on high for 4 - to 6 hours.
  3. With tongs, carefully add pork onto serving plate. With a slotted spoon, add vegetables to the side of the pork on serving plate. Carefully pour remaining juice in the crockpot into a small sauce pan. Place sauce pan on the stove top over medium heat.
  4. In a small bowl add cornstarch and water, mix until combined. Pour mixture into the sauce pan with the gravy. Whisk together until thick and bubbly about 5 minutes. Pour gravy over pork and vegetables.

Note: You can chop your vegetables the night before to make for easy morning preparation.

This dish is sure to please any night of the week. It’s just perfect for a busy day and a chilly night. The leftovers are amazing and taste just as good the next day! Make extra and take it in for lunch. A quick zap in the microwave and you will be sure to have a lunch that will make everyone jealous!

I really need to start making more Crockpot meals.  I love chicken in the Crockpot, but my Husband doesn’t, so I don’t make it to often, but heck, maybe I should?  Time for me to go!  🙂

    This looks delicious. I do have a couple of questions. Does the tenderloin dry out? A pork tenderloin cooks so quickly in the oven that I’ve always been hesitant to try it in the crockpot. Would be thrilled to be able to though. Also, if I need to double the meat and vegetables, do I also double the liquid and would the cooking time change? I can’t wait to try this. Thank you.

      Hi Marla,

      I never found my pork tenderloin to be dried out. The liquid really keeps it moist. Pork Tenderloin is my favorite meat to cook in the crockpot. If your going to double the recipe, I would double the liquid too. It’s ok to have to much liquid, because your going to spoon out the vegetables and take the pork out. Just cook the remaining liquid or at least half of it, use your best judgement, and you can make the gravy. You do not need to change the cooking time. Once the meat starts to fall apart, it’s done! Let me know if you have any other questions.

      Hi Holli, Hmmm, just add some spices to it. In a small bowl mix together some oregano, parsley, onion powder, basil, thyme, a little salt & pepper. Use what seasonings you like and what you have on hand! I am sure it will turn out great!! Let me know what you end up doing.

    Wow! Thanks for the basic recipe. I added onions, red wine vinegar, Cajun spice and it was absolutely mouth watering delicious. Could almost eat the gravy by itself…fall apart gooooood.

      Hi Lisa, I would be afraid the zucchini would turn mushy. You could probably add them in about 2 hours prior to serving. I hope this helps.

      Nope, I did not cook the potatoes separately. I surround the pork with the potatoes, carrots, celery ect… Let me know if you have any additional questions. Hope you enjoy it!

    I bought a tenderloin on sale yesterday because I always cook Sunday dinner for my family. I told my father about this recipe of yours that I found while googling crock recipes & he got so excited he wants me to cook tomorrow night instead! Lol!         Does the roast have to be submerged in the liquid? I have it sitting on top of the carrots and potatoes right now. Usually I don’t put any liquid in with my pork roast because I always make pulled pork. But this is my first time using the veggies. I’m using a bonless pork rib roast. I think I’ll just push it down into the liquid just to be safe before I go to sleep. Hope it turns out great. Yours looks soooo yummy!! 😀

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.

When I returned home, I got sick. My co-workers that I traveled with got the big “C”. Thank goodness I tested negative. I am feeling a little better today.
