Happy Friday! What a long week! I am soooooooo happy I have Monday off! Since it’s Friday and Fridays are normally pizza night, I thought I would share with you a pizza dessert that you can have after dinner or even for breakfast! Yup pizza for breakfast!!!
This little pizza is pretty healthy too! It’s sweet, creamy and the dough has a perfect softness to it and a tiny crunch too! The pizza is made with reduced fat ricotta cheese, fat free cream cheese and a pinch of stevia. The creamy ricotta mixture is a combination of cheesecake and a cannoli. Yummers! I don’t think you can go wrong with that combination.
I smeared my cheese mixture over the top of a whole wheat pita. The pita makes a perfect pizza crust. It’s light, fluffy and when you bake it, it gets slightly crunchy, yet it’s still soft. The brand I really like for pitas is Orowheat Whole Grain Pitas. They are only 100 calories for a half! Now of course I topped my pizza with blueberries! They are all nice and plump and bake up very nicely. Just be careful when you cut your pizza because I ran the pizza cutter over a blueberry and it squirted everywhere!! That’s the blueberry mess you see on the slices.
When using fat free cream cheese, I do want to warn you that it tends to crack a little. That’s one thing I don’t like about fat free cheeses. That is why I went with reduced fat ricotta cheese. To add more sweetness to the pizza I added just a light sprinkle of powdered sugar. The powdered sugar is perfect on this pizza and doesn’t add a lot of calories!
- 1 whole wheat pita (I used Orowheat)
- 2 tbsp. cream cheese, fat free
- 2 tbsp. ricotta cheese, reduced fat
- ½ tsp. stevia
- ⅓ cup blueberries
- 1 tsp. powdered sugar
- Preheat oven to 375 degrees
- Line a baking sheet with parchment paper; set aside.
- In a small bowl add cream cheese, ricotta cheese and stevia. Mix until smooth.
- Spread cheese mixture over pita and top with blueberries. Bake in oven for 10 minutes. Take the pita pizza out and let cool for a few minutes and sprinkle with powdered sugar.
- It goes great with ice cream or to have for breakfast!
I served this little pizza in a small bowl of vanilla ice cream, however if you eat this for breakfast, you could serve it in a bowl of vanilla yogurt! That would be fantastic! I just love simple little treats like this. Lots of flavor without a lot of work!
