Good morning my Peeps,
I have a question. What does a girl do when she wants ice cream now, and doesn’t have any in the house? Not just ordinary ice cream, but one served in a crispy cup sprinkled with cinnamon and sugar. Sounds kind of fattening, but it is what I want and I need it now!!! Everyone knows not to mess with me when it comes to food!! So to please myself and to make everyone happy around me, I made my own sweet ice cream and cup!!!
Man, oh man! I hit the jackpot with this one! This little dessert exceeded my expectations! It’s sweet, creamy and the hint of cinnamon on the strawberry ice cream is amazing!! I think I just found my newest addiction!!!
The cups to make are soooo easy!! All I did was take a Mission Carb Balance Flour Tortilla, in medium size, brush it with water, sprinkle with cinnamon and sugar and placed it in a greased ramekin. I popped it in the broiler for about 5 minutes until the top got nice and crispy. Here are the 3 simple steps and the last picture in the corner is the done tortilla cup.
When the tortilla cup was cooling, I made my ice cream. All it is, is frozen strawberries and milk to make it creamy. Coconut milk would be great to use too. I blended it in my blender, but I have made this in a food processor too, until it was the consistency I wanted. You may have to add more or less milk. I would start with a tablespoon of milk and then go from there. It only took about 2 minutes to blend. Here it is in the blender and then in the cup!!
That’s a lot of ice cream and I hate to say it, but I didn’t plan to, but I ate it all! For photo reason I scooped out some of the ice cream. You can also add a banana, chocolate peanut butter, sugar or whatever you like to it to give the ice cream more flavor. For me, I added a few drops of NuNaturals Liquid Vanilla Stevia. But regular vanilla extract and sugar will work!!
These cups are just adorable and I’m really proud how they turned out. They would be great to put yogurt and berries in or even a chocolate mousse. This is one treat that I know my family will love. To bad they weren’t home to get any! It’s mine all mine!!!
- 1 medium flour tortilla (8' Mission Carb Balance Tortilla - 120 calories)
- ¼ tsp sugar
- ¼ tsp cinnamon
- 1 cup frozen strawberries
- ¼ cup milk
- a pinch of sugar (optional)
- Preheat broiler to high.
- Spray ramekin with cooking spray; set a side
- In a small bowl mix together cinnamon and sugar; set a side.
- Brush the flour tortilla with a little bit of water and sprinkle with cinnamon and sugar mixture. Gently fit the tortilla into the ramekin and place in broil for 3 - 6 minutes, until the top is lightly browned (be sure to watch it). Set aside to cool for about 3 - 5 minutes.
- Meanwhile in a blender or food processor, add strawberries and milk and process until ice cream consistency. You may need to add a pinch more milk to get the consistency that you want. Also, you can add sugar, chocolate, ect.. blend again until incorporated.
- Add your ice cream to your tortilla cup! Serve and enjoy!
I’m thinking I’m going to have this again tomorrow. I better hit Target up for some more tortilla shells. Out of all the flour tortilla shells, the mission carb balance are my favorite. Pretty healthy too! Low calorie, lots of fiber and protein. You can’t go wrong. What kind of things would you put in a cinnamon and sugar tortilla cup?

Sunday: Lobster Bisque for Two #SundaySupper – This is a great soup and so fast to make. I did feel rich having it, since I maybe get lobster once a year. I’m sad to say, I don’t think Trader Joe’s carries lobster tails anymore.
Monday: Chocolate Mocha Muffins – I loved these muffins. They really did a great job hitting that sweet tooth and I must admit, I had one this week, as you can tell from my recipes. Hey, it’s all good and in moderation!! But these muffins are moist, chocolaty and healthy too!!!
Tuesday: Chocolate Mocha Mudslide Frappe – I love my latest frappe! I had it a few times this week and I even added peanut butter to it! It’s filling and oh so good! Loving chocolate, banana, coffee and peanut butter together! Yum!!
Wednesday: Chocolate Covered Almonds -I made these babies for my Husband, but I’ll admit I had my fair share of them. They are so good and so easy to make! I love that it only takes a few minutes to make them! They also would make a great gift, especially for Easter time.
Thursday – Cucumber and Tomato Lentil Salad – This is so perfect for lunches this week. I ate it almost everyday and even spooned some onto my salad. It’s super fast to make too!!
Friday: Peanut Butter, Banana and Strawberry Bread – This bread is amazing! it’s super moist and that first bite you taste is peanut butter! Perfectly healthy and perfect for celebrating National Peanut Butter Lovers Day!
Well that’s it for this week! I am off to Target and I still need to make something for dinner! Have a great weekend and get out there and enjoy it! So glad we are into March!!! Woohoo! Spring is right around the corner!
