Caramel Apple Protein Smoothie

Hi Everyone!

Welcome to another Smoothie Monday!  Today’s smoothie was inspired by the beautiful Fall weather we have been having.  It’s been sunny, warm and with a slight breeze.  It’s just perfect!!   If it could stay like this all year round I’d be a happy camper.  I have been cooking up apple recipes this past Sunday and with the smell of cinnamon and apples in the air I couldn’t resist on making a smoothie made with a fresh, juicy, sweet apple.


This apple smoothie is simply perfect for starting off your morning or even having as a mid day snack. It’s made with fresh chopped apple, vanilla protein powder (Designer Whey brand), apple spice, cinnamon, coconut milk and caramel extract that I got from J.R. Watkins. Oh baby it’s like drinking a dessert. It’s creamy, smooth and has a slight taste of caramel with a nice hint of apple. it almost reminds me of caramelized apples with vanilla ice cream.

One thing to warn about this recipe is if you don’t like texture in your smoothie, I recommend peeling your apple first. I put the skin and all into the smoothie, but my Husband didn’t care for the skin. It doesn’t bother me. Also, if you don’t happen to have an apple on hand, I am betting unsweetened applesauce will work in a pinch. if you’re looking to really fill you up and go all out in the recipe, throw in some oatmeal and boy will this smoothie keep you full for hours.

If your feeling a tad naughty you can always add a dollop of whip cream to the top with a sprinkle of cinnamon. I am betting that would be good. But I honestly didn’t think of that til right now. Darn it and the smoothie is gone! Hmmm, that will have to be for next time!

A creamy, healthy protein shake that tastes like apples, drizzled in caramel and topped with vanilla ice cream.
Serves: 3½ Cups
Ingredients
  • ½ cup apple, roughly chopped or shredded
  • 1 cup coconut milk, unsweetened or non-fat milk
  • 1 scoop vanilla protein powder
  • ½ tsp. caramel extract
  • ¼ tsp. pumpkin or apple spice
  • ¼ tsp. cinnamon
  • 1 cup ice
Instructions
  1. Place all ingredients in a blender and process until smooth.
