I always get asked, what do you eat? I try to post pictures on Instragram of the meals I eat, if they don’t make it to my blog. I don’t make a new meal every night, but I do most nights. On nights where I am lazy and declare it “fend for yourself night”, that’s when I make one of my all time favorite meals. It’s quick, easy and it really is one of my favorites. Matter in fact, I ate this once, three nights in a row. What can I say? I love it! My Husband thinks I’m crazy having the same meal, but when you can do it up and it has so much flavor, how can I not keep eating it? I am sure you know what I am talking about. Can you guess what is hidden in this big mess?
If you guessed, it’s a Spicy Black Bean Burger from Morning Star Farms. I love the Morning Star Spicy Black Bean Burgers! They taste so good! I’m not even vegan and I LOVE them, no really I do! I can’t even keep a package of them in my house. They are full of black beans, corn, green chili’s, rice and more. They are super quick to make too! You can microwave them, grill them cook them in a skillet or do what I do and bake them. Yummy!! For you, I made them simple, by topping them with avocado and my homemade Fire Grilled Salsa.
But the first picture is really how I eat them! I top them with jalapenos, hot sauce, a half portion of tortilla chips and some con queso cheese. Oh boy, I could so live on that meal!! It’s pretty apparent I have a major love affair for Mexican food! Yes, my plates a mess, and I wouldn’t have it any other way!!! Plus not to mention it’s all healthy and low calorie. The burger is only 120 calories and the toppings, make it under 200 calories, You can’t beat that for a lunch or dinner, plus it will fill you for hours!!
I feel kind of bad! Back in May, Morning Star offered me two tickets to the Bottle Rock Festival in Napa Valley, with no strings attached! I had all intentions of going, but for some unseen circumstances I couldn’t go. I feel bad! I want to thank Morning Star Farms for there kindness and understanding! Not only are there products wonderful like their Mediterranean Chickapea Burger, but they are such a nice company to work with. Thank you Morning Star for all you do!! I love the way you work and I love your burgers and veggies patties.
- 1 Spicy Black Bean Burger (Morning Star Farms)
- 2 tbsp. Avocado, smashed
- 2 tbsp. Salsa (I used my Fire Grilled Salsa)
- Preheat oven to 425 Degrees.
- Line a baking sheet with parchment paper
- Place black bean burger on parchment paper and back for 10 minutes. Flip the patty and bake for another 7 minutes.
- Top the patty with avocado and salsa.
At the festival Morning Star was handing out sampling’s of grilled burgers for you to try. I wanted my Husband to try one, since he’s afraid too,but he got away this time, but their will most definitely be a next time. ha ha Now, I couldn’t make it to the festival, but maybe you will able to? If you like your Vegetarian Burgers and Black Bean Burgers I recommend giving Morning Star a try. I was asked by them a few months ago to sample one of their patties and I did, with reservations and now that I tried them, now I love them! You will always find a few packages in my freezer! Makes for a healthy, quick night dinner, plus I also like to crumble it up and make a taco salad too! Oh, here’s a picture of the big Morning Star Burger on Instagram that I made a couple of months ago! Yum!

Yum! Just a bit of info on the front of the package of Black Bean Patties there is a symbol “OK-D” you need to check this out for vegans. This means either there is dairy in it or the machinery has not been cleaned to a certain temperature from when they made a product with dairy ingredients! Going to check out your Peanut Butter and Jelly Tart!

If you’re a Costco or Sam’s customer. the both carry an even better version of these – bigger and thicker, and about the same price, esp @ Costco. At Costco they sell a 12-pack for under $14, and at Sam’s it’s a 9-pack for about the same price. Call before you go, because apparently not every store carries these. My local Costco stopped carrying them for a while (which is why I know about the Sam’s price). The increased thickness means that they stay moister, which makes them even yummier.

Never had these, but you can make your own bean burgers 🙂 Check Dr. Oz’s website for the recipe……sounds good, I haven’t tried them yet tho…..but at least you know just what is in them !!!, read some reviews and a lot of people did say they were good…..
