Roasted Vegetable Pasta Sauce #SundaySupper

Hi Everyone!

Today for #SundaySupper we had to make a sauce of some kind.  I asked my Husband what kind of sauce should I make?  He said his famous Wally Wing Sauce.  I said that’s great, but you have to make it!  Well as you can tell from the title of my post, we didn’t make the famous Wally Wing Sauce, since he tends to be a little lazy in the kitchen.  I told him the post can be all his, I’ll write what he says and photograph the pictures.  No sell!  So today I decided to make for the first time ever homemade roasted vegetable pasta sauce.  I am soooooooooooo proud of this recipe!!!
Roasted Vegetable Pasta Sauce
I haven’t made true slow cooked pasta sauce in a very long time. Normally I will make a meat sauce, but today I wanted a nice roasted vegetable sauce. This recipe is great for using leftover vegetables. The sauce is chock full of every vegetable I had in the fridge. It’s made with zucchini, bell peppers, carrots, onion, broccoli, celery and garlic! Oh baby! Is it ever so good! You can actually taste the flavor of all the vegetables. However I found the zucchini really stood out. I think it’s because I used four medium ones in this recipe.  It was either use it or lose it!
Roasted Vegetable Pasta Sauce
I took all of my vegetables and roasted them in the oven with a little olive oil. I didn’t add any seasoning to it because I wanted to add that to the sauce. While the vegetables were roasting, I started a nice tomato sauce base. When the veggies were done, I added them to the sauce and with my hand blender I pureed it all together. However, one little piece of carrot didn’t get blended. Some how he got missed. 🙂

I cooked the sauce over low heat for almost four hours. The sauce turned out perfect and I couldn’t be more happy with it. It seems like a long time, but the flavors come together so nicely and it really isn’t much work. I stirred it occasionally and went on for the rest of the day. I am sure if you didn’t plan to be home, you could make this in a slow cooker. I just recommend roasting your vegetable ahead of time. You could do that the day before.

For my dinner, I served it over a bed of spaghetti squash for myself. I just love spaghetti squash. Its low-calorie, low carb and it picks up the flavor of the sauce. My Husband on the other hand had spaghetti with his sauce. I asked him what kind of pasta do you want and he said spaghetti. I looked in the pantry and for spaghetti, all I had was whole wheat or quinoa. Shhhh, don’t tell him but I used the quinoa pasta for his. He had no clue at all! He ate it all. It’ so funny because as you know he doesn’t like quinoa. ha ha Honestly, you can’t tell the difference and his opinion says it all. See it’s white, so he didn’t think anything of it. He does notice whole wheat because of the color! Plus whole wheat does tend to taste a tad grainer.

Roasted Vegetable Pasta Sauce

A homemade healthy, slow cooked, thick, vegan, low calorie pasta sauce made with roasted vegetables.
Serves: 21½ cups
Ingredients
  • 3 large stalks celery, cut into 1" pieces
  • 2 cups, carrot, cut into 1" pieces
  • Half a large onion, cut into chunks
  • 4 medium zucchinis, cut into 1" pieces
  • 2 cups broccoli, heads only
  • 2 large bell peppers, cut into chunks
  • 28 oz can peeled tomatoes
  • 30 oz can tomato sauce
  • 2 tbsp. tomato paste
  • 1 tbsp. garlic, minced
  • 1 tbsp. oregano
  • 1 tbsp. basil
  • 1 tsp. sugar
  • ½ tsp. salt
  • 1 tsp. ground pepper
Instructions
  1. Preheat oven to 400 degrees
  2. Line two baking sheets with parchment paper or spray pans with cooking spray.
  3. In a bowl, add vegetables and 1 tablespoon of olive oil. Turn to coat vegetables. Divide vegetables between baking sheets and bake for 15 minutes, flip and bake for another 15 minutes or until vegetables are fork tender.
  4. Meanwhile over medium heat, in a large pot add tomatoes, tomato sauce, tomato paste, garlic, oregano, basil and sugar. Once vegetables are done, add it to the sauce. With a immersion blender, puree all of the vegetables with the sauce, until no more chunks remain. Bring to a boil, cover and simmer on low heat for two hours. Serve over pasta or spaghetti squash.
  5. NOTE: if you do not have an immersion hand blender, puree the vegetables in a blender in batches, than add to the sauce.

Roasted Vegetable Pasta Sauce
I just love homemade dishes like this! Nothing more cozy than fresh pasta sauce slow cooking all day and than sitting down to a nice hearty, healthy dinner. Since I had so much sauce leftover, I froze half of it and placed the rest of it in a large mason jar in the fridge. That way I have some for leftovers this week and the frozen is to have later!

    WOW this sauce sounds AMAZING!! We have been wanting to try subbing spaghetti squash for our pasta, ut I would like to find that quinoa pasta too!

      You should be able to get quinoa pasta at your grocery store and I know Whole Foods sells it. I buy it online at Swanson http://www.swansonvitamins.com/q?kw=quinoa. Spaghetti squash is a great sub for pasta! But I’ll be honest, it’s good, but it’s not the same, but I love it! It satisfies my pasta craving.

      Trick him with quinoa pasta, I don’t think he will know. 🙂 So far mine doesn’t. lol I know making a sauce like this is a great way to use up those veggies. Sometimes I tend to go overboard on vegetables and I have to use them up, and I thought a sauce would be a great way, plus extend the life of my vegetables.

Happy Wednesday. I am sharing with you my little o Happy Wednesday. I am sharing with you my little outdoor space with our lounge chairs. Truthfully I wanted to get rid of the lounge chairs as they take up so much room and we never lay on the chaises. However, over the winter my husband made new cushions for the them and I didn’t have the heart to get rid of them. He made the cushions for our dog Samantha who passed away this winter. She loved laying on the lounge chairs. The boys don’t like to sit on them, unless you are on them too.

I do like the color combination of this space. It’s relaxing and I just love the Gerbera flowers. I wish I could keep the pillows on them, but my little Sully 🐶loves to tear apart pillows. So the pillows are living in my living room. I’ll bring them back outside if we have guests.

I’d like to say with the warmer weather it’s time for Summer decor, but it has been unseasonably cool here. We are still in the 70’s and windy. Great for the plants, but not me. I need some 80’s. This is just wacky weather!

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers!

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!
