Bircher Muesli #SundaySupper

Hi Everyone,

I can’t believe it’s Sunday already!  That’s just craziness!!  Today’s recipe has to do with my visit to Germany last summer.  Everyday for breakfast, they would have the most scrumptious looking buffet set-up.  It was filled with pastries,  pretzel rolls, poached eggs, fish, sausage, cereal, yogurt and something I could get enough of, Bircher Muesli.  I saw this white, thick creamy looking oatmeal, surrounded by bowls of fresh fruit, dried fruit, nuts, nutella and granola.  I was simply drawn in and couldn’t leave that area of the buffet table.  You know I have a love for these kind of treats.  I decided to try the Bircher Muesli, and I wasn’t sure how it was going to be, than then I took one bite and I was in ahhhhhhh!!!!

When I left Germany, I vowed one day to make Bircher Muesli, but almost a year has passed and I always think about making it, but I never do.  Well with today’s #SundaySupper our mission was to try a new cuisine or technique.  I thought this would be a perfect time to make a Swiss breakfast, even though I was in Germany at the time, Bircher Muesli is actually a Swiss breakfast.  What is Bircher Muesli you wonder?  The most incredible over night oatmeal ever!  It’s so rich, creamy and oh my gosh good!!!  I happened to look at the sign for Muesli at the buffet and I’ll never forget what it was made of, fresh apples, oranges, dried fruit and nuts.  But the main ingredient was cream.  Everything in Germany seemed to be creamed based, no wonder why the food was so good!!

But my bircher muesli is not made with cream, it’s made with non-fat milk, greek yogurt and water.  I figured I was allowed to soak the oats in yogurt, since in Germany they recommended putting yogurt in the muesli.  When I had a bite of this in the morning, it took me back to that wonderful buffet and to that breakfast, I simply adored.  If I ever go back to Germany, I think one of the main reasons would be to have this breakfast.  It’s worth the trip across the pond!!

At the buffet, they had all of those delicious, natural, healthy toppings to put on the muesli, so I did the same.  I topped mine with strawberries, blueberries, slivered almonds and honey.  Amazing!  This breakfast filled me up till lunch, and even then I had a light lunch.  I am not kidding you, if you like yogurt and oatmeal, make this, you will be in pure bliss!!

For making the over night oats, besides the milk and yogurt, I also added in some shaved apples and freshly squeezed orange juice.  The orange juice doesn’t only add flavor and sweetness,  but it also keeps the apples from turning brown.  For a little added texture I also added a few raisins, which got all nice and plump sitting in the oats over night.  I planned on making a batch of the muesli for a few days worth of breakfast’s, but I only had a half cup of oats.  I think this is the first time I ever ran out of oats.

Just look at it!  This picture makes me want to run out and get more oats, pronto!!!

A creamy, thick, healthy breakfast made with overnight oats, apples, orange juice and yogurt.
Serves: 1 serving (1¼ cups)
Ingredients
  • ½ cup oats (not quick cooking)
  • ¼ cup apple, shredded or diced
  • 2 tbsp. orange juice
  • ⅓ cup yogurt, plain greek
  • ¼ cup non fat milk
  • ¼ tsp. vanilla extract
  • ¼ water
  • 1 tbsp raisins or other dried fruit
  • ¼ tsp cinnamon (optional)
  • **Optional toppings**
  • berries
  • banana
  • nuts
  • nutella
  • granola
  • peanut butter
  • flax seed
  • more milk
Instructions
  1. Add all of the ingredients in a bowl; mix well. Cover and refrigerated for at least 8 hours.
  2. When ready to serve top with optional toppings.
  3. Store in the refrigerator for up to 3 days.

Bircher Muesli

After writing this post, I really want this breakfast again and I mean now!!   I can guarantee I will be making this tonight, so I have a nice healthy and filling breakfast to get me through the next few mornings.  It’s simply amazing and when you take a bite, oh my gosh, you will be in pure creamy oat heaven!

    Thank you for the reminding me of the wonders of muesli (and Germany!) I have fond memories of visiting my mother during summer vacations. She was a Wimbledon semi-finalist and always had scrumptious muesli for breakfast…Appreciate your sharing the recipe, Jennifer =)

    I can´t tell you how much I love oats, and have a variation of this often. But I only soak it overnight in juice. The idea of mixing everything for hours sounds so much better! I´m trying this tonight. Great recipe!

    I love Bircher Muesli, I often make it overnight in the fridge with apple juice as the liquid then add the natural yoghurt in the morning – yum! It’s such a lovely breakfast as the weather is getting warmer 🙂

      I calculate all the nutritional value on Spark People recipes. I add the ingredients my self, so I know they are correct, then I just add my measurements, the rest is done for me.

    Yes, breakfast buffet at German hotels are amazing! Bircher Muesli is amazing is so good and can be made differently. I just love your version and how you substituted the cream. Yum!

    I’ve been eating muesli for 2 weeks straight at least once a day, must be the season! I actually just use almond milk and instead of making my own mix of dried fruits/nuts/grains I’ve been using Bob’s Red Mill Muesli mix (it was at Costco, but I’ve gotten it at the regular grocery store as well). I love strawberries and blueberries with it.

    Oh my goodness, I can’t believe your sharing this wonderful treat. I spent a summer working in the Swiss Alp when I was in college. I learned to love Bircher Muesli and when I came home everyone thought I was crazy as they had never heard of it. I have kind of forgotten about it till now, thanks so much for sharing, I can’t wait to try it and step back a hundred years in time (well maybe not quite that many……..)

Happy World Kindness Day! This weekend I made my a Happy World Kindness Day! This weekend I made my annual snow jar to place on my shelf in the kitchen. You get a tiny sneak peak of my shelves at the end of the reel. The snow jars are so easy to do and you probably have most of the items on hand.

For the snow, I used blanket snow. You could also use, sugar or Epsom salt. I like the blanket snow because it’s not messy and it hides the fairy lights battery pack.

The houses are ornaments that I bought at Target. I thought they were Perfect for my pink kitchen. Of course you can use whatever you have on hand. It doesn’t have to be a house and tree.

If you buy fairy lights, make sure they have a timer on them. Trust me that will make life easier. If you don’t like fairy lights, you can use a faux candle. 
Ohhh and have a stack of batteries. I go through more batteries in the month of December then I do the rest of the year!

Happy Monday! Sorry I haven’t been on in awhile. Happy Monday! Sorry I haven’t been on in awhile. My husband was sick with the flu, then he passed it on to me. My dog even had an upper respiratory infection. Ugh! It was a rough 2 weeks. Then on Friday I had surgery to remove skin cancer on my chest. I’m sore and I can’t lift or exercise. Anyway, that’s why I have not been on.

So I have been thinking about Christmas colors. The past 2 years I have done green and I love it, however I have always wanted to do a pink Christmas. Just not sure if I can pull it off? I don’t know if I want to go crazy and buy a bunch of pink? What color are you doing this year?
