Happy Saturday to you! Do you have plans for this weekend? Today Little Jenny and I are heading to Napa Valley. Not sure what we are going to do there, but I can tell you it will involve some fun food and wine shopping. Every time I go to Napa, I forget how beautiful it is there. I am looking so forward to going. But before I go, I wanted to share with you my newest strawberry creation, which is the Strawberry Cheesecake Milkshake.
Since the weather is starting to warm-up, yet again, I didn’t want to cook or bake, but I wanted something refreshing and sweet. I had some leftover Jello Cheesecake mix from when I made the Peanut Butter Cheesecake Dip, and I have been staring at strawberries all week, I thought, huh, why not make a pretty healthy strawberry cheesecake milkshake? Well let me tell you this is dead on to strawberry cheesecake. When I took a spoonful when I was testing it, I couldn’t believe the flavor. It’s like cheesecake you can drink! I gave the milkshake to my Husband and he saw how thick it was and was hesitant to drink it because I am betting he thought yogurt was in it, but he took a sip and said it’s good! Then he laid on the couch watching his car shows as he drank away and then thanked me again, and said he really liked it! Yah! If you’re a cheesecake fan, then this is the drink for you!
The drink is so simple to make to, it just frozen strawberries, milk, vanilla extract and Jello Cheesecake mix. I blended it all together and had a thick creamy, guilt-free milkshake! I love it and I love these kind of recipes. I swear these days, I have been getting my money’s worth with my blender. But I do love my drinks! I swear I could drink all my meals, especially if they are all this good!
This drink is so perfect for kids and adults of all ages! Plus you won’t feel bad serving it to them. I’m normally not one to use boxed jello, but the jello mix is friggen amazing in food! The cheesecake flavor is so perfect and you don’t need to add any sugar to it. The sugar in the nutritional information is all natural sugar from the milk and strawberries! Plus to boot this recipe makes two servings! Of course you could drink the whole thing and I don’t think anyone would fault you for that. Gosh, I am so happy it’s strawberry season!! I know Father’s Day is Sunday, but I’m going to beg, my Husband to go to the Farmers Market so I can get some strawberries and other seasonal produce. Peaches are coming into season now! Yah!!
- 1½ cup non-fat milk
- 1 cup strawberries, frozen
- ½ oz Jello Cheesecake Instant Pudding, sugar free, fat free
- ¼ tsp. vanilla extract
- 1 cup ice
- In a blender at all the ingredients and process until smooth.

Sunday: Cantaloupe, Strawberry and Coconut Gazpacho – This is a refreshing easy summer time soup that is perfect for serving before or after a meal. My Husband loved it and I loved that I was able to use the two cantaloupes I had. Sometimes I run a blank trying to come up with recipes.
Monday: Buffalo Shredded Chicken Burger – This sandwich is amazing!! I can’t tell you enough how much I love it! If it has Franks Hot Sauce on it, I am all over it! Plus I love that I cooked it in the Crockpot, which makes for an easy meal!
Tuesday: Chocolate Peanut Butter Smoothie – I love, love, love this drink! I guess it’s because it’s made with chocolate and peanut butter! One of my all time favorite combos. It’s so good!!

Thursday: Power Garden Berry Quick Bread – I really enjoy this bread and my family loved it too! I just feel bad because people have been making fun of it on Google. They tell me it looks moldy. I guess it does, but I still feel bad. A good bread like this doesn’t deserve to be put down. Honestly, if I saw something that people made that was ugly or gross, I wouldn’t comment, I would just leave my feelings to myself. I was always told to treat people the way you would want to be treated. Oh well! Just don’t let the color fool you! It’s good and healthy and my family never made a commented on the looks and my Husband would be the first to say something!
Friday: Strawberry Coconut Shortcake – I have been nibbling on this cake all week! It’s amazing and the coconut whip cream, must do something to it because it never got soggy, even after three days. If you love coconut and strawberries then this is the shortcake for you! It’s also very easy to make! Mmmmm, strawberries!
Well, it’s time to go! I need to get in some sit-ups in before bed, plus I”m hoping to get some sleep. For some reason I have had a hard time falling asleep lately. So annoying. My brain can’t think anymore!

This strawberry cheesecake milkshake looks divine! Could you tell me how much is 1/2 oz of pudding mix? Two tablespoons? Or do you use a food scale? I’m puzzled by how to measure this.
Thank you. I used 1/2 a box of 1 oz pudding mix. My guess is it is about 2 tbsp.
The only cheesecake milkshake I’ve had, actually had a slice of cheesecake blended into it. Yes it was amazing but totally bad for me haha. Glad to see this healthier version.

Mmmm, chocolate and banana! Yum! I was thinking the same way as you! I already have another kind of milkshake that I want to try out! Recipe to come later, if it works out!
