One thing you may or may not know about me is I love to make dips. I guess you can call me a dipper. Condiments, dips and spreads are my favorite things. I’m always looking for new ways to spruce up an old recipe, change up a favorite dish or find something new to dip my fruit, pretzels and the occasional cookie in. I would share more dip recipes with you, but I figured I should give you a variety of recipes, since not everyone is as crazy for dips as me. So today, I created a new dip with the left over Ricotta Cheese I had from my Skillet Meat Lasagna.
This is my Chocolate Chip Cannoli Dip! It’s sweet, creamy, chock full of chocolate chips and very closly tastes like chocolate chip cookie dough. Yes please! I am so loving this dip! I kept sneaking little spoonfuls as I was making it, then I grab a strawberry or two to dunk into my dip. Oh my gosh it’s so good!!
But what I like about this dip besides the fabulous taste is that it’s pretty darn healthy, practically no fat and the only sugar in the dish is natural sugar from maple syrup and the mini chocolate chips. You can feel good about giving it to your kids or keeping it for yourself. One thing about blogging is trying new things and ricotta cheese is my new thing that I have tried this year. Yes I have had cheese ravioli’s and lasagna, but honestly I never gave ricotta cheese a second thought until I made my Pistachio and Cherry Cannoli Cups. After I had that dessert, I was sold on ricotta cheese. Lucky for me I didn’t use it all in my lasagna, that I had left overs to make today’s recipe. Yah!
The dip is a snap to make! It’s made with of course ricotta cheese, greek yogurt, maple syrup, stevia, a pinch of salt and vanilla extract. But this wouldn’t be chocolate chip cannoli dip with out the chocolate chips and I used two tablespoons of mini chips. You have to love the mini chips, they are just so darn cute!! I kind of have a thing for small things, like little spoons, mini cupcakes and tiny little finger foods.
- 1 cup ricotta cheese, fat free
- 2 tbsp greek yogurt, plain, non-fat
- 1½ tsp vanilla extract
- ¼ tsp salt
- 1 tsp maple syrup
- ¾ tsp stevia (to taste)
- 2 tbsp mini chocolate chips
- In a bowl, mix all of the ingredients together, except for the chocolate chips; mix well.
- Stir in chocolate chips
- Serve with fruit, animal crackers or graham crackers
One thing I have to tell you, if you get animal crackers, get a good name brand of crackers. I bought the store brand and oh my gosh my cookies were horrible. Ok, not horrible, but not the same. When I bit into one, they were soft, almost like they were stale. So sad! So I didn’t eat my animal crackers with my dip, but at least I have a ton of strawberries!!! I swear if I keep eating strawberries like I do, I’m going to turn into one!
