Greek Vegetarian Pita

Hi Everyone,

Well I am happy to report that the Geek Squad from Best Buy saved everything on my computer and is putting it on external hard drive for me, meaning that some of the recipes I created, that I didn’t post yet have been saved.  Thank goodness!  You have no idea how happy that makes me!!   With all of the mass confusion, the numerous trips to Best Buy and trying get my 10,000 steps a day in, life has been difficult or should I say tiring.  So today’s recipe is a simple one, but one that I have forgotten about, one that is easy to make and one that is so tasty.  It’s my Greek Vegetarian Pita .

I couldn’t even tell you the last time I made a pita sandwich, it has to have been years.  It’s crazy that it has been so long.  The little pita sandwich is so full of flavor and took me about 5 minutes to make.  Its full of fresh veggies like romaine lettuce, cucumbers, tomatoes, onion and sprouts.  Then for added flavor I added some banana peppers, my favorite, kalamata olives and topped with feta cheese and a drizzle of balsamic dressing.  Of course I couldn’t forget the glue that holds it together is the fat-free cream cheese that is hidden in the pita.  Yum!!!!!!

I remember the first time I ever had a pita sandwich, it was when I was in high school.  I remember in home economics class that my friend Lori made a cucumber and tomato pita filled with cream cheese.  I thought it was the best thing ever!!  My Mom never made sandwiches like that, this was a treat for me.  It was simple, yet so tasty.  That is why I put the cream cheese in this pita, it just added that little extra touch of creaminess that the pita needed.

When I was at the grocery store I was checking out all of the pitas they had and one brand stood out to me, which was Oroweat.  The pitas are super soft, contains 5 grams of fiber and 5 grams of protein, plus it has 8 grains in it which makes this a pretty healthy pita.  But honestly, how soft it is, is what really sold me.  I think I love these pitas.  I’ve bought the ones from Trader Joe’s and every time I try to open them up, they tear.  I love Trader Joe’s but in my opinion there pitas are poopy.

    A healthy, light pita sandwich filled with cream cheese, vegetables and topped with feta cheese and balsamic dressing.
    • ½ whole wheat pita
    • 1 tbsp. cream cheese, fat free
    • ¼ cup romaine lettuce, sliced thin
    • 2 tbsp. alfalfa sprouts
    • 4 slices of cucumber
    • 2 tsp. onion, diced small
    • ¼ cup tomatoes, diced
    • 1 tbsp. banana peppers, diced
    • 2 kalamata olives, sliced
    • 1 tsp. feta cheese, fat free
    • ½ tbsp balsamic dressing (your favorite)
    1. Spread cream cheese inside of pita. Fill the pita with lettuce, sprouts, cucumbers, onions, tomatoes, banana peppers, olives and top with cheese and a drizzle of balsamic dressing.

    This pita would make for a great lunch, or dinner.  I served it with a side of  Baked Salt and Vinegar Potato Chips and an apple.  This was the perfect dinner for me, especially since I kind of ate bad earlier in the day.  Need to be better tomorrow.  There is always tomorrow and for me, tomorrow means another trip to Best Buy to pick up my external hard drive.  Crossing fingers my pictures are there!  🙂
