Choco Taco / Weekly Recap

Hello!

Today I have a fun treat!  That everyone will love!  Remember Choco Tacos?  Well I made a healthy version of the beloved ice cream treat!!

Choco Taco

My Choco Taco is made with a regular crunchy taco shell and my favorite all time snack, Greek Yogurt!  I wasn’t sure how it would turn out, but it turned out fantastic!  It almost tasted like a donut!  Sounds crazy, but it’s true.  The taco shell stayed crunchy.  The yogurt wasn’t to hard and the chocolate, oh the sweet, sweet chocolate!  Mmmmm…  I mixed my greek yogurt with vanilla extract and a pinch of stevia to sweeten it up.  If you have vanilla yogurt, that would work out great too!!  Also, if you have a low fat frozen ice cream that would be fantastic to use.  However, I am partial to my greek yogurt, so that is what I used.

I filled my taco as high as I could with my greek yogurt and placed it in the freezer for about an hour or so.  To keep it held upright, I used a freezer safe container to hold it in place.  It looks kind of funny, but it works!

The Making of Choco Taco

I topped my taco with melted dark chocolate and honey roasted peanuts.  Amazing!!  When you melt the chocolate in the microwave, you need to add a little more than your going to use, because it’s easier to melt.  Once your melted chocolate hits the frozen yogurt, it hardens right away, so be prepared for that and quickly top with your nuts so they stick.

This was really a fun dessert to make and I got this idea out of the Food Network magazine.  They used vanilla ice cream and lots of chocolate, believe me I would have liked to have done that, but I need to keep it skinny!  I am very happy with my taco, it’s simply perfect and a great dessert, that is practically guilt free.

A fun, healthy taco made with greek yogurt and topped with dark chocolate and honey roasted peanuts.
Serves: 1 Taco
Ingredients
  • 1 crunchy taco shell
  • ½ cup greek yogurt plain or vanilla
  • ⅛ tsp. vanilla extract
  • ⅛ tsp stevia
  • 5 peanuts, chopped small (I used honey roasted salted)
  • 13 grams dark chocolate
  • Note: If using vanilla greek yogurt, omit the vanilla extract and stevia
Instructions
  1. In a small bowl, add plain greek yogurt, vanilla extract and stevia. Mix until combined.
  2. Fill taco shell with greek yogurt and place in freezer for about 1 hour or so.
  3. Meanwhile, just before taco is ready, chop the chocolate and place in the microwave and microwave in 10 second intervals, until melted. NOTE: For easy making, you should use additional chocolate so it doesn't burn and it's easy to mix.
  4. Drizzle chocolate over frozen yogurt and top with nuts.
  5. Note: Greek yogurt is great to use, if you are planning to eat this recipe right away, if you want to store or freeze your Choco Taco, I recommend using a low fat or a yogurt mixed ice cream.

I love these tacos and now that I still have a few shells left and plenty of yogurt, I think I’ll be making this for dessert again and again!

I decided on no link ups this weekend and I would just post this weeks weekly recap.

Sunday:  Bircher Muesli – This is an amazing breakfast and I did make it again this week.  I just love it!  It’s healthy, easy, no bake and so delicious!  If you like oatmeal, I highly recommend giving this recipe a shot!

Bircher Muesli Monday:  Pina-Banana Smoothie – Perfectly refreshing, tropical and a great way to bring in the Spring season and with the hot weather were having here.  Were breaking record temperatures this week, mid 90’s and high winds!  Not a good combination for wild fires!  But this smoothie was perfect for this kind of weather!!  Well, honestly, it could be snowing out and I would still drink it!!

Tuesday:  Mexican Fiesta Salad – Love this salad!  I made it into a burrito this week too!  All my favorites in one salad!!  I can’t even say enough about it!  It’s just darn good!

Wednesday:  Lightened Up Guacamole – I love avocados and I am so glad I discovered them about a year ago.  I honestly thought I was allergic to them, and then I thought I would try them again and then no stomach ache!  Ever since then I haven’t stopped eating them!  They are such a great and versatile fruit.  Yes they are a fruit and not a vegetable.  I had to google it to be sure.

Thursday:  Baked Churros-  Simply amazing!  All I can say is they taste like a Churro and it’s fewer calories and healthier for you.  I love that!!  Love it!  These are the perfect little treat that will be sure to please kids of all ages!

Friday:  Grilled Pork wrapped in Bacon Tacos – I love these tacos!  Cooking the pork in bacon is such a great idea!  The bacon really adds flavor to the pork, even if you don’t eat a piece of bacon.  The meat was tender, juicy and not chewy at all.  You would think using bacon it would be greasy, but it wasn’t.  I know I will be making this again.  Mixing the pork with the cabbage slaw is a perfect combination.  The cabbage adds a nice crunch to the tacos.  I simply love this meal!!!

    I like greek yogurt as well, it’s so thick and delicious. One of my most favourite dessert is frozen yogurt, so this recipe will be perfect for me during hot summer days.

Happy World Kindness Day! This weekend I made my a Happy World Kindness Day! This weekend I made my annual snow jar to place on my shelf in the kitchen. You get a tiny sneak peak of my shelves at the end of the reel. The snow jars are so easy to do and you probably have most of the items on hand.

For the snow, I used blanket snow. You could also use, sugar or Epsom salt. I like the blanket snow because it’s not messy and it hides the fairy lights battery pack.

The houses are ornaments that I bought at Target. I thought they were Perfect for my pink kitchen. Of course you can use whatever you have on hand. It doesn’t have to be a house and tree.

If you buy fairy lights, make sure they have a timer on them. Trust me that will make life easier. If you don’t like fairy lights, you can use a faux candle. 
Ohhh and have a stack of batteries. I go through more batteries in the month of December then I do the rest of the year!

Happy Monday! Sorry I haven’t been on in awhile. Happy Monday! Sorry I haven’t been on in awhile. My husband was sick with the flu, then he passed it on to me. My dog even had an upper respiratory infection. Ugh! It was a rough 2 weeks. Then on Friday I had surgery to remove skin cancer on my chest. I’m sore and I can’t lift or exercise. Anyway, that’s why I have not been on.

The scent I received is Apple Jack & Peel. It’s fresh apples with cinnamon and a hint of citrus. It smells like fall. Reminds me of when we go to Apple Hill to go apple picking, which we will be doing next week.

The scent is warm and cozy and the candle and potpourri is so pretty. Not only do these look so pretty in my home, but they would make such a wonderful housewarming gift. I wish you could smell them.

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.
