Open Face BTC Sandwich #SundaySupper

Hello, hello and Happy Sunday to you Mates!

Today is a fun edition of #SundaySupper!  Today’s mission is to make breakfast for dinner.  Oh, I love breakfast and I can have it anytime of the day, but unfortunately my family doesn’t feel the same way!  And to boot, they rarely ever eat breakfast!  Me, I LOVE breakfast!  It’s so fun and so versatile.  You can go from sweet treats like Strawberry Shortcake Pancakes to savory egg dishes and hash browns.  Mmmmm, yum!!!   Want to make me happy?  Make me breakfast anytime!  So what breakfast for dinner dish do I have?  I debated, on what to make, but for some odd reason, I was wanting an egg sandwich.  That is something I rarely ever have, so today I made an Open Face BTC Sandwich for you.

So what does BTC stand for?  Bacon, tomato and cheese.  I have had a major salt craving and I needed some bacon in my life to settle my cravings.  I use Oscar Meyers Center Cut Bacon and it’s only 70 calories for three slices.  It’s crispy, salty and cooks pretty quickly!  Yes, this is the bacon for me!  I don’t feel guilty having it either which is even better!  I normally never eat bacon, because most slices are 90 calories a slice and it’s hard to eat just one slice, so I do without.  My Husband on the other hand, normally eats a pound of it in a sitting if we do have breakfast.  That’s a little too much for me, blah!!

The sandwich is pretty easy to make too!  I cook my bacon ahead of time in batches so I can just grab it from the fridge when I need it.  I used egg whites and cooked them omelet style, but anyway you like your eggs will work well on it.  For some reason I’m not into whole eggs anymore.  I have gone so long using egg whites that I don’t care for regular eggs, except deviled eggs.  Weird how that happens?

I topped my eggs with the most delicious tomatoes that I got from the Farmers Market.  When I went to the Farmers Market I was smelling the tomatoes and my Husband is like what are you doing?  I like the smell of tomatoes and I buy the ones that have a nice strong smell, that way I know they are freshly picked, well at least I think they are.  The I added a fresh basil leaf and mozzarella cheese.  It’s my version of an egg caprese sandwich.  I baked my sandwich in the broiler, just until the cheese melted all over.  Oh man, is this sandwich good!!!  Good I tell ya!!

For the bread I used Udi’s Gluten Free Sandwich Bread, which was the first time I ever had it.  It’s really good, I couldn’t tell it was gluten-free.   The bread was also a perfect size for me too!  You could totally put this sandwich together and make one fat sandwich, but I like it opened face, it’s easier to grab and eat.  You don’t even need a fork and knife.  I had this sandwich a couple of times this week for dinner.  It’s savory from the basil, fresh tasting from the tomatoes and the saltiness from the bacon was perfect and for some reason combining bacon and eggs together makes a magical combination.

A simple, gluten free sandwich made with crispy bacon, egg whites, fresh tomatoes and melted mozzarella cheese.
Serves: 1 Sandiwch
Ingredients
  • 2 slices white sandwich bread (I used Udi's Gluten Free, 70 calorie per slice)
  • 2 slices bacon (I used Oscar Meyer Center Cut)
  • 2 egg whites
  • 1 tsp. milk, non-fat
  • 2 tomato slices
  • 1 large leaf or two small leaves of fresh basil, divided
  • ½ oz mozzarella cheese, shredded
  • pepper to taste
Instructions
  1. Cook bacon according to manufactures directions; set aside.
  2. In a bowl, add egg whites and milk; mix until combined. In a skillet add cooking spray and egg white mixture. Let the eggs cook for a few minutes, with a spatula life the side of the eggs so the eggs can run off the egg into the pan. Once lightly brown on the bottom, you can flip the egg or gently fold over the egg and cook until the egg is no longer runny.
  3. On two pieces of bread; add one slice of bacon onto each slice of bread. Divide the egg in half, and top the egg onto each slice of bacon. Add a sprinkle of pepper onto egg. Top eggs with the basil, top the basil with a slice of tomato and evenly divide the cheese onto each sandwich slice.
  4. Add the two slices to a baking sheet and place in a broiler and bake until cheese is melted. About 1 to 2 minutes. Watch to make sure you don't burn it!
  5. Note: If you have soft bread, I recommend toasting it first.

    I grew up with family neighbores who would only make open faced sandwiches. no idea why but if my mum wouldn’t have been french and made closed sandwiches, I would have lived with the believe that sandwiches are suppose to be open. ^.^

    I used to be a breakfast hater too! In fact, when we go to Dennys at any hour I tend to get a veggie burger out of habit even though I do like other breakfast items now. This is a great inbetween dish, my husband would drool for this!

Happy Wednesday. I am sharing with you my little o Happy Wednesday. I am sharing with you my little outdoor space with our lounge chairs. Truthfully I wanted to get rid of the lounge chairs as they take up so much room and we never lay on the chaises. However, over the winter my husband made new cushions for the them and I didn’t have the heart to get rid of them. He made the cushions for our dog Samantha who passed away this winter. She loved laying on the lounge chairs. The boys don’t like to sit on them, unless you are on them too.

I do like the color combination of this space. It’s relaxing and I just love the Gerbera flowers. I wish I could keep the pillows on them, but my little Sully 🐶loves to tear apart pillows. So the pillows are living in my living room. I’ll bring them back outside if we have guests.

I’d like to say with the warmer weather it’s time for Summer decor, but it has been unseasonably cool here. We are still in the 70’s and windy. Great for the plants, but not me. I need some 80’s. This is just wacky weather!

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers!

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Wednesday! I have spent so much time working Happy Wednesday! I have spent so much time working outside that I have not worked on decorating my dining room for Mother’s Day or Spring. It’s a bare slate as of right now. So I thought I would share with you last years tablescape that I did for Mother’s Day.

This Mother’s Day,(Saturday) little Jenny is taking me to the @gratoncasino to get a pedicure and possibly lounge at the pool, if it is warm enough outside. Then we will go for a nice lunch. I can’t wait. Sunday, I’ll spend Mother’s Day with the boys. 🐶🐶

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

In my 20’s, I used to go to Macy’s with my mom and in the bedding department they had a section of Claire Burke. I always bought there Original Scent potpourri. It smells like spring flowers with roses and lavender and it’s also beautiful to look at.

If you are looking for a Mother’s Day gift, I highly recommend. I love the Original scent, if you like a floral scent. If you are more for fresh clean scent, the Sea Salt and Grapefruit is amazing. Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!
