Hi Everyone,
Is it just me or does it seems Pete’s Coffee is really advertising their Maple Frappucino? I happened to go to Pete’s because I was intrigued and I wanted to try the frappe or latte, but to my surprise, well not really a surprise, but the calories are insanely high and I mean over 300 calories! Insane! I couldn’t do it!! I didn’t want to drink my calories, so I skipped it. But the thought of a maple frappe stuck in my head! So what does one do to cut calories, save money and make a kaboodle amounts of a drink? Make it yourself!
Making it myself was a great idea!! Boy oh boy is this good! It’s sweet, buttery and the flavor of maple syrup. I always knew I liked maple syrup but to make a drink with the flavoring of maple, yes please!! This drink is very light, fluffy due to the fact that I used xanthan gum to thicken it up. This coffee drink is more like a milkshake than a frappe, but oh so good!! To give it just a little more pop, I added a dollop of fat free whip cream and a drizzle of maple syrup over the top. I don’t think I could have to much maple syrup? Ohh, maybe next time I’ll pour some in the glass first?? The I ‘ll really get a nice maple flavor. Oh that might be maple flavoring overkill?
This recipe makes over 5 cups of pure maple sweetness! It’s enough to share with 2, 3 or 4 people!! And get this, I almost fell over when I did the calorie count! I made the serving size for two, for those who really like their frappes and the calories per serving is 35! Yes you read that correct 35 calories. What the??? The reason is I only used 1 tsp of maple syrup and I used maple extract for additional flavoring. Using extracts is a real calorie savor!!! If you drank all 5 cups it would only be 70 calories. Love you Pete’s, but this has you beat!!!
- 1½ cups of coffee, cold
- ½ cup milk, non-fat
- 1 tsp stevia (to taste)
- 1 tsp. maple syrup
- 1¼ tsp. maple extract
- ⅛ tsp butter extract (optional)
- ⅛ tsp xanthan gum (optional)
- 2 cups ice
- Place all ingredients in a blender and process until smooth.
I have to say it has been a while since I posted a Coffee drink. I have been cutting back a little bit on it, since I was getting a little to out of control. For those who don’t like coffee, I am sure this drink will taste delicious made with just milk or even coconut milk. I am unsure how it would be with almond milk?
Have a super great Monday!!
Toodles,
Jennifer
The xanthan gum tends to grow and it pushed my whip cream right out!

Jennifer @ Peanut Butter and Peppers says
I never heard of it until I saw it appear on Pete’s menu. It’s very good especially if you love your maple syrup. It is definitely guilt-free!

Awesome! I just wanted to let you know that you’re being featured at tomorrow’s All My Bloggy Friends 🙂
Brenna says
What does the xanthan gum do? What will happen if I don’t add that?
Jennifer @ Peanut Butter and Peppers says
Hi Brenna,
Xanthan Gum is a thickener and helps to prevent the frappe from separating. I make drinks without it all the time. It has no effect on flavor. From what I understand, not sure about this, but Starbucks also uses in there Frappucinos. You don’t need it in this drink!
Alli says
That looks so good – and low cal, too – a winning combo!
Jennifer @ Peanut Butter and Peppers says
Thank you Alli! I love my drinks, but I don’t like to drink calories! 🙂

I love all things coffee (and peanut butter, but that’s another story…) and this sounds wonderful! Where do you buy xanthan gum?
Jennifer @ Peanut Butter and Peppers says
Xanthan Gum is a thickner and is really needed for the drink, but if you want to get it, it’s made by Bob’s Red Mill. I bought mine at the health food section of the grocery store. It’s kind of pricey ($11 – $13.00 a bag), but a bag will last way over a year. I store mine in the fridge.
Oh and I love all things coffee too!! But I am sure you know that and Peanut butter is without saying! 🙂

I uses almond milk! It’s delicious, but a little icy and not as fluffy as the pictures. Any ideas why? Thanks!
Jennifer @ Peanut Butter and Peppers says
Hi Kelly, Try processing it in the blender longer. Mine could be a little fluffier because I used Xanthum Gum? I’m glad the flavor worked out. I bet almond milk made it taste super yummy. Great idea!

Wow this sounds sooooo good Jennifer!!! I’m going to have to try it!
Scarlett says
I LOVE maple! I’m not a coffee drinker, but I may have to try this in some other manner. Pinned!
Jennifer @ Peanut Butter and Peppers says
I bet it would be good with just plain milk some ice and maybe some greek yogurt!! Ohhh or a frozen banana and milk! Ok, I’m going crazy with ideas!
