Almond Joy Bread


You know I love candy and I love Almond Joys, oh boy do I love them, but one thing I don’t like is the nutritional stats of them.  However, out of all the candy out there, they don’t rank to bad.  I never buy candy for the home because I have no control in eating it all!  But my Husband buys candy all the time!  Matter in fact this recipe was inspired by the big bag of Almond Joys he bought, darn that Husband! I have taken great control in not eating them, matter in fact I didn’t have one.  But the thought of chocolate, almonds and coconut was calling me.  I wanted one of those bite size candy bars so bad.  Sigh…  So what does one do when they want candy and know they shouldn’t have any?  Do the next best thing and re-create it into bread.  You know I love bread!

This is one of the best combos ever! Bread and Almond Joys! This bread is a duplication of that famous candy in the blue wrapper. I honestly can’t get over how much this really tastes like an Almond Joy. It’s light, fluffy, chock full of coconut and mini chocolate chips. *Drooling* I also added some slivered almonds to give it the true almond joy flavor. It’s friggen amazing! I kid you not, make this bread!!! It’s so good!!

My Husband took a few slices to work and came home and said the bread was so good and moist! That’s a compliment because he never says anything when I bake goodies!!! Yah!! Health wise the bread doesn’t come out to bad! It’s 153 calories a slice. Well worth the calories in my book!!

Almond Joy Bread

A light, fluffy, healthy quick bread chock full of coconut, chocolate and almonds. Tastes identical to an Almond Joy Candy Bar!
Serves: 1 large loaf or 2 mini loaves (12 slices)
  • ⅓ cup granulated sugar or ½ cup Presweet
  • Tagatose
  • 3 tbsp. coconut oil, melted
  • 3 egg whites
  • 1 tsp. vanilla extract
  • ½ tsp. coconut extract
  • ½ tsp. almond extract
  • ½ cup coconut milk, unsweetened from carton
  • 1 cup whole wheat pastry flour
  • ½ cup all purpose flour
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ½ cup unsweetened coconut, shredded
  • ¼ cup almonds, slivered
  • ¼ cup semi sweet or milk chocolate chips (I used mini chips)
  1. Preheat oven to 350°
  2. In a medium bowl, add,sugar, eggs, vanilla extract,coconut extract and almond extract; beat until combined. Add coconut milk; mix until combined. Add coconut oil and mix until combined.
  3. In a separate bowl add flours, baking powder, baking soda sand salt. Mix together.
  4. Carefully incorporated flour mixture into wet mixture; fold until combined.
  5. Fold in coconut, almonds and chocolate chips
  6. Spoon batter into a greased and floured 9- x 5-inch loaf pan or 2 mini loafs.
  7. Bake for 40 - 50 minutes for 1 large loaf or 30 – 35 minutes for 2 mini loafs, or until a wooden pick inserted into center comes out clean, shielding with aluminum foil after 50 minutes for a large and 20 minutes for mini to prevent excessive browning. Cool in pan on a wire rack 10 minutes; remove from pan to wire rack.

I’m a little mad at myself with this recipe.  I originally made it with almond flour and holy crap did that make a mess!  It exploded in the oven.  Then I made it again with flour and I let it cook to long.  So the bottom of the bread was a little on the dark side, you can see that in the pictures.  Make sure you check your bread periodically to prevent it from burning.  If it gets dark in color, cover the top with aluminium foil.   My oven cooks way quicker than my old oven, so I am still getting used to baking times.  I’ll get it perfect one day.  But it couldn’t have been to bad because my Husband requested this bread again, so I shall make it again and soon!   That way I can show you more pictures!

I do love when you can take a sweet treat and turn it into something awesome like bread!  I really love this bread and I couldn’t stop nibbling on it.  It’s simply perfect!!!  If you love Almond Joys, you MUST make this bread!

Well I am off!  We are having a fall party tomorrow and I have to finish prepping it.  I’m making a mixed green salad with roasted butternut squash, pomegranate arils, cranberries, pumpkin seeds, goat cheese and my Maple Balsamic Dressing.  Everyone is bringing in goodies like fresh bread from the bakery, meatballs, cornbread stuffing, cheesecake and who knows what else.  I figured I better bring something healthy.  I am seeing a nutritionist to help me get back on track and I have to track my food intake starting tomorrow and that’s the party, so I need to be extra good!  This is going to be hard!  Next week, when I get my evaluation, I’ll let you know what she said.
