It’s still hot here and I mean hot. Cooking has been the pits! It’s been steamed veggies in the microwave, cold salads and quick grilling, because you know there is no way I want to stand near a hot grill when it’s 104 degrees out. It’s been crazy and I know a lot of you are going through the same thing. Well today I have an all natural, sweet, chocolaty treat for you!!! I needed me something cold and refreshing to cool me down and you probably do to!
This is my Chocolate Strawberry Soft Serve Ice Cream. This baby is gooooooooooood!! It is naturally sweet, cold, easy to make and completely guilt-free, not to mention it makes a lot!!! I kind of have tiny tendency to over buy strawberries, so just before they go bad or start to over ripe I clean them up, core them and slice them and pop them in my freezer. When I was reaching for the vanilla ice cream, I saw these little red gems in the freezer and thought, I haven’t had strawberry soft serve in a long time. But how can I zip it up, then I thought, ohhh, chocolate and strawberries. Chocolate and strawberries is such a wonderful, yummy combo and in ice cream, mmm, mmm even better!! I bought some unsweetened cocoa powder from Whole Foods, which I love, but the only thing is that the chocolate has a red tone to it. Not sure why, but it tastes fabulous!! Check out the bulk department next time your at Whole Foods for the cocoa powder, it’s pretty cheap too!! That’s why the ice cream has a funny red tone to it, it’s not the strawberries, but the cocoa powder.
When I was in the ice cream isle on Sunday and I bought the vanilla ice cream for the milkshake I made yesterday and I spotted sugar cones. I LOVE sugar cones! I never buy them because I was afraid the calories would be through the roof, but I was surprised when I found Joy Sugar Cones for 50 calories a cone! Yah!!! So my Husband and I have been having ice cream cones for dessert all week. This is really a treat for us because this is something we never have. Oh and for you Guys who are Gluten-Free, they also make Gluten Free cones! So I started to make a Chocolate Strawberry Ice Cream Cone, but realized that the soft serve will melt before I can take all of the pictures and besides I made a lot of ice cream and the cone isn’t big enough to hold it all. But here is a quick pic of it in a cone. I did eat the cone separately and I loved every bite of it! For a fun treat, I do recommend getting some sugar cones, they are only 3 grams of sugar and 12 carbs! Not bad at all!!
- 1¾ cup strawberries, frozen
- ¼ cup milk or coconut milk
- ½ tbsp. unsweetened cocoa powder
- ¼ tsp. stevia (to taste)
- ¼ tsp. vanilla extract
- In a food processor, add all of the ingredients and process until smooth. You may have to scrape down the sides of the food processor a few times. If the consistency is to thick or it's having a hard time processing, add a pinch more milk.
- Serve in a bowl or cone!
I love such simple, all natural recipes like this!! It’s wonderful that Mother Nature provides us with such yummy goodies like strawberries and chocolate that won’t hurt your waistline! Even though the sugar cones are not natural, I am happy for them,because having them made me feel like a kid again!
I promise tomorrow won’t be a frozen treat, but a recipe I love!!
