Hi Everyone!
Happy Saturday! I know I have talked a lot about the weather lately, but hot dam it’s in the 100’s and I’m melting!! Now only if the heat would melt off some of this fat! lol So lately I have been on the lazy train, no motivation to cook, workout or even move! I hate feeling this way! But I needed to move my fanny and make something for my blog and I needed to use up some produce that I have collected all week. You should see my fridge and counter top. It’s all fruits and vegetables! But I wasn’t sure what to make, sometimes it gets over whelming trying to come up with recipes. But I knew I was craving something cold! So on Thursday night, I decided to whip together a simple, healthy, COLD, chocolaty treat that I knew my whole family would love, including the picky Husband! So came Chocolate Banana Fudgsicles!
When I was making these, my Husband walked in the kitchen and his eyes popped, fudgsicles? Can you eat fudgsicles? Or are they all for me? No dear, I can eat fudgsicles, now get out of my kitchen. Every time I make something that my Husband wants or likes, he says “can you eat that?” “Are you sure?” Drives me bonkers!! But most of the time, I get have some steak, have some more potatoes, have some more bread! Ugh! That drives me even more nuts, because you know I want it, but I have to control myself somewhere! Well at least with this frozen treat I don’t have to worry about having seconds, since it’s all natural, no sugar added, vegan and even gluten-free! The only issue with this recipe is that it only makes four! I would have made more, but I was out of bananas!
You’ll have to forgive the pictures, I only took a few because these babies do melt quickly!! But all that means is it’s more creamy and soft! Trust me, if you’re a banana and chocolate fan you will love these fudgsicles! You could even zip it up and add peanut butter to it. I debated about that, but my Husband not being a peanut butter fan, so I opted out on that idea! Stupid me!!!
- 3 medium to large bananas, ripe
- ¼ cup unsweetened cocoa powder
- 1½ cup unsweetened coconut milk (from carton) or your favorite kind of milk
- ¼ tsp. vanilla extract
- 1 tsp stevia (to taste)(honey will work too)
- In a blender add all of your ingredients and process until smooth. Taste test to see if you want to add more sweetener. Pour into Popsicle molds and freeze for at least 6 hours.
- If using 8 oz plastic or paper cups, place a pieces of aluminium foil over the cup, cut a slit in the center and place Popsicle stick in slit. Place in freezer for 6 hours. When ready t serve, take foil off.

Sunday: Lightened Up Fully Loaded Baked Potato Salad – A nice change up from traditional potato salad that would go super fab at a BBQ. It’s easy to make and it’s great for anyone who loves baked potatoes! My Husband loved the addition of the bacon and I love how healthier it is!
Monday: Skinny Cherry Milkshake – This is a nice refreshing milkshake that isn’t overly too sweet. My Husband just loved it! Using Trader Joe’s Cherry Juice made it so simple to make. You got to love my TJ’s!!
Tuesday: Chocolate Strawberry Softserve – Wow, I didn’t realize how many frozen treats I made this week! I told you I was behind on my recipes and all I wanted was ice cream. This softserve is fabulous! It’s easy to make, you get a lot of it, for the calories and it’s the chocolate and strawberry combination is simply delicious!
Cucumber and Tomato Summertime Salad – LOVE this salad! it’s so refreshing, easy to make and is even good the next day! I really love these kind of dishes! Nothing like fresh summer produce that is so full of flavor! This makes for a perfect side dish or even as a light meal!
Thursday: Yogurt Marinated Grilled Chicken – I am not kidding you when I say that yogurt makes for the best marinade for chicken! Just marinate it and add the seasonings, sauces that you love! The yogurt makes the chicken all moist and tender! Even my Husband has raved about this chicken and he’s not a chicken fan! He’s a beef man all the way!
Friday: Watermelon Salsa – I made this salsa to go with my chicken from Thursday night. The salsa is sweet, spicy and savory! It’s a great combination. My Husband who likes simple dishes, thought the combination was weird yet he thought it tasted really great together. He had a few helpings of salsa with his meal. With the left overs I put it on a bed of lettuce and had that for lunch! Yummy!!
Well my Friends, its early morning as I am writing this and all of this food talk has made me hungry! I need to make some breakfast!

Hello. I just subscribed a few minutes ago and saw your recipes. In your chocolate banana fudgsicles ,where is the chocolate?. Am I missing something?
There is no chocolate mentioned in the ingredients or instructions! How much chocolate and what to do with it ?
It is a simple and yummy recipe but again am I missing something?
My daughter loves banana and chocolate and we would love to prepare it for next weekend.
