Chicken and Bacon Chopped Salad

Hi Everyone!

I am writing this post in advance, but I want to tell you, WOW, we have a wicked fire on Mt. Diablo which is about 30 miles from my house.  The sky is red, and full of smoke.  Even being 30 miles away, we have ashes in our yard.  I feel so bad for the people who have to evacuate.  I hope no one’s homes get ruined or that no one gets hurt.  The weather has been crazy here!  It’s been in the 100’s, slight breeze and no rain.  The fire started from a grass fire and has gone out of control. This is happening on Sunday, so my guess by the time you read this post it will be over with, I hope!!  I thought I would share, since that is what is on my mind.  Now onto bigger and better things, today’s recipe!   More bacon!  My gosh this is my 3rd bacon recipe this week!!  I never eat this much bacon, ever!  But I have leftovers and what do you do with leftovers?  Make more things!!!

Chicken and Bacon Chopped Salad

I originally thought I was going to just make some BLT sandwiches for dinner, then I noticed that someone, I wonder who? Has been sneaking pieces of bacon. So by the time dinner came around I was left with a few pieces. And since I made this on Sunday, I tend to make salads on Sunday because it’s my way getting a head start on Monday! You know trying to eat healthy! So I thought why not a salad with bacon? I have chicken that had to be used. I had one day left before expiration and you know what has staring at me on my counter for like two months? McCormick Bacon Molasses Seasoning! Have you ever used this seasoning? My friend at work LOVES it! She told me you get a bacon taste without the calories. Sold! I found it at my grocery store and bought it. I have been meaning to use it, but I just forgot. Big mistake on my part. I finally used it with today’s recipe and it is fantastic. You really get a nice, almost smoky bacon taste. Plus no calories!! Love it! I took a picture of the packaging for you.
McCormick Grill Masters
I marinated my chicken in greek yogurt and sprinkled on the seasoning and let it marinate for a couple of hours. The chicken has come out so moist and juicy with the most wonderful smell and taste. Have you tried marinating chicken in greek yogurt? If not, do it!!! I promise, it will be one of the most moist chicken ever!!! You don’t taste the yogurt at all! Trust me! My picky Husband HATES yogurt and won’t touch it and he even admits it’s the best chicken! So do it!!!
Chicken and Bacon Chopped Salad
The salad is made with finely chopped romaine lettuce, tomatoes, corn and avocado. Oh and of course left over bacon from yesterday’s pancake recipe. I placed the salad in front of my Husband and you know he’s not a salad fan and he looked at it and said “Oh my God!” This is a pretty big salad!  I of course ate it all and my Husband left a pinch, but ate 95% of it! Honestly I was shocked that he ate it. It has avocado on it and he’s not an avocado fan.  Silly man!  But then again it had bacon on it and he loves bacon! So Ladies, if you want your man to eat salad, throw on some bacon!! 🙂

For dressing, I didn’t make any. I used a fat-free balsamic dressing and my Husband used a lite Italian dressing. I honestly think ranch dressing would be amazing on this salad. Just be sure to get a light ranch dressing or make your own by taking plain greek yogurt, ranch seasoning packet and a pinch of milk; mix together and you have a nice ranch!  I do that all of the time and sometimes I mix BBQ sauce in it to!  Oh yum!!

Chicken and Bacon Chopped Salad

A savory,filling, low carb salad made with season grilled chicken, avocado, corn, tomatoes and bacon.
Serves: 2 Huge plates
Ingredients
  • 8oz chicken breast, skinless, boneless
  • 2 tbsp. greek yogurt, plain 0% fat
  • 1 heaping tsp. McCormick Grill Mates Molasses Bacon Seasoning
  • 4 cups romaine lettuce, sliced small
  • 1 cup tomatoes, seeded, diced small
  • ½ cup avocado, peeled, cored, diced small
  • ½ cup corn
  • 2 slices bacon, cooked crumbled
Instructions
  1. In a shallow bowl or zip lock baggie, add chicken, yogurt and the Molasses Bacon seasoning, mix well. Refrigerate for at least 30 minutes up to two hours.
  2. Heat the grill to medium and place chicken on grill. Cook for about 8 minutes on one side and flip chicken and cook for about 5 minutes longer or until chicken is no longer pink.
  3. Let the chicken cool, and dice up into tiny pieces.
  4. Meanwhile, Divide between two plates the romaine lettuce, tomatoes, avocado and corn. Divide the chicken between both plates and top the chicken with bacon crumbles.
  5. Serve with ranch or a balsamic dressing

Chicken and Bacon Chopped Salad
Wow, I just read the nutritional stats on this salad and I can’t believe all of the fiber and protein in it! This makes a great low carb salad. I’m glad I made it!  It kind of reminded me of the BLT sandwiches I was going to have for dinner, but this is way better and healthier for you.  I am trying to cut back on the bread this week.  I’m having food issues and bread is one of the culprits that I keep eating, so this week, I didn’t buy any and it will be too hot to make any!  Good thing!!  Let’s see how it goes this week.  can I go tone week without bread?  Hmmm, now this is a challenge!  Do you have a certain food that you can’t resist?  Something that you can’t say no too?  I’ll tell you, I can give up chocolate and peanut butter forever, but not bread!  I just love it too much!!!  Sigh….

    Having lived in southern California (where I grew up) and having wildfires come close to where my sisters were living (one still is), I have at least a small clue of how scary those things are. I really hope it gets nowhere near you, because 30 miles isn’t much when dealing with wildfires. I wish I could send you some of our rain. We’ve been needing it desperately, but it’s been raining pretty steadily and pretty hard for a couple of days now. My husband and I and the tour group we were leading, came close to getting in the path of a small flash flood yesterday at the park where we volunteer. It’s scary seeing how fast the water gathers when it’s coming down off a lot of rocks. Stay safe!

    Jennifer this is likely a stupid question. Do u wipe the yogurt off before grilling or leave it on? Thanks for your help.

      Hi Marla, Sorry for the delay in answering you. I was at work today. You do not need to wipe the yogurt off. Just leave it on the chicken. it will make it super moist. Enjoy!

Happy Wednesday. I am sharing with you my little o Happy Wednesday. I am sharing with you my little outdoor space with our lounge chairs. Truthfully I wanted to get rid of the lounge chairs as they take up so much room and we never lay on the chaises. However, over the winter my husband made new cushions for the them and I didn’t have the heart to get rid of them. He made the cushions for our dog Samantha who passed away this winter. She loved laying on the lounge chairs. The boys don’t like to sit on them, unless you are on them too.

I do like the color combination of this space. It’s relaxing and I just love the Gerbera flowers. I wish I could keep the pillows on them, but my little Sully 🐶loves to tear apart pillows. So the pillows are living in my living room. I’ll bring them back outside if we have guests.

I am sharing with you one last look of my blues in my living room, as I plan on adding some yellow. I’d like to say with the warmer weather it’s time for Summer decor, but it has been unseasonably cool here. We are still in the 70’s and windy. Great for the plants, but not me. I need some 80’s. This is just wacky weather!

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers! 

I hope you check out everyone’s outdoor space. I love this time of year and I can always use more outdoor inspiration.

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!
