Pumpkin Pie Hummus

Hi Everyone,

I have a confession to make!  I hate Trader Joe’s!  Their, I said it!  I do!!!!  Why?  Because they keep stocking their shelves with pumpkin stuff!!!  I have a pumpkin weakness and I must buy pumpkin goodies when I see it!  Now I am in love with two of Trader Joe’s newest creations that have hit the shelves this month.  Their pumpkin crisps and pumpkin pita crisps. Holy Vagoli, they are both so darn good!!  The Pumpkin Cranberry Crisps are savory, crunchy and have a slight pumpkin taste to them.  I love them!  They are only 80 calories for 10 – 12 pieces.  The Pita Crisps with Cranberries & Pumpkin Seeds are salty, sweet and you get a nice kick of pumpkin spice.  I love them too!!  They are 130 calories for 9 pitas.  I have to watch out on them, because I could eat a whole bag!!

So with these wonderful little snacks, I had to create something to dip them in and what better to dip them in than more pumpkin? I don’t ever think there is such a thing as too much pumpkin!! So I made Pumpkin Pie Hummus!
Pumpkin Pie Hummus

This hummus is so good, that I’m thinking of taking a dollop of whip cream and mixing it in it and then eating it with a spoon. This hummus tastes just like pumpkin pie! It’s sweet, with a pinch of savory from the cinnamon and pumpkin spice. It’s amazing! I think besides dipping crackers in it, you could swirl some in some yogurt. Yum!!

The hummus is a snap to make! I made it in less than 10 minutes. It’s made with pure pumpkin puree, you know the dreamy orange stuff! Then it’s sweetened with pure organic maple syrup, a pinch of vanilla and cinnamon and pumpkin spice. For a little added touch of citrus I added two tablespoons of freshly squeezed orange juice. Oh baby, it is perfect!! Matter in fact I am snacking on it right now and I am in pumpkin heaven!!

Not only is this hummus great for Trader Joe’s goodies, but it would taste great on some regular crackers with a smidge of cream cheese. or how about a pita wrap with some turkey,sliced apples? How about on toast and maybe a smear of peanut butter? I know that one sounds weird but peanut butter and pumpkin taste great together!!! I just finished my Pumpkin Cranberry Crisps. 🙁


Pumpkin Pie Hummus

A sweet, healthy, vegan, gluten-free dip made with pumpkin, maple syrup and spices. It taste just like pumpkin pie!!
Serves: 2 Cups (16 servings)
Ingredients
  • 15 oz can chickapeas/garbanzo beans
  • 1 cup pumpkin puree (Not pie filling)
  • 2 tsp. pumpkin spice
  • 1 tsp. cinnamon
  • 2 tbsp. orange juice
  • 1 tsp. vanilla extract
  • 3 tbsp. maple syrup
Instructions
  1. For the garbanzo beans, drain them and rinse them under cold water. If you want super smooth hummus, you can peel the garbanzo beans. Just pinch them with your fingers, kind of like your going to shoot a marble. The skin comes right off, however it is time consuming.
  2. Add all of your ingredients into a food processor and blend until smooth. If the hummus is too thick to mix, add a pinch more orange juice. If you want your hummus sweeter, add a pinch more maple syrup.

Pumpkin Pie Hummus
I just gave some to Jenny and she said oh my God, this is good. I walked away with it in my hand and she said wait and she took a few more scoops. That’s pretty good because she doesn’t like hummus. Trust me, you don’t even taste the bean in it at all! This is a fabulous, healthy, guilt-free dip!! With dip and crackers like this, I better start stocking up before everything is off the shelves.

Well my Friends! Time for me to start making dinner, even though I filled up on my dip and that darn TJ’s crisps. Have a great day!

    So funny…I was just at TJ’s & bought pumpkin cranberry crisps, pumpkin waffles, pumpkin spice rooibos tea, and pumpkin bar baking mix. I think I may have the same TJ’s pumpkin problem 🙂

    This looks RIGHT up my alley. My only question: I am not a fan of maple syrup. Is this additional sweetness really necessary? My husband doesn’t really go for sweet things, so wondering if could just be omitted…or if a substitute is recommended.

      Hi Amy! You can omit the maple syrup, but it does give a nice pie taste to it. Make the hummus without maple syrup and if it doesn’t taste great, add maybe some brown sugar, agave nectar, honey, stevia or granulated sugar. Whatever you prefer for sweetness. I am sure it will taste great with whatever sweetener you use or don’t use.

    I can’t say I like Trader Joes either…but that’s only because we don’t have it here in Canada…as far as I know at least. I like how this pumpkin recipe is outside the box. And healthy too!

    Oh my god this was so good! I made it for a Halloween party last night and I swear all of it was DEVOURED within the first half hour (thankfully I saved some of it in the fridge for myself before the party!). Such a delicious and healthy recipe!

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.

One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.

For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.

Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.

I’m sharing heart shaped cinnamon rolls that I made this weekend. I got the idea to make them from my friend Heidi @eleanorrosehome. She made the most delicious looking cinnamon rolls, that I couldn’t resist to make. So perfect for Valentines Day and sooooo easy!

I took a can of Trader Joe’s cinnamon rolls and unraveled them, if that makes sense, and rolled them up like a palmier cookie. So fun! You could add food coloring to the frosting to make it pink and add sprinkles. Super cute! You can follow step by step recipe on Heidi’s Instagram page!
