Mini Lime Cheesecake Bites #SundaySupper

March 3, 2013 By Jennifer @ PB and P Design 72 Comments

Hi Everyone,

I am so excited for today’s recipe!  Today for the #SundaySupper we had to make either a Savory cheese, tasty cake, or a glorious cheesecake.  Well I went with cheesecake!!  My cheesecake may not be glorious but it sure makes me happy!!!  I am so proud of these little guys!

Mini Lime Cheesecake Bites

I went with mini lime cheesecake bites because I thought it would be perfect for a brunch, baby shower, Easter and St. Patrick’s Day!  They are so cute and precious, not to mention very tasty.

Mini Lime Cheesecake Bites

When making these cheesecakes, I used fresh limes, 1/3 less cream cheese and plain greek yogurt.  Since I didn’t have graham crackers for the base, I decided to make my own base by using ground oats, regular oats, cinnamon, maple syrup and applesauce.  It all came together so nicely, and the flavors of the lime is simply refreshing and perfect.  With a little bite, it leaves a nice little zing but to much.  Not enough to leave you zippy’s in your mouth.  You know the feeling I’m talking about, the kind where you eat some sour and you get that funny feeling in your throat.  I call that zippy’s!

Mini Lime Cheesecake Bites

For serving I used the pink muffin liners because I love the color of pink and green together.  To serve I would serve these with a dollop of whip cream and a little raspberry.  I think the raspberry compliments the lime very well.  Plus the colors go so good together.

Tangy and creamy freshly squeezed lime cheesecake sitting on a cinnamon oat crust.
Serves: 24 Mini Cheesecakes
Ingredients
  • For base:
  • ¾ cup oat flour
  • ⅓ cups oatmeal (not quick oats)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp kosher salt
  • ⅓ cup unsweetened applesauce
  • 1 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • **For topping**
  • 8 oz cream cheese, ⅓ less fat, at room temperature
  • 3 tsp. stevia or ¼ cup sugar
  • pinch of salt
  • 1 tsp vanilla extract
  • 1 large egg, at room temperature
  • 1 cup greek yogurt, plain
  • ¼ cup lime juice (2 limes)
  • zest of one lime
Instructions
  1. Preheat oven to 275F
  2. Line a mini muffin pan with 24 muffin liners
  3. Base: In a bowl add oat flour, oats, baking powder, cinnamon and salt into large bowl, Stir until combined. Add in the applesauce, maple syrup and vanilla; mix well. Scoop about 1 heaping teaspoon of batter evenly into each muffin cup and push down firmly with fingers to smooth out. I found that wetting your fingers makes the base not stick to them.
  4. Topping: In a small bowl add cream cheese and sugar; beat until creamy. Add vanilla extract, egg and salt; beat until combined. Beat in yogurt and lime juice; until creamy. Fold in lime zest.
  5. Evenly pour cheesecake batter into muffin cups. NOTE: You will have leftover batter.
  6. Bake, rotating pans halfway through, until filling is set, 15 minutes. Let cool on a wire rack. Chill in the refrigerator for at least 4 hours, or up to overnight, before serving.
Notes
Calories will be a less then what I give you, as I had a pinch of crust base left over and enough cheesecake batter to make 3 standard muffin cups without base. So you don't waste the batter, I filled 3 standard muffin pans with batter and cooked the same way as mentioned in the recipe, but cooked the cheesecakes for 20 minutes.

Mini Lime Cheesecake Bites

As I mentioned in my recipe, the calories are less than what I put in the recipe.  I had enough batter to make 3 standard size muffin cup cheesecakes.  You can do the same, the cheesecake is fine with out the base.  My guess is the cheesecakes are about 36 – 40 calories each!  Not to shabby for cheesecake.

I really had fun with today’s #SundaySupper.  I can’t wait to see all the savor cheese dishes and cheesecake recipes!   Make sure you check them out too!

Have a great Sunday!!

Toodles,

Jennifer

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.

The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.
🍂
Have the most beautiful day!

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.
🎃
I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.
🎃
I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.
🎃
The Fall blocks are the Krumpets Home Decor deal of the week. Plus you get an additional 10% off with code: PBANDP. Link in my bio.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
🍋
What is your favorite summer drink? Have a wonderful day!
