Breaking News, Breaking News! I am sorry to interrupt today’s regular scheduled post for a special announcement….
I am soooooooooooo excited today! I had a recipe already scheduled today, but instead I wanted to share some news with you. I am in a Smart Balance cooking contest with 20 other bloggers. Me, in a cooking contest! This is my first cooking contest that I have ever been a part of and it is so exciting! I was asked by Smart Balance if I would be interested in participating and of course I said yes! If I win, I get a one year contract with Smart Balance. Yah! I would have to come up with a new recipe every month using Smart Balance products. I have to say it was stressful, coming up with a recipe for this contest, but I did come up with one, a Peanut Butter and Jelly Tart.
As part of the contest we had to come up with an original, healthy recipe that would represent my cooking style. Well the first thing that came to mind was of course Peanut Butter! I thought that would be perfect in representing my blog. I think you can agree, I kind of have a thing for peanut butter. he he Remember on Sunday when I said my Peach Tart was the 2nd tart I ever made? Well the first one was my Peanut Butter and Jelly Tart.
The tart is a perfect replica of a Peanut Butter and Jelly sandwich. The tart is light, flaky and buttery. I topped the tart with Smart Balance Peanut Butter and mixed in some local honey. The peanut butter mixture is sweet, creamy and oh so perfect, it’s spoon licking good! The honey added a nice natural sweetness to the peanut butter. For the topping I made a homemade strawberry jam, using fresh strawberries, sautéed with stevia and lemon. It turned out perfect! The strawberries were thick and sweet and a perfect match to the peanut butter. This tart really does taste like a peanut butter and jelly sandwich, just in a nice dessert form. If you wanted to be bad, a little dollop of vanilla ice cream or whip cream would be a nice added touch.
I haven’t been to the page yet, but I believe that the recipe is posted on the Smart Balance Facebook page. If for some reason it is not, I’ll be sure to ask if I can share it with you. I have to tell you, not only coming up with a recipe was hard, but picking a picture was even harder. I had Little Jenny and my Husband pick the picture and they both agreed on the same one. I hope it looks ok, it made me nervous picking it. We’ll see if my family has chosen the right picture for the contest. Eck….
