Watermelon Popsicles/ Weekly Recap… Lots to read

Happy Saturday to you!  Since we went from 60’s to 90’s, it has been feeling like summer around here, but I am sure you can tell that from this weeks posts.  So with all of the hot weather were having and the summer mood I am in I decided it was time for popsicles!

Watermelon Popsicles

I bought a 3lbs. watermelon about a week ago from Trader Joe’s and I wasn’t sure what to do with it and with the heat I thought it would be perfect to make popsicles with it!  So I cute up the melon, threw it in my food processor and had the sweetest juice.  I felt I didn’t need to add any sugar to it, but if you happen to have a watermelon that wasn’t sweet, I recommend adding a little bit of honey to it.  I was actually surprised how sweet the melon is, since it’s not water melon season.

I happen to snag a few 8oz plastic cups from work, and I filled my cups with my pink juice.  But I needed to add a little more to my pops and since I happen to have a bazillion strawberries, I thought I would throw a few into my watermelon pops.  It worked out perfect.  Add a popsicle stick that I picked up from Michaels and in the freezer they went.

It wasn’t even four hours and my Husband was digging in the freezer for a popsicle.  They most definitely quench your thirst and perfect for a hot evening.  If your worried about seeds, don’t be.  My watermelon was seedless, but there were still a few seeds in it.  I didn’t want to take them all out so I processed them in my blender with the watermelon and when you eat the popsicle you don’t even notice.  But if you don’t like seeds at all, you can always strain your watermelon juice.  I am purely to lazy for that!

A sweet, healthy all natural frozen treat made with fresh watermelon and strawberries.
Serves: 4 - 8oz popsicles
Ingredients
  • 1 3 lbs watermelon
  • 8 medium strawberries, cut in slices
Instructions
  1. Peel watermelon from the rhine and roughly chop. Place watermelon in a blender and process until no more chunks remain. I got 3½ cups of watermelon juice. If the watermelon is not sweet enough you can add a pinch of stevia or honey. My watermelon had some tiny seeds in it, I left them in, if you don't like seeds, I recommend straining your watermelon juice. Please note: You do not notice the seeds at all!
  2. Evenly divide the watermelon between 4 8oz. freezer safe cups. Do not over flow the cups, you want to leave room for the strawberries and stick. Drop in strawberry slices and other berries if you would like. I used a skewer to push the strawberries down into the cup. Add a Popsicle stick and place in freezer for at least 4 hours or longer.
  3. To eat, remove popsicle from freezer, and leave at room temperature for 5 minutes or run the popsicle under warm water. Don't pull to hard on the stick or it may come out.

Watermelon Popsicles

I know it seems a little early in the season for watermelon, but I love my frozen treats and watermelon is one of my favorite summer fruit, plus it really does cool you off in the hot heat.

Also, one last thing about watermelon, it has natural electrolytes in it to help keep you hydrated, plus it’s full of potassium, and is great for weight loss since it contains fiber, its low calorie and less then a gram of fat.  It’s the perfect all around fruit!!

If your into over the top swimming pools, here is a post from Huffington Post with some pretty cool looking pools!  When I win the lottery, I’m going to have one made for me!!  🙂  Maybe shaped like a big pepper!

Now that we went to pools, we better watch the effects of the sun.  I was a sun goddess up until a few years ago, when I had to have several and I mean several moles removed to be checked for skin cancer.  It was scary, and now I protect myself, by wearing sunblock and a big hat when I’m in the yard working.  PLEASE protect yourself, get those moles looked at.  Skin Cancer is the most visible cancer and the easiest to prevent and treat if you catch it in time.  So I am giving you a link to WebMD on what to look for in moles.  I LOVE the sun, but I must protect my skin and my life!  If you need to be tan, get spray tanned, that’s what I do now!

Now for this weeks weekly recap!

Sunday:  Pink Lemonade  – This is a wonderful and refreshing drink, made with lemon juice and cranberry juice.  Only 10 calories a cup.  It’s guilt-free and so perfect to quench that thirst!

Monday:  Sauza Rita – This is such a fun and easy drink to make.  A different twist to a margarita, but I’ll admit it’s a strong drink.

Tuesday:  Strawberry Cream Mousse – I love this dessert!  It’s creamy, fresh and so easy to make!  I just love Trader Joe’s Coconut Cream, I already have a can of it in the fridge.  Not sure what I am going to make with it this week?

Wednesday:  Mediterranean Grilled Chicken – This is a simple chicken dish, so full of flavor!  I had a little bit of the salsa left over and had it on my salad the next night.

Thursday:  Grilled Top Sirloin with Strawberry Salsa  – I can’t get enough strawberries, which is probably pretty apparent this week.  I am just on a strawberry kick, eventually I’ll get sick of them, nah, probably not!  lol  I promise to go easier on the strawberry recipes the next couple of weeks.

Friday:  Skinny Strawberry Margarita – This is one of my favorite summer time drinks.  I don’t drink a lot of alcohol,  but if I do chose to have it, it would be in a drink like this one.  Guilt-free, full of strawberries and only 104 calories for two big cups!!

After looking back this week, I didn’t realize until now, I had three drinks for you.  That’s what happens when it hits the mid 90’s and we were not prepared for it.  My Husband and I were so hot, thirsty, and not very hungry.  We debated about turning the air on, but skipped it.  Now it’s going to be a bit more comfortable, 70’s this week, so that means I can turn the oven back on!  Yah, I can bake!!

      Thanks Chris! We loved the Popsicles and the day I made them it was in the 90’s which is an oddity, so they were refreshing!!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Happy spooky Thursday! I added a few touches of Ha Happy spooky Thursday! I added a few touches of Halloween in my kitchen. I don’t do much Halloween decorations, but I just love to add it to the kitchen. Every time I go to the kitchen it makes me smile.

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
