Whole Wheat Waffles with Warmed Blueberry Topping

Hi Everyone,

I am excited for today’s recipe.  This is the first time I have ever made waffles.  I tried it once on my old waffle maker and it didn’t work out at all.  It was a mess!!  So now I thought I would re-try and make waffles again and let me tell you, they turned out perfect!  They are fat, crispy and ohhhh so perfect!
Waffles with Warmed Blueberry Topping
This is a healthy Whole Wheat Waffle topped with warmed blueberries. Oh baby! A perfectly filling breakfast. Really, one waffle filled me up for hours and my Husband ate two and he was stuffed!  I think I am in love with my new waffle maker. I made the waffles a little light, but next time I may go a pinch darker, but all in all it turned out perfect.

I got this recipe from King Arthur Flour. I did make some adaptions to make it dairy free, but as always I did add substitutes for my dairy friends. One thing I have been having an issue with being dairy free is fat and carbs. I usually use fat-free milk in recipes like this, but in this recipe I used unsweetened coconut milk. So I am still working on fat-free recipes. Any suggestions on a non-dairy fat-free milk, I would love that!  Is there such a thing? Waffles with Warmed Blueberry Topping
For the topping I went simple and heated up some frozen blueberries in the microwave. I added a little bit of stevia to sweetened them up. It’s a perfect and simple topping for waffles or pancakes. Plus it goes so good with maple syrup. If you’re not a blueberry fan, strawberries, blackberries, cherries and raspberries would work in the same concept as the blueberries. In the picture I topped it with whip cream. That was for my Husband! I ate the waffle in the middle so I didn’t have whip cream. 🙁 But either way I didn’t miss it in this recipe!! 🙂

This was the second half to my Husbands birthday breakfast. I served it with Thursday’s Candied Bacon. Oh I am still thinking of that bacon. With the addition of maple syrup on the waffles and dribbled down onto the bacon, oh man so darn good! This was one heck of a good breakfast!!!  We should have a birthday celebration every weekend!

Whole Wheat Waffles with Warmed Blueberry Topping

A light, crispy, healthy, dairy free whole wheat waffle topped with a simply sweet warmed blueberries.
Serves: 4 large belgium size waffles
Ingredients
  • 1½ cups White Whole Wheat Flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 tsp. stevia or 2 tsp. sugar
  • 1 large egg
  • 1 cup unsweetened coconut milk or milk
  • ½ cup unsweetened soy milk
  • ⅓ cup melted butter (I used Earth Balance) or vegetable oil
  • For topping:
  • 1 cup blueberries, frozen
  • ½ tsp. stevia
Instructions
  1. Preheat your waffle iron
  2. In a bowl add flour, baking powder, salt, and sugar; whisk until combined.
  3. In a separate bowl, whisk together the egg, coconut milk, and butter.
  4. Mix the egg mixture into the flour mixture; stirring just until combined. The batter will be a bit lumpy.
  5. Cook the waffles as directed in the instructions that came with your waffle iron.
  6. Meanwhile, in a microwave safe bowl, add blueberries and sprinkle with stevia. Heat up for about 1 minute. Lightly smash with a fork. Return to microwave and heat for about 20 seconds or until nice and warm. Serve over waffles
  7. Recipe slightly adapted from King Arthur
  8. Serving Size: 4 deep dish Belgium size waffles

Calories per waffle: 269, Fat: 16.5, Cholesterol: 46, Sodium: 725, Potassium: 93, Carbs: 33, Fiber: 6, Sugar: 6, Protein: 9

Note: If you use non-fat milk, you will have barley any fat in this recipe and higher protein. Calories will roughly be the same.

Now that I know how to make waffles, I can’t wait to try out other recipes. You know how I like to get all crazy with pancakes, so now it will be waffles.  ha ha I can’t wait!!   My goal is to be able to make a less calorie, higher protein waffle. I’ll get there! I’m still practicing on dairy free living.

I can’t believe it is already November! Can you believe Christmas is next month? Are you ready for this? I’m not! Though I am looking forward to Thanksgiving this year? Not sure why, since it’s normally just my Husband and I, and I end up cooking a crazy big meal. But that means lots of fun leftovers!

      Get the waffle maker back! 🙂 I had a crappy one that didn’t work, so I had to get a new one. Waffles are so fun and easy!

Happy World Kindness Day! This weekend I made my a Happy World Kindness Day! This weekend I made my annual snow jar to place on my shelf in the kitchen. You get a tiny sneak peak of my shelves at the end of the reel. The snow jars are so easy to do and you probably have most of the items on hand.

For the snow, I used blanket snow. You could also use, sugar or Epsom salt. I like the blanket snow because it’s not messy and it hides the fairy lights battery pack.

The houses are ornaments that I bought at Target. I thought they were Perfect for my pink kitchen. Of course you can use whatever you have on hand. It doesn’t have to be a house and tree.

If you buy fairy lights, make sure they have a timer on them. Trust me that will make life easier. If you don’t like fairy lights, you can use a faux candle. 
Ohhh and have a stack of batteries. I go through more batteries in the month of December then I do the rest of the year!

Happy Monday! Sorry I haven’t been on in awhile. Happy Monday! Sorry I haven’t been on in awhile. My husband was sick with the flu, then he passed it on to me. My dog even had an upper respiratory infection. Ugh! It was a rough 2 weeks. Then on Friday I had surgery to remove skin cancer on my chest. I’m sore and I can’t lift or exercise. Anyway, that’s why I have not been on.

The scent I received is Apple Jack & Peel. It’s fresh apples with cinnamon and a hint of citrus. It smells like fall. Reminds me of when we go to Apple Hill to go apple picking, which we will be doing next week.

The scent is warm and cozy and the candle and potpourri is so pretty. Not only do these look so pretty in my home, but they would make such a wonderful housewarming gift. I wish you could smell them.

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.
