Mandarin Orange Chicken Shish Kabob’s

Hi Everyone,

Let me tell you I did my first training workout for my virtual 5k on Monday and I swear my legs are going to fall off.  I looked at the workout and thought, no problem, this won’t be hard, I was wrong, it was hard!  But hard work pays off right?  That is what I have to keep telling myself.  At least with the nice weather, I was able to do my workout outside and you know what else I did outside?  I made the most delicious Shish Kabob’s.

I have an abundance of Mandarin Oranges and I wasn’t sure what else I could do with them, except eat them!   I have been on a major citrus kick and the little cuties are just so sweet and juicy that I can’t resist them.  So what do I do with them?  I did a Google search and I saw that Sunkist has a bunch of recipes to use citrus with.  I saw this recipe on there website and I thought I would give it a try.

Good choice on my part!  The chicken is super moist and the flavors of the mandarin orange give the chicken a little sweetness, which goes perfect with the onions and peppers.  Kind of a tropical feel to my dish.  To stick with my tropical theme, I served my chicken with brown rice and a few more oranges.  I only have about 20 more to use up.

I took my basic barbecue sauce ,which was Trader Joe’s and added the juice of two mandarin oranges to it and I also skewed a few of these little guys between my veggies and chicken.  I’m not sure how I feel about barbecue oranges, but they are ok.  But the barbecue sauce was super delish!  A little spicy and a little sweet.  I love that you can take a basic barbecue sauce and kick it up a notch with some orange flavor.  It’s  a great idea and I plan on trying it next time on shrimp!  Yum!

A sweet and savory chicken, skewered with sweet bell peppers, onions and mandarin orange, topped with a mandarin orange barbecue sauce.
Serves: 4 skweres
Ingredients
  • ¼ cup BBQ sauce (I used Trader Joe's, but your favorite will work)
  • ¼ cup mandarin orange juice (juice of two oranges)
  • 1 lbs. chicken, skinless, boneless, cut into chunks
  • 1 sweet bell pepper, seeded, cut into chunks
  • 1 onion, peeled, cut into chunks
  • 2 mandarine oranges, peeled, cut into segments
  • 4 metal skewers
Instructions
  1. In a small bowl, add barbecue sauce and mandarin orange juice, mix together; set a side.
  2. Preheat grill over medium heat.
  3. Skew together chicken, vegetables and mandarin orange, rotating between vegetables, oranges and chicken. Do the same until no more chicken or vegetables remain.
  4. Place skewers on grill, and brush with barbecue sauce. Cook chicken for about 5 minutes and brush with more barbecue sauce, cook until chicken is no longer pink.
  5. Serve with rice or a nice salad.

Well my Friends, I am running late on blog posts and meals, so I need to get my butt in gear and start cooking and writing.  Normally I catch up on the weekend, but not this weekend, I am so behind on everything.  I just hate that!!  But that means I stay busy, and I won’t worry about being board!  🙂

    Good for you! I just started running in the fall and wimped out as soon as it got cold. I never was able to get past alternating jogging and walking but I’m ready to try again.

      Hi Jen! I have to say it is hard! I am not a runner at all, even though I have long legs. It’s just not my thing, but it feels good to get it done, and I am hoping I will love it! I just need to jog some where more exciting then the green wall I stare at. 🙂

    These look delicious! My husband would have to do the grilling though. I don’t know why, but using the grill makes me nervous……I ‘ve never cooked on it before! Silly, I know! I need to get one of those grill pans for my stovetop!
    Love that you are training for a 5K! The virtual idea is a cool one! Anytime there are 5k races (I haven’t done one…..yet!) they are always an hour or more out of town! 🙂 Have fun and keep us posted!

      My Husband used to grill, but he has gotten lazy over the years, so I do all the grilling, except when he wants his hot dogs, then he has to grill them! 🙂 The training for the 5k is hard, but I have been enjoying it. I wonder how long it will take me to do the 5k. I am not a runner, so I’ll do the best I can.

      I do live in a semi-warm area, Northern California! We are finally getting our spring like weather, so I had to turn on the grill! It’s one of my favorite ways to cook!

This weekend I worked on my bar cart and let me tell you that I am loving the orange color and all the carrots and bunnies. So much fun!!

Happy Monday! I did a little bit of Spring cleanin Happy Monday! I did a little bit of Spring cleaning this weekend. I wanted to give my kitchen counters the less is more look.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.

I have gotten so many questions lately about the runner in my kitchen that I thought I would share with you a close up and some information about it. This is not a collaboration.

The vinyl runners are from @vmathome. They are so easy to clean, pet friendly, anti-slip, and durable. I love these vinyl runners in the kitchen and hallway. If the dogs get dirt or water on them, I just clean it up with a paper towel. They have been a life saver having them with two young dogs.
