Good morning and Happy Cinco De Mayo!!!
Woohoo!! I think this holiday is made just for me! Today is a day to indulge, celebrate and enjoy all your favorite Mexican goodies!! Today for #SundaySupper we are celebrating this wonderful Mexican holiday, and everyone is bringing a Mexican treat to the table. Today I am serving up slow cooked Carne Asada Tacos.
Man, this is GOOD!!! I slow cooked my steak all day in the Crockpot until it fell apart, and the smell, oh the smell, it was like I was in a Mexican kitchen all day. Fabulous! I waited patiently as I took in the aroma of my Carne Asadas, just waiting to make my tacos. Talk about torcher! But this dish is well worth the wait, trust me!
To make my Carne Asadas I used a 2lbs. flank steak and cooked it in Rotel tomatoes with green chili’s, tomato sauce, jalapeno, seasoning and to top it off beer! Yup, good old can of beer!! The meat almost has a beef stew taste to it, but with a kick of heat. You don’t really taste the beer, but you do get a hint of it. I used Bud Light, since that is all we had. I topped my tacos with cotija cheese, and it was magnificent. This was the first time I ever had this kind of cheese. I love it! It’s creamy and crumbly, almost reminds me of a goat cheese.
But when I make tacos, my philosophy is it has to be so stuffed that the juices need to drip down your arm, so I added another layer to my tacos. My Lightened Up Guacamole that I made on Wednesday. Perfect!!!
But wait that’s not all! I need more, more, more! So I topped it with some homemade Pico deGallo which is tomatoes, cilantro, onion and lime juice. But There are two things missing, jalapenos and hot sauce. Now my tacos are complete and drip worthy!!! The fell apart when I took a bite. I may have over filled a tad bit. Oh well!!!
- 2lbs. Flank Steak
- 10 oz can Rotel Diced Tomatoes with Green Chilis, mild
- 15 oz can tomato sauce
- 2 cloves garlic, diced small
- ½ cup onion, diced
- ½ jalapeno, seeded, diced
- Juice of one lime
- 3 tbsp. cilantro
- 1 tbsp. chili powder
- 1 tsp. cumin
- 1 12oz can Beer (I used Bud Light)
- 16 corn tortillas (I used Mission 100 calories for two)
- In a bowl, add canned tomatoes, tomato sauce, garlic, onion, jalapeno, lime juice, cilantro, chili powder and cumin; mix together.
- Add flank steak to Crockpot and top with your tomato mixture. Pour beer in Crockpot.
- Cook for 8 hours on low
- Shred steak with a fork.
- Serve 2 oz of meat onto each tortilla. Serving size is two carne asada tacos.
- Top your tacos with avocado, guacamole, salsa, tomatoes, cotija cheese, hot sauce and jalapenos.

Carne Asada is one of the thing I order most often when dining at a Mexican restaurant. Most of the time I find it way too salty. I have to try your tender crockpot version because of all the flavors you have going on while cooking away. Plus I’m with you on the dripping tacos. Bring on the napkins!!
