I have a confession to make! I hate Trader Joe’s! Their, I said it! I do!!!! Why? Because they keep stocking their shelves with pumpkin stuff!!! I have a pumpkin weakness and I must buy pumpkin goodies when I see it! Now I am in love with two of Trader Joe’s newest creations that have hit the shelves this month. Their pumpkin crisps and pumpkin pita crisps. Holy Vagoli, they are both so darn good!! The Pumpkin Cranberry Crisps are savory, crunchy and have a slight pumpkin taste to them. I love them! They are only 80 calories for 10 – 12 pieces. The Pita Crisps with Cranberries & Pumpkin Seeds are salty, sweet and you get a nice kick of pumpkin spice. I love them too!! They are 130 calories for 9 pitas. I have to watch out on them, because I could eat a whole bag!!
So with these wonderful little snacks, I had to create something to dip them in and what better to dip them in than more pumpkin? I don’t ever think there is such a thing as too much pumpkin!! So I made Pumpkin Pie Hummus!
This hummus is so good, that I’m thinking of taking a dollop of whip cream and mixing it in it and then eating it with a spoon. This hummus tastes just like pumpkin pie! It’s sweet, with a pinch of savory from the cinnamon and pumpkin spice. It’s amazing! I think besides dipping crackers in it, you could swirl some in some yogurt. Yum!!
The hummus is a snap to make! I made it in less than 10 minutes. It’s made with pure pumpkin puree, you know the dreamy orange stuff! Then it’s sweetened with pure organic maple syrup, a pinch of vanilla and cinnamon and pumpkin spice. For a little added touch of citrus I added two tablespoons of freshly squeezed orange juice. Oh baby, it is perfect!! Matter in fact I am snacking on it right now and I am in pumpkin heaven!!
Not only is this hummus great for Trader Joe’s goodies, but it would taste great on some regular crackers with a smidge of cream cheese. or how about a pita wrap with some turkey,sliced apples? How about on toast and maybe a smear of peanut butter? I know that one sounds weird but peanut butter and pumpkin taste great together!!! I just finished my Pumpkin Cranberry Crisps. 🙁
- 15 oz can chickapeas/garbanzo beans
- 1 cup pumpkin puree (Not pie filling)
- 2 tsp. pumpkin spice
- 1 tsp. cinnamon
- 2 tbsp. orange juice
- 1 tsp. vanilla extract
- 3 tbsp. maple syrup
- For the garbanzo beans, drain them and rinse them under cold water. If you want super smooth hummus, you can peel the garbanzo beans. Just pinch them with your fingers, kind of like your going to shoot a marble. The skin comes right off, however it is time consuming.
- Add all of your ingredients into a food processor and blend until smooth. If the hummus is too thick to mix, add a pinch more orange juice. If you want your hummus sweeter, add a pinch more maple syrup.
I just gave some to Jenny and she said oh my God, this is good. I walked away with it in my hand and she said wait and she took a few more scoops. That’s pretty good because she doesn’t like hummus. Trust me, you don’t even taste the bean in it at all! This is a fabulous, healthy, guilt-free dip!! With dip and crackers like this, I better start stocking up before everything is off the shelves.
