I know, your thinking, no more pumpkin! Please, just STOP with the pumpkin!! Sorry, I can’t help it! I’m trying to spread the pumpkin recipes out, but I just couldn’t with today’s recipe. Why? Well, I know you made yesterdays Pumpkin Oatmeal in a Crockpot, if not, you must and then you must make this fabulous healthy breakfast for the next day!
This is my Pumpkin Pie Breakfast Jar Parfait! Holy moly is it good! It’s creamy, thick and LOADED with pumpkin flavor! I used yesterdays pumpkin oatmeal and surrounded it with greek yogurt and pumpkin puree. *Drooling* It is such a filling breakfast and amazingly good! It really does taste like pumpkin pie! I know, get ready to judge me! But what goes on pumpkin pie? Whip Cream! Yes I topped my parfait with a dollop of fat-free whip cream. This really gave it a nice pie flavor.
I have the tendency to add whip cream wherever I can. 🙂 The parfait is super easy to make! I mixed pumpkin puree, greek yogurt, pumpkin spice, stevia and vanilla in a bowl. Add half of it to my mason jar, added the oatmeal and then topped with remaining yogurt and added a pinch of pecans for a nice healthy fat and some crunch. You can whip this together in a matter of minutes and take it with you when you run out the door!!! With my coffee fetish ( I drink my calories 🙁 ), I went a little light with the oatmeal, but feel free to use more, it’s so good and so good for you!!!
- ½ cup greek yogurt, plain
- ¼ cup pumpkin puree (not pie filling)
- ½ tsp. vanilla extract
- ½ tsp. pumpkin spice
- ¼ tsp. stevia
- ¼ cup pumpkin oatmeal
- 1 tsp. pecans
- In a bowl, add yogurt, pumpkin puree, vanilla extract, pumpkin spice and stevia. Mix until combined. Taste to see if it is sweet enough for you.
- In a jar, add ½ the yogurt mixture, then top with pumpkin oatmeal and add remaining yogurt over oatmeal and sprinkle with pecans.
- For optional toppings you can add a drizzle of maple syrup, cranberries or apples.
I just love simple breakfast’s like this! They are quick to make in the morning and perfect for taking with you to work. I like to use my almost gone peanut butter jars when I make parfaits. That way you get a tad bit of peanut butter in with your breakfast and I just love that little surprise!
Welp, time for me to start baking a new recipe. I promise, tomorrow will not be pumpkin. Matter in fact, I don’t think I have anything pumpkin stored for you up until Friday. But we shall see, I will probably change my mind! 🙂
