Grilled Pork Wrapped in Bacon Tacos

There is no time for howdy’s today, I am toooooooo excited to share with you my odd, off the wall dinner, that has me spinning.  First let me paint a picture for you.  Picture this, Northern California, 2013, 5:00pm, 90 degrees, sun beating down on you and there is a smell in the air, a familiar smell.  You look around to make sure you are a lone, as you take that smell, oh that wonderful smell.  What is it?  Is someone making breakfast?  Is it eggs, toast and ahhhh yes bacon!!  BACON!!  As I wallowed in the smell, I looked around and what did I see?  Thankfully no neighborhood cats, but two bad dogs with their nose in the air.  Ahhh yes bacon, why does it smell so good?  Why do we all want it?  I’m not even a bacon person, and I had to have some!!

I did not make this dinner for me, it was requested by my Husband.  After a lot of thought, I figured, why not?  So I took my pork tenderloin and wrapped it in Trader Joe’s Smoked Applewood Bacon and smothered it in Trader Joe’s Steak Sauce.  I wanted to use barbecue sauce, but my Husband didn’t want it that way.  Fine!  We actually tried the pork with the steak sauce last week and we loved it, so I figured I would do it on pork again.  It turned out perfect!!

There are two main things to bacon wrapped pork.  The first thing I did was heat the whole grill, then turn off the burner where I was putting my pork.  If your cooking  bacon on the grill, don’t put it directly over the flame, it will flare up and burn your meat and not cook the inside.  If you’re using coals, once the coals are hot move them to one side of the grill.  Second thing is to put toothpicks in the bacon to keep it secure.  I didn’t do that at first and the bacon started to unravel.  For making the pork, I only used two slices of the bacon.  I spiral wrapped it around the tenderloin.  You could always use more bacon, and I am sure my Husband would have loved for me to do that, but I didn’t want to add 800 additional calories to the dish.  Funny wrapping pork with pork!  Just thought of that.  Anyway, here is what the pork looked like when I took it straight off the grill.  Not a pretty picture, but it is what it is.

I have to tell you I was pretty impressed with the meat.  It was tender and not chewy at all.  Made for easy biting.  I didn’t need to force any cutting with the knife, it cut like a dream.  Plus the best part is because I cooked it wrapped in bacon, the whole tenderloin tasted of bacon, even if you didn’t get a piece of bacon.   I think???  That’s better for my waistline??

I made tacos for myself, but my Husband ate his plain, he’s boring!!  I made a fabulous sweet, slightly spicy mango and cabbage slaw to go over the top of my pork tacos.  The cabbage added a wonderful crunch.  But because I am so dramatic when it comes to tacos, I also added some barbecue sauce, hot sauce and an avocado.  I was in heaven.  My Husband wasn’t home, but I sent him a text and told him “OMG”, this is one of the best dinners ever!  He said he was rushing home to get his dinner.  I wasn’t kidding when I told him that too.  I was amazed that the combination of pork, bacon, cabbage, mango and BBQ sauce went together so well.  This was the first time I ever had a pork taco and it sure won’t be my last!!!

A tender, juicy pork tenderloin, covered in crispy bacon placed on top of a tortilla with a sweet and spicy mango cabbage slaw.
Serves: 8 tacos
Ingredients
  • 8 corn tortilla shells or flour (I used Mission 50 calories white corn tortilla)
  • For Grilled Pork
  • 1 lbs. pork tenderloin
  • 2 sliced apple wood smoked bacon
  • 1 tbsp. Trader Joe's Steak Sauce or BBQ Sauce
  • Cabbage Slaw:
  • 2 cups cabbage, shredded
  • 1 cup mango, diced
  • ¼ cup cilantro, sliced thin
  • ½ jalapeno, seeded, diced small
  • 1 tbsp. lime juice
  • pinch of sugar
  • ¼ tsp salt
  • ¼ tsp pepper
  • Optional toppings: BBQ sauce, hot sauce, Cojita Cheese and avocado.
Instructions
  1. Grease olive oil over grill grates and turn on all the burners to medium heat. Once your ready to put the pork on the grill, turn off the burner that would be directly under the pork. You don't want the all your burners on, other wise the bacon will flare up and burn your meat. If using charcoal, when ready to cook your pork, push all the coals to one side.
  2. Spiral wrap bacon around the tenderloin and spread steak sauce over pork. This holds the bacon in place, plus gives great flavor. Also you can secure the ends of the bacon with a toothpick.
  3. Place pork on the grill on side without the flame. Cook rotating every five minutes until the internal temperature reaches 150 degrees. About 15-20 minutes.
  4. Meanwhile to make the cabbage slaw, add all cabbage slaw ingredients in a bowl; mix until incorporated. Refrigerate until ready to use.
  5. Place tenderloin on a plate and cover with foil for about 5 - 10 minutes.
  6. Meanwhile, if you chose, you can lightly heat up your tortilla shells by placing them on the grill for about 30 seconds or so and then flip. Just don't burn them.
  7. Place 2 oz of pork on to each taco shell and top with Cabbage Slaw.

I am not kidding you, I LOVED these tacos!!  It’s amazing to what flavor combinations really go well together.  I always pictured pork and apples, but never pork, mango and cabbage.  Simply amazing!  I made myself happy and I made my Husband happy too!  This dinner was a win, win!!

I have to tell you, I am also soooooo excited for tomorrows recipe!  I think you will be surprised to what Fun Saturday has in store!

    I love bacon as well 🙂 it smells amazing. I went on a picnic on Saturday and I made BLT, soooo good. Bacon tacos sound delicious 🙂 And look so pretty on your pictures as well.

Hello, hello! Long time no see. Life has been busy Hello, hello! Long time no see. Life has been busy the past month or so, and I haven’t really had much to share with you, but this week I am on vacation so hopefully I can get some content to share.

I am sharing with you one last look of my blues in my living room, as I plan on adding some yellow. I’d like to say with the warmer weather it’s time for Summer decor, but it has been unseasonably cool here. We are still in the 70’s and windy. Great for the plants, but not me. I need some 80’s. This is just wacky weather!

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers! 

I hope you check out everyone’s outdoor space. I love this time of year and I can always use more outdoor inspiration.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Wednesday! I have spent so much time working Happy Wednesday! I have spent so much time working outside that I have not worked on decorating my dining room for Mother’s Day or Spring. It’s a bare slate as of right now. So I thought I would share with you last years tablescape that I did for Mother’s Day.

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!

Happy Wednesday! I am sharing with you my garden f Happy Wednesday! I am sharing with you my garden from last year. I’m gearing myself up to start working in the garden this weekend. It’s supposed to be mid 70’s. So if all goes planned you will be seeing quite a few gardening posts.

Last years extreme summer heat took a major toll on my garden. I lost quite a few plants. 😫 For some reason I lost my Butterfly Bush. I plan on adding another one in the same spot. A lot of my lower flowers like Hummingbird Mint and my Coneflowers didn’t survive. We will be looking at the sprinkler system to make sure the plants are getting enough water.

At least this garden is mainly annuals, so it should fill up with some color soon. I’m unsure what to do with my other gardens as my dogs have destroyed them. They keep on digging in the dirt. Maybe I should get them a sandbox to play in?
