Strawberries and Chicken Pasta Salad with Poppy Seed Dressing #SundaySupper

September 1, 2013 By Jennifer @ PB and P Design 65 Comments

Hello, hello!!

Today for #SundaySupper we had to make a dish to share for Labor Day weekend!  For me this dish was made twice, since I wasn’t happy with the first dish, I needed to revamp it and make it better!!  And this dish is way better too!!  I am happy to share with you my Strawberries and Chicken Pasta Salad with Orange Poppy Dressing.

Strawberries and Chicken Pasta Salad

This salad is made with rotini pasta aka spirals, strawberries, grapes, chicken and it’s marinated in my orange poppy-seed dressing.  It’s light, refreshing and so full of flavor, not to mention it’s pretty healthy for you too!!!  For the pasta I used Dreamfields pasta, which is full of fiber and protein.  I went for this pasta because it is white.  If I use whole grain or a vegetable pasta my Husband won’t touch it.  The pasta turned out perfect.  No one would know it is healthy!!

Strawberries and Chicken Pasta Salad

To flavor up the pasta, I used fresh strawberries and grapes that I got from my CSA box this week.  In my original recipe I used blueberries to go with the strawberries, but I find grapes are nicer and more firm than blueberries.  For the chicken, I cheated and used the breast meat of a rotisserie chicken.  However if you prefer to make your own chicken, I recommend my marinated yogurt chicken, it makes the most moist chicken ever!!!  That’s no joke!!

Strawberries and Chicken Pasta Salad

For the dressing I made my orange poppy-seed dressing that I used on my fruit salad with grilled chicken recipe.  I love this dressing because it’s light, refreshing and doesn’t contain any oil, plus it adds a wonderful orange flavor to the pasta.  The poppy seeds also add a nice crunch!!  The longer you let the dressing marinate in the pasta the more robust flavor you will get.  The combination of the dressing with the chicken and fruit make a wonderful companionship!  I just love it!  I am so glad I remade my recipe because this one is so much better!!!

Chilled noodles, fresh strawberries, crunchy grapes and chicken tossed in a sweet orange dressing.
Serves: 7 cups
Ingredients
  • 3 Cups spiral pasta (Any small pasta will be great)
  • 8 oz chicken, cooked, cut into bite size pieces
  • 1 cup strawberries, cut in half
  • 1 cup grapes
  • Dressing:
  • ¼ cup orange juice (I used Tropic 50)
  • ¼ cup water
  • 2 tsp. distilled vinegar
  • ½ tsp. stevia or granulated sugar
  • 2 tsp. Poppy seeds
Instructions
  1. Cook pasta according to manufactures direction. When pasta is done, drain the water and add to a large bowl to cool.
  2. Once cooled, add chicken, strawberries, grapes and scallions. Lightly mix together; set aside.
  3. In a small bowl, add all of the dressing ingredients; whisk until combined. Pour dressing into pasta salad and mix until combined. Add salt and pepper to taste.
  4. Let the flavors marinate for one hour before serving. If you do not plan to serve this right away, add the fruit when ready to serve.
Notes
Note: I meant to add scallions to the pasta, so please feel free to add about a ¼ cup. I totally forgot!

Happy Thursday! A couple weeks ago I was inspired Happy Thursday! A couple weeks ago I was inspired to clean under my kitchen sink from my friend Claire @huntersridge_designs. Let me tell you I couldn’t be happier.
🧽
When I opened my cabinets, everything fell out. I had like 10 million Target bags jammed in the back, sponges everywhere and 1/2 empty bottles of cleaners.
🧽
I measured my space in the cabinet and was lucky enough that the items Claire purchased for her under the sink were the exact fit for my cabinet.
🧽
The drawers are a game changer. Highly, highly recommend the drawers. I filled them with sponges, and dishwasher tabs. Now they are not lost and easy to grab.
🧽
The storage bins were purchased on Amazon. Check out Claire’s Instagram page for links.

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.
🌿
One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.
🌿
For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.
🌿
Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.
🌿
Hope you enjoy this as much as I have making it.
Enjoy your day!
