It’s finally Friday, Woohoo!!! This has been an odd week for me and I am happy it is over, thank heavens! Did you know tomorrow is National Smore’s Day? Well it is, but it’s also a special day for me, which I’ll tell you about in tomorrow’s post. But let me keep up with the topic at hand, which is smore’s. I thought we should celebrate National Smore’s Day a day early, why not? Actually, it’s smore’s and I don’t think you need a special day to celebrate it anyway? How can you? It’s chocolate, marshmallows and graham crackers, ummm yum!!
Today I am sharing with you, a healthy as I can make it Smores Rice Krispie Treats. They are made with marshmallow, rice krispies, chocolate, graham crackers and marshmallow. All of the things to make a perfect little smores bar. I could have made smores with jet puff and put marshmallows on top with chunks of Hershey’s chocolate, but I thought I would go the healthier route, after all who needs that much sweet? Well I do, but I am trying hard to watch my figure right now, especially since I am going on vacation next week and I am seeing one of my best friends that I haven’t seen in 8 years. She lives in New York and me living in California, it’s kind of hard to get together. I kind of figured her and I will be spending lots of time eating out, having a few drinks and having lots of fun, so needless to say I am trying my hardest, ok semi-hardest, to eat well before next week.
To keep the calories low in this recipe, I mixed everything together. That way you get a taste of everything in every bite. The chocolate melted all over the cereal and I crushed up the graham crackers and mixed those in too. They turned out perfect! Actually the smore bars kind of taste like cocoa krispies with chunks of yummy graham crackers. I guess that would have been another alternative route to go if I didn’t want to add chocolate at all. Now do these rice krispie treats taste like smores? Honestly, yes and no. You can taste everything, chocolate, marshmallow and graham crackers, but it’s not an exact smore, probably because it doesn’t melt in your mouth, but more like a fun rice krispie treat with a twist. Plus I used the cinnamon graham crackers, so mine have a taste of cinnamon, which kind of takes over the treat a tad bit. I highly recommend using the honey graham crackers if you don’t like cinnamon. If you’re a big cinnamon fan, makes these with the cinnamon grahams! You’ll love them! My Husband took a bunch of them to work and he simply loved them. He told me as soon as he came home, so they must have made a memorable impression for him because he usually doesn’t say anything about the treats I make him. So I am happy to report that these little treats are a hit in my house!! Yah!!!
- 2 tbsp light maragrine
- 10.5 oz pkg. mini marshmallows
- 5 cups Rice Krispies Cereal
- ½ cup chocolate chips
- 4 sheets graham crackers, crushed (2 servings)
- Cooking spray
- Spray a 9×13-inch pan with cooking spray; set aside.
- Heat a large saucepan on low heat. Melt butter spread. Add marshmallows and melt on low flame. Stir until completely melted, then remove from heat. Add Rice Krispies, chocolate chips, and graham cracker; stir until completely combined (you will need muscles here). Press into the pan using wax paper or of you don't mind, spray your hands with cooking spray and press into pan.
- Let it cool completely about 30 minutes, cut and serve!
I thought I would share with you some smore’s recipes that I have made in the past. There are only a few recipes, so that means I need to come up with more smore creations. That sounds like a fun task to me! 🙂
