Summer Time Vegetable Pizza Pie

July 19, 2013 By Jennifer @ PB and P Design 7 Comments

Happy Friday!!

Today I have for you a wonderful summertime recipe that my Husband and I simply love.  This recipe is not perfect, and I’ll explain why, but ohhh, the taste is friggen amazing!!  The flavors in this dish just blow my mind and makes me realize how much I love summer and how much I’ll miss it when it’s gone.

Summer Time Vegetable Pizza Pie

This is my Summer Time Vegetable Pizza Pie!  I think the title says it all.  It’s chock full of vegetables that I got from the Farmers Market and my CSA box.  It’s filled with bell peppers, zucchini, onions, fresh corn off the cob and ohhh those summer time tomatoes, plus fresh basil.  I love all of the flavors in this dish and combined together is simply magical.

Summer Time Vegetable Pizza Pie

I came up with this recipe, by using my Tomato Pizza Pie recipe that I made last summer.  My Husband and I loved it soooooo much, that we ate the whole pie.  Yup, we were little piggies back then.  Believe me we would have eaten all of this Vegetable Pie, but it’s pretty filling!   This recipe is like a deep dish pizza without a bazillion calories!  For the crust of the pie, I went simple and used a Pillsbury Pie Crust.  I love their pie crust.  I remember as a kid my Mom making pies and everyone thought her crust was homemade, but nope it was Pillsbury!

Summer Time Vegetable Pizza Pie

For the filling I used Roasted Red Pepper Pasta Sauce that I got from Whole Foods.  I love that sauce, and now I’m out!  🙁  I guess that means a trip to Whole Foods!    I topped the pizza with some lite shredded mozzarella cheese.

Summer Time Vegetable Pizza Pie

I baked the pizza for 20 minutes and it was done!  This pizza is thick and very filling!!  However, now the flaws to the recipe.  The pizza tends to be a tad watery because of the juices from the vegetables.  However, the juices have wonderful, fresh flavor.  If you don’t mind it a little liquidy, then make it and enjoy it!  My Husband and I ate 3/4’s of the pie.  I am happy my Husband who is not a vegetable fan loved it.  He ate half the pizza!   When we were done eating and I went to put the leftovers in the fridge, the pizza held its shape.  It has to really cool, quite a bit to keep its shape.  Don’t let this picture fool you, but the pie is thick, but some of the filling fell out and I didn’t want to make a mess to the plate.

Summer Time Vegetable Pizza Pie

I really love these kind of dishes!  It was simple to put together, just a little cutting and it baked up in no time.  By the time I washed the dishes and wrote down the recipe, it was done.  The key is, if you can, let it cool so it thickens up.  If you’re not so picky, like us, then eat it while it’s piping hot.

So be sure to head out to your local Farmers Market!   I really believe in supporting my local farms!  I love knowing my produce comes from my neighbors rather than traveling across country!

I was asked on Twitter where I get my CSA box so I thought I would share the information with you.  I get my box from  Farm Fresh to You.  It’s all organic produce delivered to your door.    You can pick what produce you want, you can cancel anytime.  I have been very happy with everything I have received from them.  I just found out they now have organic eggs.  I’m calling them tomorrow to add that to my by weekly deliveries!  If you get the service, tell them I referred you and they will give you a $10.00 discount.  🙂

Well that’s it for me.  Time to shuffle off!  Have a beautiful day and a fabulous weekend!

Toodles,

Jennifer

I don’t think any recipe is perfect- isn’t there always a bit of room for improvement, especially in a home kitchen? 🙂 That said, this pizza looks SO GOOD and I can’t wait to use some of our favorite summer vegetables to make it!

Thank you Christy! I was thinking, I bet if I started the tomatoes on the bottom, it would hold together more nicely! However, the next day, this dish tastes even better!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Happy spooky Thursday! I added a few touches of Ha Happy spooky Thursday! I added a few touches of Halloween in my kitchen. I don’t do much Halloween decorations, but I just love to add it to the kitchen. Every time I go to the kitchen it makes me smile.
🦇
To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.
🩵
I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20
🐾
Have a great day and happy napping!

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.

Have the most beautiful day!

They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.

I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.

I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
