Hi Everyone Happy Monday Smoothie Day!
I have to tell you I was so excited to make today’s smoothie! It was just one of those fun drinks to make! Just take a look at how petty and tropical it is!
This is my Healthy Hawaiian version of the famous Lava Flow drink that you would get while visiting the islands. Grant it I never been to Hawaii, but I could imagine drinking these by the beach! The only difference in my drink is I didn’t include coconut rum or light rum to the drink. However, if your feeling a bit adventurous, by all means add it to this drink. I am sure it won’t disappoint you.
Don’t you love the red at the bottom of the glass? It’s fresh strawberries, blended with water and stevia. Once you pour your tasty pineapple and banana mixture over the top, the strawberry juice flows up the side. I loved watching it! I know I am kind of weird, but it’s so cool to me!!
The white mixture is a wonderful combination of frozen banana, frozen pineapple, coconut milk, coconut extract and stevia. It’s so sweet and delicious on it’s own, but adding the strawberries gives it not only beauty but wonderful flavor. I also want to say that this drink is also vegan and gluten-free, so it’s a drink for everyone! This recipe probably makes two servings, however I made it one with a little bit leftover. I didn’t share the drink and I enjoyed every last drop of it!
- 5 medium strawberries, fresh, stems removed
- ¼ tsp. stevia
- ½ cup water
- 1 banana, frozen
- ½ cup pineapple, frozen
- 1½ cups unsweetened coconut milk (from a carton)
- ¼ tsp. coconut extract
- ⅛ tsp. rum extract
- ½ tsp stevia to taste
- In a blender add strawberries, ¼ tsp. stevia and water. Blend until liquid form. Pour into the bottom of a glass.
- Rinse the blender and add remaining ingredients. Process until smooth. Pour banana mixture into glass with strawberries. Watch the red from the strawberries flow up the side of the glass.
Well that’s today’s recipe! With all this hot weather I can have my Lava Flow Smoothie and dream of soaking up the sun in Hawaii as the ocean breeze flows through my hair. Sigh…
Have a great Monday!
Toodles,
This smoothie is so pretty with the red and white “lava”!! So festive.

Perfect drink to have by the pool!! The colors are so pretty!
I know, all we need is to have a cabana boy come and bring them to us! 🙂
I love Lavas… I had them in Hawaii, but not frozen. Think I’ll have to add some real rum sometimes, though… lol YUMMY!! You have some of the best recipes!!
Ahhhhh, thank you! I would love to have one in Hawaii. One day I’ll get there!
One think I love about you Jennifer – you answer your comments!! (aside from all your great recipes).
I appreciate (love) all of the comments that everyone leaves, and I think it’s pretty important to try to answer them all and to let you know I received it. Sometimes I can’t get to them all, but I do try. Thank you for kind words and for reading PBandP! 🙂

It sounds like a delicious combination. I think half the excitement of this drink comes from watching the strawberry mixture flow up, it looks so neat in your pictures!
