Berry Taco’s – #SundaySupper

March 17, 2013 By Jennifer @ PB and P Design 70 Comments

Hi Everyone,

Today for #SundaySupper or mission to make something for St. Patrick’s Day or something that is Spring.  Well since I have a tad bit of Spring Fever and a slight spring cold, I thought I would choose Spring as my recipe challenge today!!  When I think of Spring two things come to mind, hyacinth flowers and berries!!! You know I have been talking about berries for the past few weeks and this week, they looked juicy good!!  So with that in mind I made a taco that can be used for breakfast or dessert!

Berry Breakfast Taco's

This taco is filled with the freshest berries that Trader Joe’s carries, plump juicy strawberries, tender little blueberries and a slight tart blackberry.  Muah!!!  Only if you could really hear me say “Muah”.  It sounds better than reading it.  Anyway, I used a flour tortilla shell sprinkled with cinnamon and sugar for a little extra flavor and a tad bit of Chobani Strawberry Greek Yogurt to hold my berries in place.  It’s so perfect, so Spring, so me!!

Berry Breakfast Taco's

I folded my flour tortilla up and placed in my frying pan, to give it a little added crunch, plus it glues the tortilla  together, so you don’t lose your precious filling.  After all you don’t want one berry to escape!!  The yogurt cooked fine in the frying pan, as your basically just heating up the shell, you’re not really cooking it.

Berry Breakfast Taco's

I topped my Berry Taco with a dollop of Chobani Strawberry Greek Yogurt and a sprinkle of powdered sugar.  I had this for my breakfast and since I used high fiber flour tortillas, and got my protein from the yogurt, I was pretty filled up most of the morning!  But, you know you could also turn this into a dessert!  You could drizzle some warmed chocolate syrup and a dollop of whip cream or if you are so inclined you could even serve this with just a little bit of vanilla ice cream.  Ohhh, the possibilities are endless.

A sweet, juicy healthy taco made with fresh berries and strawberry greek yogurt.
Serves: 1 taco
Ingredients
  • 1 6" flour tortilla (I used Mission Carb balance 120 calories)
  • ¼ cup Strawberry Greek Yogurt (I used Chobani Greek)
  • ½ cup strawberries, diced
  • ¼ cup blackberries
  • ¼ cup blueberries
  • 1 dash cinnamon
  • 1 dash sugar
Instructions
  1. Brush the inside of the tortilla with water and sprinkle the cinnamon and sugar . In the center of the tortilla, add the yogurt and berries. Carefully fold one side of the tortilla to the center and then do the same to the other side. Place the seam side down in a frying pan. Cook over medium heat until the bottom is lightly brown. Carefully flip the tortilla and cook until lightly brown.
  2. Serve on a plate with additional greek yogurt, or powdered sugar, or you can top with chocolate syrup and whip cream. Serve for breakfast or for dessert.

Berry Breakfast Taco's

I had a lot of fun creating this recipe!  These are my two, no three favorite ingredients, berries, greek yogurt and taco shells.  I LOVE it!!!   I think I may have had to many berries today, I seem a little excited over my dish!  I’m blaming Spring Fever!!!

Have a wonderful Sunday and Happy St. Patrick’s Day!

Be sure to check out what everyone else brought to the table!

Toodles,

Jennifer

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.
🍂
Have the most beautiful day!

I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.
🎃
The Fall blocks are the Krumpets Home Decor deal of the week. Plus you get an additional 10% off with code: PBANDP. Link in my bio.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
🍋
What is your favorite summer drink? Have a wonderful day!
