Snickerway Truffles #SundaySupper

Hi Everyone!

Happy Sunday to you!  Today is a fun mission with #SundaySupper!  We had to create a goody for Halloween.  There are such a wide variety of things to make, but one thing sticks out to me, and that is chocolate.  Yes I love the sugary treats, like suckers, candycorn, laughy taffy, nerds and more.  But my heart goes out to chocolate.  But as much as I LOVE Halloween candy I can’t really have it near me.  I can pound down a bag in no time.  Not only will I get a tummy ache, but ohh the guilt is the worse.  So what does one do when you need chocolate and candy?  Make your own healthy, guilt-free chocolaty treats that are not only amazing tasting (trust me they are) but also gluten free and vegan.  Let me introduce to you my Snickerway Truffles!

Snickerway Truffles
This is one of the BEST chocolate treats I have made. Rich chocolaty flavor, creamy caramel and the best thing ever created, peanut butter, oh my!! They melt in your mouth! I am in love with these little balls of goodness!! I decided to call them Snickerways because these truffles are a mix between a Snickers Bar and a Milky Way. Both chocolate bars that are near dear to my heart. I took a batch to work and they agreed Snickerways was the perfect name!!

Not only are these melt in your mouth good, they are a breeze to whip together! I made two batches in less than 25 minutes. These are made with Peanut Butter, unsweetened cocoa powder, vanilla extract, Caramel Extract and Maple Syrup. All these combined together make the ultimate chocolate treat!!

Snickerway Truffle Ingredients

I actually made the first batch using some caramel extract that I got on Amazon and it had a coffee taste. The 2nd batch I usedJR Watkins Caramel Extract and there came the Milky Way taste.  I swear every week when I make something for #SundaySupper I always have to re-make it.  The first time it never comes out.  So weird because that normally doesn’t happen to me on the other recipes.  Crazy!   Well, I am just happy it turned out!  🙂
Snickerway Truffles
For a little added crunch I used roasted salted peanuts. I just chopped them up fine and added it to my batter. I love the salt added to the chocolate. It just ups the level of flavor in the truffles. I added all of my ingredients in a bowl, mix together and rolled into a ball. I keep my truffles in the freezer, but they are good in the fridge too. If you freeze them, just let them sit out for a minute or two and pop in your mouth, they will simply melt in your mouth and in your heart! So if you like chocolate, peanut butter and caramel I highly recommend these little chocolates. I ate so many of them, however they maybe guilt-free, just limit your self to a few, not half a batch like I did. I couldn’t help it, they are darn good!  Plus I had to test them.  Ok that’s an excuse!

A healthy, creamy, chocolaty, melt in your mouth gluten free vegan chocolate treat that tastes like a combination of a Snickers Bar and a Milky Way.
Serves: 20 truffles
Ingredients
  • ½ cup peanut butter (I used Peanut Butter and Co. The Bees Knees)
  • 1 tsp. caramel extract
  • ½ tsp. vanilla extract
  • 2 tbsp. maple syrup
  • 2 tbsp. unsweetened cocoa powder
  • 2 tbsp. salted peanuts, finely chopped
Instructions
  1. Line a plate or half a baking sheet with parchment paper; set aside.
  2. In a medium bowl, add peanut butter, caramel extract, vanilla extract and maple syrup. Mix until combined. Add cocoa powder and mix until combined. Knead in peanuts. Note: If you do not use salted peanuts, add a dash of salt to the dough.
  3. Take about a teaspoon size piece of dough and roll into a ball. Do the same with remaining dough. Place balls onto prepared plate and place in the refrigerator to firm up.
  4. Once slightly firm. You can store your balls in an airtight container in the freezer for up to 3 - 4 months or in the refrigerator for up to a few weeks.

Oh my gosh, I happen to have a few of these little Guys left and I think I need one or two or three of them. What? I have been good today! 🙂  It’s almost Halloween, so as my Husband eats his Grand Bars and M&M’s, I’ll eat my truffles.  I feel better about it!

    I’m with you, I can put down candy like nobodies business. However, I love your version. It’s just slightly better for you but I’m sure I’d still put some down!

      Yah,it’s hard not to put down! It’s so hard having sweet treats around and yup I could totally eat a bag of candy. Especially on a Saturday when your cleaning the house, and you take one, come around again and take two, ect… Next thing you know I ate a bag!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Happy spooky Thursday! I added a few touches of Ha Happy spooky Thursday! I added a few touches of Halloween in my kitchen. I don’t do much Halloween decorations, but I just love to add it to the kitchen. Every time I go to the kitchen it makes me smile.

To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers.  You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
