Meyer Lemon Snack Cake with Lemon Cream Cheese Frosting #SundaySupper

Happy Easter!!!

Today is another edition of #SundaySupper.  Since today is not only Easter it’s also Lemons and Oranges Day!  So to celebrate Mother’s Nature beautiful citrus fruit, we had to make a dish with what else lemons or oranges.  Today’s dish is a fabulous snack cake made with Meyer Lemons that my friend Marty gave me.  I couldn’t believe how wonderful a Meyer Lemon tasted!  It is so sweet!!  Yes a sweet lemon!  Crazy!!  But it’s so good and because it’s so sweet I cut back on the sugar in my recipe!  Yah!!  Oh and today’s recipe is a Meyer Lemon Snack Cake with Lemon Cream Cheese Frosting.

Meyer Lemon Snack Cake with Lemon Cream Cheese Frosting

This cake is so light and fluffy and has the most wonderful lemon taste and then topping it with a cream cheese frosting that has fresh Meyer lemon juice in it, oh man!  I was totally licking the bowl on this one.  I was pretty impressed on how light the cake was considering I didn’t use any oil in it, but I did use vanilla yogurt which adds a nice moisture to it!

This recipe makes 12 nice slices of cake and to top it, it’s guilt-free!  A slice of cake with frosting is only 137 calories!  Which is so perfect!!  I brought this dish to work and I was surprised on how much of a hit it was.  I wasn’t sure how it would go over considering I made it on a Saturday night and took it to work on Monday.  I did ask my pals on Facebook on how to store the cake.  I didn’t know if I could keep it out or put it in the refrigerator.   They said to put it in the refrigerator,  but it will affect the texture of the cake, but your safe to know the frosting, being dairy, wouldn’t make anyone sick.  I’d rather be safe then sorry!  After taking it out of the refrigerator,  about an hour on the counter the cake turned out perfect.  It wasn’t quite as light as the day I made it, but it was still very good and was eaten up pretty quick!!  So if you do make it or make anything with a cream cheese frosting, be sure to refrigerate it!  Or leave the cake out and put the frosting in the refrigerator and frost your cake when your ready to serve it!!

Meyer Lemon Snack Cake with Lemon Cream Cheese Frosting

A light, healthy lemon flavor cake topped with a lemon cream cheese frosting.
Serves: 12 Slices
Ingredients
  • 1 cup whole wheat pastry flour
  • ¼ cups all-purpose flour
  • ½ cup sugar
  • 1½ tsp baking powder
  • ½ tsp salt
  • 1 egg
  • 2 tsp freshly grated meyer lemon zest
  • ¼ cup margarine, melted (I used Brumble and Brown)
  • ¼ cup vanilla yogurt
  • ½ cup non-fat milk
  • Frosting:
  • 4 oz Cream Cheese, ⅓ less fat
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1½ tbsp meyer lemon juice (juice of half a lemon)
  • 2 tsp lemon zest
Instructions
  1. Heat oven to 350°F.
  2. Spray an 8 x 8 pan with cooking spray; set a side.
  3. In a medium bowl, combine flour, sugar, baking powder and salt; set aside.
  4. In a large bowl, combine egg and lemon zest. Add melted margarine, yogurt and milk; mix well.
  5. Add flour mixture to egg mixture and stir until combined.
  6. Pour batter into prepared baking dish. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool completely.
  7. In a large bowl add cream cheese, 3 tablespoons powdered sugar, vanilla extract, 1½ tablespoons lemon juice and lemon zest and beat until light and creamed; about 3 minutes. Spread frosting over cooled cake. Top each serving with lemon zest, if desired.

Meyer Lemon Snack Cake with Lemon Cream Cheese Frosting

This cake not only makes a wonderful Snack Cake it would be perfect to whip together for your Easter brunch or breakfast!  I think any lemon fan will love this cake!  Oh and one last thing, if you can get your hands on some Meyer Lemons, you must get them.  They are so much better than a traditional lemons, however I am a huge lemon fan!  I use a lemon everyday for the past year!  I use it in my water, which is great to detox for the kidneys and it helps the metabolize the fat.  Yes, please!  I love anything that helps get rid of fat!  lol  This is just another reason why I love lemons.  As a kid I used to eat them raw!  I’d peel them like an orange and eat away!  I know I was a weird kid!  🙂

    I was wondering, if you don’t have pastry flour, would regular whole wheat flour be okay instead? This looks so good!! I absolutely love lemon.

      Hi Samantha! I would use 1/2 cup whole wheat flour and 3/4 cup all purpose flour in the recipe. I found using all whole wheat flour in baking can make your baked goods a little heavy or dense. Have a great rest of the weekend!!

I am sharing with you one last look of my blues in my living room, as I plan on adding some yellow. I’d like to say with the warmer weather it’s time for Summer decor, but it has been unseasonably cool here. We are still in the 70’s and windy. Great for the plants, but not me. I need some 80’s. This is just wacky weather!

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers!

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

This Mother’s Day,(Saturday) little Jenny is taking me to the @gratoncasino to get a pedicure and possibly lounge at the pool, if it is warm enough outside. Then we will go for a nice lunch. I can’t wait. Sunday, I’ll spend Mother’s Day with the boys. 🐶🐶

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

In my 20’s, I used to go to Macy’s with my mom and in the bedding department they had a section of Claire Burke. I always bought there Original Scent potpourri. It smells like spring flowers with roses and lavender and it’s also beautiful to look at.

If you are looking for a Mother’s Day gift, I highly recommend. I love the Original scent, if you like a floral scent. If you are more for fresh clean scent, the Sea Salt and Grapefruit is amazing. This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!

Happy Wednesday! I am sharing with you my garden f Happy Wednesday! I am sharing with you my garden from last year. I’m gearing myself up to start working in the garden this weekend. It’s supposed to be mid 70’s. So if all goes planned you will be seeing quite a few gardening posts.

Last years extreme summer heat took a major toll on my garden. I lost quite a few plants. 😫 For some reason I lost my Butterfly Bush. I plan on adding another one in the same spot. A lot of my lower flowers like Hummingbird Mint and my Coneflowers didn’t survive. We will be looking at the sprinkler system to make sure the plants are getting enough water.

At least this garden is mainly annuals, so it should fill up with some color soon. I’m unsure what to do with my other gardens as my dogs have destroyed them. They keep on digging in the dirt. Maybe I should get them a sandbox to play in?
