Hi Everyone!

I am so excited!  Today is my 2 year blog birthday!!!!  I can’t believe I have been blogging for two years!!  Two wonderful years!!  You know what they say “to keep trying things and you’ll find your calling.”  I spent my life trying a bunch of different things like making soaps and lotions, candles, gardening and so on.  It wasn’t until I fell in love with cooking and baking that I really felt complete.  Blogging has given me so much emotionally and so many different opportunities that I would never have dreamed of.  Blogging has become a big part of my life and I am a happier person for it!  So to celebrate my blog birthday I am keeping with my tradition and making pancakes!

I know your probably thinking, why pancakes? That’s not really a birthday blog kind of thing to make! Where’s the sprinkles? Where’s the cake? How about the frosting and candles? Well the reason I make pancakes is because my very first post was Whole Wheat Greek Yogurt Pancakes. I didn’t change the post at all and if you read it, you can see I have come a little bit further. One picture and one tiny post! But it’s a special post to me!

Whole Wheat Yogurt Pancakes

For my first year blog birthday I made my Whole Wheat Yogurt Apple Pancake. Oh baby this is a good pancake.  it tastes like apple cake!!  Yum!!  As you can see the pictures got a little better especially since my Husband changed the lighting in my kitchen and I got a new camera. I can only hope that my photography gets better.

So to celebrate the tradition continues and today I bring you Maple Bacon Whole Wheat Pancakes. Oh baby! My Husband said this is the best blog birthday breakfast ever!! I kind of agree!!! I got the idea of Bacon pancakes from watching Man vs Food. He was in Colorado and they served a big bacon pancakes topped with an egg! An egg, crazy, so crazy I had to do it!!!

Egg, pancakes, bacon and maple syrup are a wonderful, tasty, sweet, savory combination and sure to please, especially a bacon person!!! My Husband saw his plate and said WOW, I never had eggs and pancakes like this!! Well, duh! It’s my blog birthday and it’s a day of fun!!! So let’s have fun with food, while still keeping it healthy!!

The pancakes turned out, light, fluffy and crispy! The crispiness comes from the bacon! Man, what a great combo! To add some flair of flavor, I added maple extract to the pancakes, so you wouldn’t need as much or if any maple syrup. I admit, I added maple syrup to mine, but my Husband preferred his without.  After all maple syrup is the calorie killer when it comes to pancakes, especially my pancakes. I used to use the sugar free maple syrup and you Guys told me, that it’s not healthy, don’t use that. Well I listened! Your right, sugar-free maple syrup is processed and made with Splenda and I personally do not like Splenda. Your body can process natural things more easier than man made food! So thank you! I read your comments and never looked back!
Maple Bacon Whole Wheat Pancakes
So bacon in pancakes! Your probably thinking this is not healthy at all! Well I used only two slices of bacon, which was 70 calories and low sodium. It’s Whole Foods brand and you don’t even notice that it’s low sodium. Love that! The recipes makes 5 decent size pancakes and comes in at 298 calories for 2 1/2 pancakes. I hate when I make things and the numbers come out uneven. I used a heaping cup of batter when making the pancakes, but if you go just shy of a 1/4 cup, you should get 6 pancakes. I really went generous on my batter!

Maple Bacon Whole Wheat Pancakes

A healthy, light, fluffy, crispy maple flavored pancake made with yogurt, whole wheat flour and topped with bacon.
Serves: 5 pancakes
Ingredients
  • ½ cup Greek Yogurt, plain
  • 2 egg whites
  • ½ tsp. vanilla extract
  • ¼ tsp. maple extract
  • ½ tsp. baking soda
  • ¼ tsp. stevia
  • ⅛ tsp. salt
  • ½ cup white whole wheat flour
  • 2 slices bacon, cooked, crumbled (I used reduced sodium center cut from Whole Foods)
Instructions
  1. In a medium bowl add greek yogurt, egg whites, vanilla extract and maple extract ; mix until combined.
  2. In a the same bowl, add baking soda, stevia, salt, and flour; whisk until combined.
  3. Over medium heat, let your non-stick skillet or griddle get warmed. Place ¼ cup batter on to the warmed skillet or griddle, cook until bubbles appear on top and sprinkle with bacon and then flip pancake, cook until lightly golden. approx 2 - 3 minutes per side.
  4. To keep pancakes warm, heat oven to 200F and place cooked pancakes onto a baking sheet and place in the oven until ready to eat.
  5. For fun, top pancakes with an egg of your liking. The combination is delicious!!!

I am so excited today is PBandP’s birthday!! I have not missed one post in two years of blogging. I tell myself every year to cut back a little, but when I feel I may miss a post, it kind of gives me anxiety. So stupid, I know! But I can’t help it! I have so much fun! I want to THANK YOU!!! If it wasn’t for you, I wouldn’t be here. I wouldn’t have found what I have been missing.  Now that I have been blogging I have goals and dreams I want to achieve, so THANK YOU!!!  Really, it is you, that is why I am here!

So please celebrate with me today!   You can make a PBandP recipe, if you do, e-mail me a picture at [email protected] and I’ll post it, you don’t need a blog to do it, just a picture from your phone will do!!  Or if you don’t want to make a recipe, do something healthy, go for a walk, laugh and enjoy life.

Well, time to get my next recipe going!  Thank you again!!!  You really have no idea how grateful I am to you!  🙂

    Happy, happy, happy blog birthday!! I didn’t get to my email until very late today because this morning we led a tour at the park, and this afternoon I had to make tortillas and dinner. No PB&P recipe, unfortunately, but our time at the park was very healthy, climbing around on rocks. Plus we got caught in a heavy downpour and were watching waterfalls on the rocks in the middle of the Chihuahuan Desert. That was a really special experience. A perfect way to celebrate your blog birthday.

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?

It’s hard to imagine Fall in a couple of months when the temps have been in the 100’s, but it will be here soon. Time to start planning!!!

How I styled my bar cart is just an idea. Once I pull out my Fall/Halloween bins you will see these pieces in other parts of my home. The black wooden witches books will go in my kitchen to go with my black and white kitchen that I do every Halloween. The witches broom will also go on my shelf in the kitchen as my boys 🐶🐶 have been eyeing it up. I need to keep it away from them.

The beautiful reversible art work will go in my living room, as I like to do oranges and neutrals for fall. The 3 wooden pumpkins will go on my console table. I have it all planned out in my head. I’m kind of excited, but I will enjoy summer a little while longer.

I had a lot of Zinnias self seed which makes me so happy because the ones I bought this year are yellow, which is not what I wanted, but the ones that self seeded are pink and orange. Woohoo! I’ll have to share what the garden looks today later.

The Alyssum (white flowers on ground) all self seeded. It was looking bad earlier this spring so I pulled it all out. To my surprise it popped up all over my garden. The only problem is, it covered my stepping stones. So I can’t get in the garden without stepping on them.

If you swipe the photo you will see my last picture I took of my Hollyhock. It was so fun to see how big it would get. Unfortunately the flowers faded and it got rust. So I cut it down to the ground. I’ll pull it up this weekend.  I just hope it doesn’t self seed. It is too big for my garden and it’s pretty messy when the flowers and leaves drop.

We are supposed to be in the 100’s this week, so hoping everything survives. My potted plants do not look good. I will have make new pots. I don’t mind that. lol
