Asparagus,Tomato and Dill Egg Bake

Hi Everyone!!

I have to tell you up front, I was so bad at dinner tonight!  Oh my gosh!  Here’s the excuse:  I was so busy at work, that I didn’t get a chance to eat breakfast or lunch, then I had my hair appointment after work, so I went 14 hours without eating, except for two cups of decaf coffee and a few almonds.  I was starving by the time I got home from the hair dressers.  I told myself, no going crazy and eating everything in sight!  I tend to do that when I’m hungry, so I told my Husband I have to eat and I’m to tired to cook, so we went and got burgers at Kinders BBQ.  First I will tell you I was good, I ordered it without mayo and cheese.  Yah!  I saved a couple hundred calories there.  But I did order some lime flavored sweet potato fries.  I couldn’t resist the fries, they are the best!  But when they served me my burger, I almost feel over!  It was two 1/3 pound patties!  TWO!!!  I was going to take a patty out, but my Husband said, enjoy it, you haven’t eaten today and at that point I didn’t care!  It was so good!  But I did only eat half of it, my Gosh it was HUGE!  I did manage to eat all my sweet potato fries though.  My dinner was so fantastic in a bad way!  Then I came home and calculated my calories to the best of my knowledge since they didn’t have a nutritional chart for the meals.  My dinner came in at about 1100 calories!  Man, what the heck!  I am glad I didn’t eat all the bun or the burgers.  But  dam!  Glad I didn’t eat anything else.  I guess you can say this was my splurge meal of the week!  You can bet my fanny I’ll be hitting the gym and working out hard tomorrow.  Sorry I had to get that off my chest!  That was so wrong!  I should have went to Panera Bread!  Do you ever do things like that?

As you can see from today’s recipe, it’ s not a huge bad for you burger, but it’s the dinner I had the other night.  There is nothing wrong with eating breakfast for dinner!    I just wish my Husband liked to do that more often.  But with this meal I served him some bacon, so he was happy!!  This is my Baked Eggs with Asparagus, Tomatoes and Dill.

The combination of tomato and asparagus is simply wonderful and to boot I added some fresh dill, which made it all the better.  For some odd reason in my CSA box last week, they gave me 4 asparagus spears.  How can I serve anyone dinner with 4 spears?  What do you do with that?  So that is when I thought of putting them into eggs.  Perfect!!  To make the asparagus soft, I cooked them in some water in the microwave for about a minute before baking them.  It worked out like a charm!  They turned bright green and were soft, but too soft.

For the eggs I used 3/4 cups egg substitute.  I like the brand Redi-Egg, which I buy at Trader Joe’s.  Add some milk, scallions, onion and garlic powder and poured over my vegetables.  Baked it in the oven for 30 minutes and it turned out light and fluffy!  Oh and of course I added some lite mozzarella cheese on top.  You can use any kind of cheese you like, but I kind of have a thing for mozzarella.

Light, fluffy cheesy baked eggs filled with asparagus, tomatoes, scallions and fresh dill.
Serves: 1 10 oz serving size
Ingredients
  • 1 cup (100 grams) asparagus, fresh, diced or split down the middle
  • ½ cup (44 grams) cherry tomatoes, cut in half
  • 2 tbsp. scallions
  • ¾ cup egg substitute or three eggs
  • 2 tbsp. milk, non-fat
  • ½ tbsp. dill, fresh, chopped fine
  • 1 dash onion powder
  • 1 dash garlic powder
  • 1 dash of black pepper
  • ½ oz mozzarella lite cheese, shredded
  • cooking spray
Instructions
  1. Preheat oven to 350 F
  2. In a 10 oz ramekin or oven safe baking dish, spray with cooking spray.
  3. In a small bowl, add asparagus and enough water to just cover. Microwave for 1 minute. This is to soften them a tad bit. Drain the water.
  4. Add asparagus, tomatoes and scallions into prepared baking dish.
  5. In a small bowl add egg, milk and seasonings. Stir until combined.
  6. Pour egg mixture over vegetables and top with cheese.
  7. Bake for 30 minutes or until center of eggs is firm.

Asparagus and Tomato Egg Bake

I like making egg bakes because you can add anything you like to them.  I served these at Christmas time and they were a hit.  My whole family said they never had baked eggs.  I’m like what?  I make them all of the time, but I make them for me, because when I say baked eggs, I get the ugh look.  Trust me, if you like quiche or frittatas you will love baked eggs!  What I did at Christmas time, was I let everyone fill their own ramekins with whatever filling these preferred.   They loved that idea!  Little Jenny had all cheese, my husband had bacon, cheese and mushrooms and Jenny’s boyfriend had his like mine, with onions, peppers and cooked chicken sausage.  I am sharing with you this recipe today because I thought it would be great to serve on Mother’s Day for breakfast or brunch.  Have a make your own egg bake bar!  It’s fun and you can set it up all cute!  That way everyone gets what they like!

Well my Peeps, I think I blabbed long enough!  I think I’m going to do some sit-up and some arm exercises before bed.  I need to burn a little bit of this hamburger off!  🙂

    Hey, 1100 calories in a day sounds like a pretty reasonable day to me! And it sounds like you deserved every bite! I think I deserve a nice egg bake like this one, it looks so delicious!

    Jennifer, This egg dish looks delicious. The ingredients sounds perfect with eggs. Have you ever cooked this in a 9″ pan or quiche pie plate? I’m wondering how the cooking time would differ in a larger pan.

      Thank you Joan! I haven’t made this one in a 9″ pie pan, but I have in the past with other recipes. I would say the cooking time would be about 40 – 45 minutes on 350 degrees.

      I know, that’s ok, it happens every once in a while. It was one of those urgent everything must be done now days! I have been trying to keep the snacks out of my desk drawer and the one day I need them, there gone! lol

    Ugh I just hate those days coming home from work starving, and in no mood to cook! I usually make the mistake of going to the grocery store too and buy everything in sight. Later I am like, why did I buy this?? This looks so healthy, I will make it for brunch this weekend!

      I know going to the grocery store when your hungry is a huge mistake!! I go to Trader Joe’s and end up buying some kind of chips and by the time I get hoem there gone! Opps!

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers! 

I hope you check out everyone’s outdoor space. I love this time of year and I can always use more outdoor inspiration.

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!

Happy Wednesday! I am sharing with you my garden f Happy Wednesday! I am sharing with you my garden from last year. I’m gearing myself up to start working in the garden this weekend. It’s supposed to be mid 70’s. So if all goes planned you will be seeing quite a few gardening posts.

Last years extreme summer heat took a major toll on my garden. I lost quite a few plants. 😫 For some reason I lost my Butterfly Bush. I plan on adding another one in the same spot. A lot of my lower flowers like Hummingbird Mint and my Coneflowers didn’t survive. We will be looking at the sprinkler system to make sure the plants are getting enough water.

At least this garden is mainly annuals, so it should fill up with some color soon. I’m unsure what to do with my other gardens as my dogs have destroyed them. They keep on digging in the dirt. Maybe I should get them a sandbox to play in?
