Howdy and Happy Monday!!!
Today I have a filling, healthy, summertime breakfast recipe for you! It’s perfect for eating outside while you bask in the morning sun. Ok, I don’t do that, but I should, it’s more like grabbing it as I head out to work.
This is my Strawberry Oatmeal Smoothie Bowl. It’s super thick, rich, creamy and loaded with nutrition and so full of strawberry flavor!! It makes a fantastic breakfast and it fills you for hours! I had this for breakfast on Saturday morning and I was so full that I didn’t even snack all morning, which is rare for me!! Plus as a bonus it’s like eating dessert for breakfast, but healthy! I am all for that!!! Who doesn’t like dessert for breakfast?
The smoothie is made with Wallaby Organic Strawberry Kefir, chia seeds, gluten free rolled oats, milk and frozen strawberries. I made overnight oatmeal with just the rolled oats, chia seeds and Strawberry Kefir. Soaking the oats overnight, makes them expand, plus it makes them nice and creamy. Matter in fact it was so thick that I decided to lighten it up a pinch by adding frozen strawberries and milk to it. It was perfect! You have to eat it with a spoon, it’s a tad too thick for slurping through a straw. Actually it’s almost like having softserve ice cream!! However, if you don’t have time to sit down and eat your breakfast with a spoon, add more milk and take it on the go!!
Have you ever had Kefir? Actually this was my first time. I was a little afraid to be honest, don’t as me why? But when I took a swig of it to test the flavor out, I was amazed! It tastes just like a yogurt smoothie. It’s creamy, light and the flavor of the strawberry is perfectly delicious!! I get so excited trying new products and actually loving them. However, how can you go wrong? It’s yogurt and you know how much I love my yogurt!!! Yummers! Yummers is my new word, so you’ll probably see my post that a lot. When I picked up my Wallaby Organic Kefir, I noticed they had 4 other flavors, vanilla, blueberry, plain and of course the strawberry. I picked them all up to test them out. Since I am the only one who likes yogurt in my house (crazy, I know), I’ll be drinking them all, so I’m finishing the strawberry before I try the others. I am sure I will have other recipes to share with you using my new-found Wallaby Kefir!
- ⅓ cup rolled oats
- 1 tsp. chia seeds
- ½ cup Wallaby Strawberry Keifer
- ½ cup non-fat milk or milk of your choice
- 1 cup strawberries, frozen
- The night before, in a bowl add rolled oats, chia seeds and Strawberry Keifer. Mix well, cover and refrigerate over night.
- In the morning, add the rolled oats mixture in a blender and add milk and frozen strawberries and process until smooth.
- Pour into a bowl and enjoy! Top with peanut butter, nuts or whatever you desire.
I’m really glad I tried the Kefir. Not only is it delicious, but it’s organic, made local to me and it contains 12 different live and active cultures, plus it’s gluten-free. I think I found a new product that I won’t be able to live with out. Just pouring some into a glass makes for a great breakfast or a nice afternoon snack. I bought Wallaby Organic Kefir at Whole Foods, and hoping it will make its way to my local grocery store, since Whole Foods is almost 50 miles from me. I go there once a month with a huge list of items I must have. I love Whole Foods and I have been e-mailing them to open a location near me. So far it hasn’t worked! 🙁

Sorry to say nothing like this at my home town grocery stores so guess this one is out for me to try. I’m hoping more of your recipes will be made with things that are sold in all grocery stores and not just at selected places.
Wwo, your grocery store doesn’t sell Kefir? We even have it at Target and Walmart here. Sorry Mkkiki.

Does the Kefir have sugar in it? I’ve also never had Kefir and I’ve been afraid to try. I think the word Kefir just sounds gross. But, I’m willing to try it. It just can’t have sugar in it. 🙂
The flavored ones have organic cane sugar in it, but the plain one does not. I was afraid to try it too, trust me, but I did and I really like it. Honestly it tastes like a strawberry smoothie. I haven’t tried the other flavors yet.
