Lobster Bisque #SundaySupper

Hi Everyone,

Happy Sunday to you!   Today around the #SundaySupper we had to bring soup to the table.  I was kind of torn on what kind of soup to make.  I make soup all of the time but my brain went dead when I had to come up with one.  I debated about a Chipotle Black Bean or Butternut Squash Soup, but I decided to step out of my comfort zone and try something I have never made before which is Lobster Bisque.

I have to say I am pretty happy with the outcome of the soup.  It’s creamy, full of flavor and not overly fishy!  I am not a big fish person.  I had two lobster tails that I bought from Trader Joe’s that I intended on making for Valentine’s Day, but that never happened.  What better way to use my lobster tails is to make a healthy, decadent soup!  I felt like a rich person making this!  lol

Since I only had two lobster tails, this recipe makes two servings.  Perfect for a romantic evening.  This soup makes a fabulous appetizer or you can have it alone with some crusty bread and a salad.  Yum!  Were not to fancy in my house, so we had it with pretzel bread.   The soup in general takes about 30 minutes to make, which I don’t think is to bad and it’s pretty simple too!!  Love that!

A healthy, creamy soup made with fresh lobster tails.
Serves: 2 Cups
Ingredients
  • 1 tbsp unsalted butter (I used brumble and brown)
  • ¼ cup diced carrot
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped celery
  • ½ tsp garlic, minced
  • 3 cups chicken stock
  • ¼ tsp. creole seasoning
  • 1 dash worcestershire sauce
  • 2 tsp cornstarch
  • 1 tsp water
  • ¼ cup greek yogurt
  • 2 lobster tails (7 oz total), chopped into bite size pieces(not cooked)
Instructions
  1. In a large pot add butter, once melted, add carrots, onions and celery, cook until slightly softened, stirring constantly for about 5 minutes. Add chicken stock, creole seasoning and worcestershire sauce to pot and cook until vegetables are cooked through, about 10 minutes.
  2. In a small bowl add cornstarch and water; mix until smooth and stir into soup.
  3. Add lobster and cook until lobster is firm and opaque in color, about 7 minutes. Just before serving, whisk in greek yogurt.
  4. Serve immediatly

Lobster Bisque

I had fun with today recipe!  I really felt like a chef making this wonderful soup!  To me these kind of soups seem intimidating, but this one wasn’t!  I am really happy with it!

      This was actually the first time i ever cooked lobster. I think it can seem intimidating. I was shocked when I saw the lobster at TJ’s. I haven’t checked this past week, but I hope they keep it in stick. It’s in the freezer isle.

    wait, TJ’s has lobster? Hubby doesn’t eat fish, so I’m pretty out of touch with the fish offerings there now. But this sounds wonderful! Lobster bisque always reminds me of the “yada yada” episode of Seinfeld … you know, where Jerry thinks Elaine yada yada’s over the best part of her date, and she says, no, I mentioned the bisque!

    The only way I care for lobster is in bisque. Your bisque looks so much better than the heavy cream versions I’ve had before. Some are so thick and rich they are hard to eat, especially as a first course. Not yours and it would be a fabulous first course.

I was gifted this beautiful table cloth by @cottonprintclub. It’s 100% cotton, comes in several sizes and colors, doesn’t bleed or shrink when washed. I love the shade of green and it is so beautiful that you can use it all year.

I went with a simple tablescape to show off my beautiful plates that I received from @backcountrymercantile. All I added to my table was some garland, candlesticks and of course twinkling lights. Swipe the photo to see my table in the evening.

Happy World Kindness Day! This weekend I made my a Happy World Kindness Day! This weekend I made my annual snow jar to place on my shelf in the kitchen. You get a tiny sneak peak of my shelves at the end of the reel. The snow jars are so easy to do and you probably have most of the items on hand.

For the snow, I used blanket snow. You could also use, sugar or Epsom salt. I like the blanket snow because it’s not messy and it hides the fairy lights battery pack.

The houses are ornaments that I bought at Target. I thought they were Perfect for my pink kitchen. Of course you can use whatever you have on hand. It doesn’t have to be a house and tree.
💗
If you buy fairy lights, make sure they have a timer on them. Trust me that will make life easier. If you don’t like fairy lights, you can use a faux candle. 
Ohhh and have a stack of batteries. I go through more batteries in the month of December then I do the rest of the year!

But I still do plan on doing pink in my kitchen. I figured I could use some pink everyday pieces that I already have and add pops of pink ornaments and pink little Christmas trees. I plan doing some shopping this week to see what I can find in pink. I’m so excited!!

Happy Monday! Sorry I haven’t been on in awhile. Happy Monday! Sorry I haven’t been on in awhile. My husband was sick with the flu, then he passed it on to me. My dog even had an upper respiratory infection. Ugh! It was a rough 2 weeks. Then on Friday I had surgery to remove skin cancer on my chest. I’m sore and I can’t lift or exercise. Anyway, that’s why I have not been on.

I wanted to give you one last look at my Halloween kitchen before I change it out. Not sure if I’m going to add some Fall or Christmas next. Did you know Christmas is in 63 days? 😳

So I have been thinking about Christmas colors. The past 2 years I have done green and I love it, however I have always wanted to do a pink Christmas. Just not sure if I can pull it off? I don’t know if I want to go crazy and buy a bunch of pink? What color are you doing this year?
