Pumpkin Oatmeal in a Crockpot #crocktoberfest2013

October 14, 2013 By Jennifer @ PB and P Design 58 Comments

Hi Everyone!

Happy Monday to you and welcome to Crocktoberfest!!  This week we have you covered for breakfast, dinner and dessert with everything made in a Crockpot!!  Nothing like whipping together a fast meal in a Crockpot and then coming home from work or as in today’s recipe, waking up to an already cooked meal!!  I just love my Crockpot and I don’t use it nearly enough!!   I am happy to say I have teamed up with some fabulous bloggers to show you our best Crockpot recipes!  So to get the ball rolling today’s theme is breakfast!  I don’t normally make breakfast in a Crockpot because when I wake up I normally don’t know what to make, but today’s recipe was a treat to wake up and oh the smell of cinnamon and pumpkin slow cooking away in the kitchen, is simply incredible!

Pumpkin Oatmeal in Crockpot
Today I have made slow cooked pumpkin oatmeal in a Crockpot. Have you ever made oatmeal in a Crockpot? Oh my gosh you are missing out if you haven’t! It is the creamiest, thickest, richest oatmeal ever. My recipe today is made with pumpkin, cinnamon, pumpkin spice and vanilla. For the oatmeal I used Coaches Oats, but steelcut oats is also amazing in the Crockpot.
Pumpkin Oatmeal in Crockpot
The oatmeal tastes like a thick hearty pumpkin pie!! When I served it I added some dried cranberries and chopped pecans and for a bonus treat I put in the middle of the oatmeal, a swirl of maple syrup and a pat of butter. Oh my gosh it is amazing!!! I’m telling you if you like pumpkin, you must make this oatmeal!!! It’s some serious ribbing sticking stuff that will keep you full for hours!!
Pumpkin Oatmeal in Crockpot
My Husband couldn’t resist the smell of cinnamon and pumpkin and he actually asked for a bowl. He loved it, which is kind of shocking to me, since he isn’t the biggest pumpkin fan. But he did tell me, he is starting to get sick of pumpkin. Sorry honey, I have lots more pumpkin recipes ahead and pumpkin season has just begun! I also made a cup full for Jenny to take to work. She never has time to eat with the family! 🙁 But I did get a text message from her when she was at work. Here is what she said.
Text from Jenny
I am so happy she loved it!!! It puts a smile on my face when someone likes the something I make! 🙂
Pumpkin Oatmeal in Crockpot
I wanted to let you know the best way to make oatmeal in a Crockpot is by setting another bowl in the Crockpot and placing your ingredients in it. Then carefully filling the sides of the Crockpot with water. Doing it this way will prevent the oatmeal from burning or sticking to the sides of your bowl. I had no mess, no burns and no crispy oatmeal. It was simply perfect!!

Hi Heather! You can make plain oats and just make the parfait as the recipe follows. For the oatmeal, when u make it, you could also stir in some pumpkin, vanilla extract, pumpkun spice and some maple syrup. No matter what option you choose the parfait will taste delish!

I do this so it doesn’t burn or stick bad in the Crockpot. Otherwise you end up with a horrible mess to clean.

Is this supposed to be a little creamer? Mine seems to not have enough oats? I followed the directions….but I have only ever had instant oatmeal. Seems like I should see more oats….did I miss something?

Made this right in the CrockPost; it was fine to clean.

Omitted the sweetener and then later had to sweeten it with sugar… the sweetening makes it a little cloying but otherwise it doesn’t taste like pumpkin pie. I’ll make some brown sugar for the leftovers to see if that works better.

Otherwise I’d say… it’s easy to make, it’s a nice twist on plain old oatmeal, but it’s definitely not just like eating a pumpkin pie, which is stupidly what I was hoping for.

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.
🌿
One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.
🌿
For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.
🌿
Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.
🌿
Hope you enjoy this as much as I have making it.
Enjoy your day!

I took a can of Trader Joe’s cinnamon rolls and unraveled them, if that makes sense, and rolled them up like a palmier cookie. So fun! You could add food coloring to the frosting to make it pink and add sprinkles. Super cute! You can follow step by step recipe on Heidi’s Instagram page!
