Vanilla Bean Bread

Hi Everyone,

One of my all time favorite flavors is vanilla!  I swear I could drink it, if the extract actually tasted good!  I love the smell of vanilla too!  I used to always buy Victoria Secrets Vanilla Lace lotion, mmmm, that smelled good.  However, what I noticed is when I wore it, I was craving chocolate chip cookies all of the time.  Crazy isn’t it?  I guess it’s because I smelled vanilla all day.  So with my love of vanilla bean, today I made a Vanilla Bean Quick Bread.  This recipe by far exceeded my expectations.

Vanilla Bean Bread

This bread tastes like vanilla cake to me.  It’s chock full of vanilla flavor.  To vanilla it up, I used vanilla extract, vanilla bean and Wallaby Vanilla Kefir.  The flavor of vanilla shines through this bread!!!  If you’re a vanilla fan, this is the bread for you!

The bread turned out moist and is rich with vanilla flavor.  It’s super easy to make too!  I used one bowl to make it.  I really try to cut corners when it comes to excess dishes.  I made my wet mixture with egg whites, sugar, all my vanilla ingredients, gave it  a mix then topped with my flour, baking soda, baking powder and salt.  Give is stir and it all came together perfectly.  I baked my mini loaves for 25 minutes and it turned out perfect!!

If you do not have vanilla keifer, don’t worry, my guess is vanilla yogurt will work wonderful in its place.  Just replace the kefir with equal amounts of vanilla yogurt.  I would imagine the taste will be the same and you will still have a moist delicious bread!

A sweet, moist, rich quick bread with the flavor of vanilla bean. Tastes like vanilla cake.
Serves: 10 large slices
Ingredients
  • 1 cup Vanilla Kefir or vanilla yogurt
  • 2 tbsp Coconut Oil or Canola Oil
  • ½ cup sugar
  • 2 egg whites
  • 2 tsp vanilla extract
  • 1 vanilla bean, scraped
  • 11/2 cups whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
Instructions
  1. Preheat oven to 350°
  2. Grease 1 large loaf pan or 2 mini loaf pans with cooking spray; set a side.
  3. In a medium bowl, mix vanilla kefir, coconut oil, sugar, egg whites, vanilla extract and vanilla bean; mix until until blended.
  4. In the same bowl as yogurt mixture, add flour, baking powder, baking soda and salt. Slowly mix the batter together until incorporated,do not to over mix.
  5. Spoon batter into a greased 9- x 5-inch loaf pan or 2 mini loafs.
  6. Bake for 45 - 50 for 1 large loaf or 25 - 30 minutes for 2 mini loafs, or until a wooden pick inserted into center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan to wire rack.

Vanilla Bean Bread

I didn’t want to do it, due to calories, but I would imagine this bread would be friggen amazing with a vanilla frosting or vanilla flavored glaze over the top.  But by its self this bread is amazing!!!  This would be perfect to go with your morning coffee or as an evening dessert with a dollop of ice cream or yogurt!!

Time to start cooking some more.  I”m falling behind on my recipes and I need to get cracking at them, since this coming weekend I will be traveling again.  This time I am heading to Baton Rouge for a foodie filled weekend.  It will be a short trip, but a fun and long one.  I will fill you in on my trip when I get home!

    I hated vanilla fragrance as a kid, but I love it now! I read that you can lose weight with vanilla candles because the fragrance satisfies sweet cravings – the dury is out on that one!

    Ohhhh my I love how light this recipe is YAYYYYY! You freaking amaze me sometimes. It is hard to come up with low fat recipes sometimes it takes a lot of experimentation. So I am blown away. I noticed you cannot get that nice crunchy cookie by using greek yogurt or fruit puree. Have you discovered any ways to make a good low far cookie?

    I love vanilla too so this sounds perfect. I remember drinking vanilla extract when I was younger because I thought it would taste like vanilla. I was totally dismayed. I also did the same for food coloring because everything with it tastes sweet. Not only did it taste bad, but there was plenty of evidence of my sneaking in the form of blue lips and tongue!

      lol, I tried to drink vanilla extract when I was a kid too, it’s horrible!! But smells heavenly!! I didn’t realize it would make your tongue and lips blue. Too funny!

    I love vanilla. That’s why I have to try this recipe. However, I have to admit I have never baked with vanilla beans. I started researching them online. OMG they are expensive. Where do you buy yours? You say to scrape a vanilla bean. So that is a single bean from the pod? Typical how many are there in the pod? I am trying to determine how many I need to buy. I’m sure I will be making this over and over again.

      Hi Lisa,

      I bought my vanilla beans from Trader Joe’s. They can be expensive, but I found they are cheapest at Trader Joe’s. I know Cost Plus World Market has them inexpensive too. I just used a single bean for this recipe. Once I scrapped out my pod I put it in sugar so I had vanilla flavored sugar for baking. It’s a great use for the used pod.

        Thanks for the information. Trader Joe’s was the first place I checked and the clerk said they use to have it, but it wasn’t selling so they stopped carrying it.
        I ended up on EBAY (10 Extract Grade Madagascar Bourbon Vanilla Beans 6~7″) for $8.99 plus free shipping – compared to the grocery store: 2 pods at $13.95. These will last a while, but next time I will check with Cost Plus.
        The vanilla beans are to be delivered 3/17. So depending on when they arrive, I’ll be baking that day or the next. I am really excited about this bread

          My vanilla beans arrived early and I made the bread today. Oh the bread was melt in your mouth heaven. Everyone in my family loved it too. It took me a little while to get a handle on the vanilla bean. They are so skinny, but I managed to clean it out. I guess practice makes perfect, so I’ll just be making more bread!!!

            Yeah! I am so glad the bread turned out for you. Now don’t forget take the vanilla bean pod that you scraped and place it in sugar. You will have vanilla flavored sugar that smells wonderful! By the way, I know the beans are a pain in the butt to scrap! I think the same thing!

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.

One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.

For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.

Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.

I’m sharing heart shaped cinnamon rolls that I made this weekend. I got the idea to make them from my friend Heidi @eleanorrosehome. She made the most delicious looking cinnamon rolls, that I couldn’t resist to make. So perfect for Valentines Day and sooooo easy!

I took a can of Trader Joe’s cinnamon rolls and unraveled them, if that makes sense, and rolled them up like a palmier cookie. So fun! You could add food coloring to the frosting to make it pink and add sprinkles. Super cute! You can follow step by step recipe on Heidi’s Instagram page!
