Hello, hello!!
One and a half more weeks to go before I can take a long weekend. I am in much need to take a little break and go out and have some fun. Speaking of fun, I have a quick little recipe that is fun and tasty! You know how I love my strawberries? Well I do, maybe too much? Every week I buy a half a case of them and pretty much eat them myself. I love them all by themselves, or in yogurt, smoothies, oatmeal on top of salads, and in baked goods, oh I could go on and on! But today, I my strawberry friends needed a little company. They were calling out to be dipped in something, something that contained peanut butter. How could I let them down? You know I couldn’t! So I whipped up a five-minute dip that is so perfect for my berry friends.
Ahhhh, cheesecake flavored peanut butter dip. Yum!! This dip is so creamy, light and not to mention pretty low in calories too. I was craving cheesecake and I thought the next closest thing I could come to without having that fat, high calorie cheesecake was a nice dip. This dip is made with my beloved greek yogurt, Jello instant cheesecake pudding and PB2. Have you Guys ever had PB2? It’s a powdered peanut butter that is only 45 calories for two tablespoons. You just mix the powder in two tablespoons of water and presto you have peanut butter. I love the stuff. I found the cheapest price at Swanson Vitamins, it’s only $3.99 for a jar. I honestly don’t care for the PB2 plain, but mixed in smoothies, yogurt and ice cream, it’s perfect!!
Ok, I have to tell you this dip is perfect for strawberries, bananas and other good things, but you want to know what else is good dipped into it? Now I didn’t tell you this, so if you attempt this and go over board you have no one to blame but yourself! Chocolate! yes chocolate and peanut butter together. Oh my gosh, it is heavenly. But remember, I didn’t tell you that!!
Whats nice about this dip besides the taste, is that you could also top it on things, like toast. I know it sounds kind of weird, but trust me on it. Or if you are all inclined, you could also spoon this into little shot glasses, top it with some whip cream and serve it for guests with a spoon. There are so many ways with this dip, but honestly my favorite is just using it for dipping!
- 1 cup greek yogurt, plain
- ½ oz Jello Cheesecake Instant Pudding, sugar free, fat free (half a pkg.)
- ¼ tsp. vanilla extract
- 2 tbsp. milk, non-fat
- 2 tbsp. PB2 powdered peanut butter or regular peanut butter
- In a bowl add yogurt, pudding mix, vanilla extract and milk, mix until combined. Stir in peanut butter.
- Dip fruit, crackers, pretzels or whatever you desire. Store in the refrigerator.
This dip makes for a nice after school snack for kids too!! Just keep the chocolate away from them! Oh, I was just thinking, I bet pretzels would be good to for dipping. Mmmmm, sweet and salt together, plus peanut butter! I don’t know what it is, but I love peanut butter and pretzels together. Makes a wonderful combination!!
Ok, it’s lunch time here, and all this food talk is making me hungry!! Time for me to go get something to eat besides Peanut Butter Cheesecake dip!

Way to go keeping this one super light, yet full of flavor. The pudding mix is key I bet! And I haven’t used PB2 in years but should dig out a jar if I can remember where I stashed it!

This is great. I use it spread on toast with apricot slices on top and as a topping with Halo Top ice cream. I love that I can still feel a bit indulgent without worrying about how many calories I’m adding to my food.
